1 pound Italian turkey sausage links, casings removed
1/2 pound extra-lean ground turkey
1-3/4 cups sliced fresh mushrooms
1 medium green pepper, chopped
1 medium onion, chopped
1 can (29 ounces) tomato puree
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (6 ounces) tomato paste
2 bay leaves
1 tablespoon dried oregano
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
Hot cooked multigrain spaghetti

Steps:

  • Crumble sausage and turkey into a large nonstick skillet coated with cooking spray. Add the mushrooms, green pepper and onion. Cook and stir over medium heat until meat is no longer pink; drain. Stir in the puree, tomatoes, tomato paste, bay leaves and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes., Discard bay leaves. Serve desired amount with spaghetti. Cool remaining sauce; transfer to freezer containers. Freeze for up to 3 months., To use frozen sauce: Thaw in the refrigerator overnight. Place in a saucepan and heat through.

¼ cup olive oil
½ white onion, chopped
1 tomato, chopped
6 basil leaves, chopped
4 cloves garlic, minced
1 (20 ounce) package ground turkey
1 teaspoon Italian seasoning
¼ teaspoon oregano
2 (15 ounce) cans tomato sauce
½ (6 ounce) can tomato paste, or to taste
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Saute onion, tomato, basil, and garlic in hot oil until the onion begins to soften, about 5 minutes.
  • Break ground turkey into small pieces and add to pot; season with Italian seasoning and oregano. Cook and stir mixture until turkey is completely browned, 7 to 10 minutes.
  • Stir tomato sauce into the turkey mixture; bring to a boil, reduce heat to low, and simmer until the sauce has thickened slightly, 20 to 25 minutes.
  • Stir tomato paste into the turkey mixture until evenly colored; season with salt and pepper. Cook until the liquid is reheated, 1 to 2 minutes more.

2 tablespoons extra-virgin olive oil
1 large onion, diced
salt and ground black pepper to taste
1 ¼ pounds ground turkey
1 tablespoon chopped garlic
1 ½ teaspoons red pepper flakes
2 (28 ounce) cans crushed tomatoes
1 cup dry white wine
1 (6 ounce) can tomato paste
1 tablespoon dried oregano
1 tablespoon dried basil
2 tablespoons white sugar, or more to taste

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and a pinch of salt; cook and stir until softened, about 5 minutes. Add turkey; cook and stir until browned, about 5 minutes. Stir in garlic; cook for 2 minutes. Add red pepper flakes.

1 1/4 lbs ground turkey
1 yellow onion, chopped
3 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 cup chicken broth
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon dried thyme
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1 tablespoon butter

Steps:

  • In a 4 1/2 quart pot/pan brown the ground turkey over medium heat.
  • Add the onion and garlic and cook until softened.
  • Add tomato paste and crushed tomatoes, stirring until all is combined.
  • Add chicken broth to thin it down a little bit.
  • Add spices, butter, and salt and pepper and allow to simmer over low heat for about 15 minutes (just long enough to boil the water and cook the pasta!).

3 tablespoons olive oil
3/4 cup finely chopped celery, about two ribs
Dash of garlic powder
3 tablespoons tomato paste
1 cup water
1/2 teaspoon dried rosemary
2 dashes Tabasco sauce
2 tablespoons capers, crushed
2 teaspoons Dijon-style mustard
Pepper to taste
1/3 pound of spaghetti
Salt to taste
1 teaspoon butter
1/4 pound cooked turkey, julienned

Steps:

  • Put 2 tablespoons of olive oil in a saucepan over medium heat.
  • Add the celery and garlic powder and saute 1 minute over low heat. Add the tomato paste and water and blend together. Add the rosemary, Tabasco and capers and simmer 10 minutes. Add mustard and pepper to taste, and continue simmering a minute or two.
  • Meanwhile, bring 2 quarts water to a boil in pot. Add the spaghetti with a dash of salt. Cook 7 or 8 minutes or until done.
  • While the spaghetti cooks, melt the butter in a saucepan and cook the turkey enough to warm it.
  • Drain the spaghetti and mix in the remaining olive oil. Place the spaghetti on a platter. Pour sauce around it and in a central well. Place turkey in a ring around the central well.

1 medium onion, chopped

2 teaspoons finely chopped oregano leaves
1 sprig fresh rosemary

1/4 cup torn fresh basil leaves
Cooking spray
1 pound ground turkey meat
1 slice fresh whole-wheat bread, crusts removed, pulsed into crumbs

Steps:

  • Fill a large stockpot with water and bring to a boil for pasta.;
  • Make Sauce:
  • In a 4-quart saucepan heat the oil over medium heat. Saute the onions until translucent, about 3 minutes, then add the garlic and cook for 1 minute more. Add tomato paste, tomatoes, chipotles, oregano, rosemary, and salt. Bring all the ingredients to a low boil, reduce heat and cook for approximately 15 minutes, until liquid has evaporated slightly. Season with salt and pepper, to taste. While sauce is cooking, make meatballs.
  • Preheat the broiler. Spray a baking sheet with cooking spray. Combine the turkey with all other ingredients in a large work bowl. Form into 2 1/2 -inch balls and place on a baking sheet. Broil for 10 minutes, or until browned and almost entirely cooked through.
  • Meanwhile, remove rosemary sprig from sauce and add fresh basil. Add the meatballs to the sauce, cover, and cook additional 10 minutes, or until sauce has slightly thickened and meatballs have absorbed some of the sauce. While the meatballs are cooking, cook the whole-wheat spaghetti according to package directions.
  • Drain the pasta and return it to the pot. Add the sauce and meatballs, toss and heat through over medium heat. Divide evenly among 4 pasta bowls and garnish with parsley and 1 tablespoon grated Parmesan.

This one is especially good with the addition of fennel seeds to the homemade tomato sauce, which doesn't overpower but definitely bumps it up to a new level. We used whole wheat pasta and it was delicious.

2 tablespoons olive oil, plus 2 additional tablespoons
1 yellow onion, large, very finely diced
3 garlic cloves, peeled and minced
2 teaspoons fennel seeds
coarse sea salt
fresh ground pepper
28 ounces whole tomatoes, pulsed in a food processor (or crushed by hand) or 28 ounces blender with their juice (or crushed by hand)
1/2 cup panko breadcrumbs
1/2 lemon, zest only
1/4 cup flat leaf parsley, finely chopped
1 tablespoon thyme, fresh, finely chopped
1 teaspoon rosemary, fresh, finely chopped
1 lb ground turkey (preferably dark meat)
1 egg
1 lb spaghetti, cooked just before serving
1/4 cup basil leaves, fresh, roughly torn

Steps:

  • Heat two tablespoons of olive oil in a large Dutch oven over medium heat. Add the onion and cook for about eight minutes sweating it without giving it too much color. When it's soft, add the garlic and fennel seeds and season generously with salt and pepper (about a teaspoon of salt and a half teaspoon of pepper should do). Saute for an additional three or four minutes. Remove and reserve half of this onion mixture in a large mixing bowl. Add the tomatoes and their juice to the remaining mixture in the pot, turn the heat to low and simmer while you make the meatballs. be sure to put a little water in the tomato sauce can and swish it around and add it to the pot (don't want to waste a bit!).
  • To make the meatballs, combine the breadcrumbs, lemon zest, parsley, thyme and rosemary with the reserved onion mixture. Add the turkey and egg and mush it all with your hands (the best tool for this job) just until everything is well-combined; don't over mix. Form the mixture into 1-1/2 inch balls with your hands (of course you can make them whatever size you like). Heat the last two tablespoons of olive oil in a large nonstick skillet over medium-high heat. Making sure not to overcrowd the pan, brown the meatballs (should take about five minutes). Put the browned meatballs into the simmering tomato sauce and let them cook, shaking the pot occasionally to roll the meatballs around, for at least 20 minutes and up to an hour and a half. Taste the sauce and season with salt and pepper. Serve with spaghetti and the torn basil.
