TERIYAKI CHICKEN TOSS WITH SPAGHETTINI PASTA
This is bar none the best stir fry I have ever tasted! All the credit goes to Sandy Richard and her cookbook Life's on Fire Cooking for the Rushed. I have strayed slightly from the original recipe but all for the sake of taste. The one thing that I'm a bit of a stickler on is that you use the V-H brand of honey-garlic sauce. If you're in an area that doesn't carry it use your choice of the next best brand.

Steps:
- CUT chicken into bite size pieces and cook in oiled wok along with seasoning and chilies; cook until meat is no longer pink.
- CHOP onion, zucchini, peppers and mushrooms into bit size pieces and stir fry to desired crispness.
- BOIL pasta at this time.
- ADD cornstarch to a small bowl and gradually add soya while stirring so that the cornstarch is smooth not lumpy; Mix in the honey-garlic sauce and the ¼ cup chicken broth; Add to pan of chicken and veggies; Stir and leave to simmer on low.
- DRAIN the pasta and mix the following in the empty pasta pot at med-low; 1 cup chicken broth, curry powder, honey and basil.
- RETURN pasta to pot and toss with the spiced broth allowing the pasta to absorb the liquid; Drain off any excess.
- PLACE pasta in a bowl and top with stir fry mixture.
STOVE TOP CHICKEN AND SPAGHETTINI
Another wonderful and very tasty chicken dish! I have even added in green olives to this. The complete dish is prepared in an extra large frypan. If desired you can also mix in about 1/4 cup Parmesan cheese into the cream mixture while cooking.

Steps:
- Cook the pasta until just firm-tender; drain, toss with about a tablespoon of oil (to prevent sticking); set aside.
- Saute the chicken cubes in butter or margarine until almost done; transfer the chicken to a plate.
- Saute the onion and garlic until soft (not brown).
- Add in the chopped tomatoes and basil; cook stirring for 3 minutes.
- Pour the wine and chicken broth into the pan, bring to a boil, reduce heat and cook until reduced by about two-thirds.
- Stir in half and half cream, salt, pepper, and cook until slightly thickened.
- Add in the cooked chicken cubes (and all the juices that were left on the plate).
- Simmer for about 3-4 minutes.
- Stir in about 1/3 cup parsley; mix to combine.
- Toss/mix in pasta.
- Serve in large serving bowls.
- Sprinkle with grated Parmesan cheese.
- Delicious!

SPAGHETTINI CHICKEN
This is a copy-cat recipe I created from a restaurant in the Bay Area. It's a soupy sauce, not a thick one. It's a nice change.

Steps:
- Heat olive oil in a large saucepan over medium heat; saute onion and garlic until onion is translucent.
- Stir in broth and tomatoes; sprinkle basil into sauce and season with salt and pepper to taste. Simmer for 15 minutes over medium-low heat.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place pasta into serving bowls.
- Place cooked chicken in sauce to heat through; drop in spinach just before serving to cook for 2 to 3 minutes.
- Spoon sauce over hot pasta and sprinkle with Parmesan cheese.
