Quick & easy - the secret is to slice the veges as finely as you can. Chilli is obviously to taste!

250 g pasta (spaghetti, fettucini, linguini etc)
2 tablespoons olive oil
6 garlic cloves, crushed
1 teaspoon red chile
2 spring onions, finely sliced
3 teaspoons rosemary, chopped
1 large zucchini, cut in half lengthways & finely sliced
5 large portabella mushrooms, finely sliced
1 (425 g) can tomatoes (1 pound)
4 tablespoons parmesan cheese
fresh ground black pepper

Steps:

  • Cook the pasta in plenty of boiling salted water.
  • Whilst the pasta is cooking, heat the oil in a large frypan on medium heat.
  • Add the garlic, chilli & onions & saute until just golden.
  • Add the rosemary, zucchini & mushrooms and saute.
  • Turn up the heat and add the tinned tomatoes. Saute until just thickening.
  • Drain the pasta and add to the pan with the tomato mixture in it. Mix with tongs & serve with parmesan cheese and freshly ground black pepper on top.

2 to 3 tablespoons extra-virgin olive oil
8 ounces cremini mushrooms, stemmed and thinly sliced
6 ounces oyster mushrooms, torn into 2-inch pieces
6 ounces shiitake mushrooms, trimmed of woody ends and quartered
2 cloves garlic, finely minced or grated
Kosher salt and freshly ground black pepper
1/4 to 1/2 teaspoon crushed red pepper flakes
One 13.5-ounce can coconut milk, such as Chaokoh
3 cups water
2 tablespoons nutritional yeast
10 ounces orecchiette pasta
3 medium zucchini, cut into 1-inch dice (about 4 1/2 cups)
1/2 cup packed basil leaves, finely chopped, plus more leaves for garnish

Steps:

  • Heat a 13-inch nonstick skillet over medium heat. Add the oil. Add the mushrooms in batches and cook, stirring occasionally until golden brown before adding more mushrooms, 10 to 12 minutes total. Reduce the heat to medium-low and add the garlic, 1 1/2 teaspoons salt, 1/2 teaspoon black pepper and the crushed red pepper flakes. Stir together.
  • Add the coconut milk, water and nutritional yeast to the skillet. Stir together and taste for seasoning and add more salt or black pepper, if needed. Add the pasta and zucchini and stir, making sure the pasta is submerged in the liquid.
  • Cover with the lid and simmer for 12 minutes, stirring every 3 to 4 minutes. Uncover and add the basil. Stir and simmer uncovered until the sauce has thickened and the pasta is al dente, 5 to 6 minutes.
  • Scoop into small shallow bowls and top with more basil and black pepper.

1 lb lean ground beef
1 medium zucchini (about 6 inches long)
1 packaged pre-sliced mushroom
4 cloves garlic
2 teaspoons mediteranean basil
1 teaspoon oregano
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1 teaspoon red pepper flakes
1 teaspoon salt
2 teaspoons brown sugar
1/4 cup red wine
2 (15 ounce) cans tomato sauce
1 (15 ounce) can diced tomatoes, with added onions and such.

Steps:

  • Brown the ground beef with the pepper and salt, drain.
  • Return to pot, and add sliced mushrooms, cook for 2 minutes.
  • Add the tomato sauce and diced tomatoes.
  • Add spices and sugar.
  • Bring to a boil, and add red wine.
  • Turn stove to low, and simmer uncovered for 30 minutes.
  • Add zucchini, chopped into quarter sized 1/2 inch thick pieces, and the crushed or diced garlic.
  • Cook for 30 minutes more.

A beautiful, aromatic, creamy mushroom sauce coats hot cooked fettuccine pasta in this quick dish. You can use any kind of pasta you like.

2 tablespoons olive oil
¾ pound fresh white mushrooms, sliced
¼ pound fresh shiitake mushrooms, stemmed and sliced
salt and ground black pepper to taste
2 cloves garlic, minced
2 fluid ounces sherry
1 cup chicken stock
1 cup heavy whipping cream
8 ounces fettuccine pasta
1 ½ teaspoons chopped fresh thyme
1 ½ teaspoons chopped fresh chives
1 ½ teaspoons chopped fresh tarragon
9 tablespoons freshly shredded Parmigiano-Reggiano cheese, divided

Steps:

  • Heat olive oil in a large skillet over medium heat. Cook and stir white and shiitake mushrooms in the hot oil with a pinch of salt until until the juice from the mushrooms evaporates and the mushrooms are browned, about 10 minutes.
  • Stir garlic into mushrooms and cook for 1 minute; pour in sherry and cook until wine is nearly evaporated. Mix chicken stock into mushroom mixture; season with salt and black pepper. Bring to a simmer, reduce heat, and cook until slightly thickened, about 5 minutes.
  • Pour cream into mushroom mixture, stir to combine, and simmer for 5 minutes. Mixture will foam and thicken slightly.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the fettuccine, bring back to a boil, and cook pasta over medium heat until cooked through but still firm to the bite, about 8 minutes. Drain but do not rinse pasta; transfer to a large serving bowl and keep warm.
  • Stir thyme, chives, and tarragon into mushroom sauce and turn off heat; mix 1/2 cup Parmigiano-Reggiano cheese into sauce until cheese has melted.
  • Pour all the mushroom sauce and half the mushrooms over pasta, reserving about half the mushrooms in the skillet. Toss pasta in sauce until coated; top with remaining mushrooms and remaining 1 tablespoon Parmigiano-Reggiano cheese for garnish.

Called "French pasta" at the restaurant, this Provençal-style special (using no butter and a minimum of oil) is typical of Méteigner's light French fare.

Olive oil
1 pound zucchini, trimmed, diced
1/2 teaspoon dried crushed red pepper
2 pounds mushrooms, sliced
21/2 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh parsley
3 large garlic cloves, minced
12 ounces spaghetti, freshly cooked
2 large tomatoes, chopped

Steps:

  • Brush large deep nonstick skillet with oil; heat over medium-high heat. Add zucchini and crushed red pepper; sauté until beginning to soften, about 3 minutes. Transfer to bowl. Brush skillet again with oil; heat over medium-high heat. Add mushrooms; sauté until brown and tender, adding water by tablespoonfuls as needed if mushrooms stick to skillet, about 18 minutes. Add zucchini mixture, herbs, and garlic; stir 1 minute. Season to taste with salt and pepper.
  • Add pasta and tomatoes to mushroom mixture; toss to blend, adding water by 1/4 cupfuls if mixture is dry. Season with salt and pepper. Transfer to bowl.
