This white wine and garlic Alfredo sauce served with a nice spaghetti is one of my family's favorites, and I'm sure it will impress and become one of your favorites too. Mix with pasta and serve with fresh Parmesan cheese.

Steps:
- Heat olive oil in a skillet over medium heat; cook and stir sausage in the hot oil until browned, about 10 minutes. Stir onion, mushrooms, garlic, and oregano into sausage, season with salt and black pepper, and cook until onions are slightly browned, about 15 minutes.
- Pour wine into skillet, bring to a boil, and reduce heat to medium-low. Simmer until liquid has nearly evaporated, about 10 minutes. Pour cream into skillet and add Parmesan cheese and butter. Cook at a simmer, stirring often, until sauce is slightly thickened, 10 to 15 minutes. Adjust salt and black pepper to taste.

PENNE RUSTICA WITH A KICK TOSSED WITH ASPARAGUS & TOPPED WITH CRISPY PANKO
The week just isn't complete without at least one pasta night. If you agree, you're in luck! Our chefs put together a dish that's sure to curb the most ferocious of carb cravings. In this recipe you'll find penne studded with tender asparagus, fresh tomatoes, and swirls of garlic herb butter. The dreamy dish is finished off with a sprinkle of Parmesan and your new secret culinary weapon: an almond, chili, and lemon panko topping. It's so delicious and easy to whip up, don't be surprised when you find yourself making this meal on repeat.

- • Bring a large pot of salted water to a boil. • Once boiling, add penne to pot. Cook, stirring occasionally, until al dente, 9-11 minutes. • Reserve ½ cup pasta cooking water (1 cup for 4 servings), then drain.
- • Meanwhile, wash and dry produce. • Trim and discard woody bottom ends from asparagus; cut stalks crosswise into 1-inch-long pieces. Dice tomato. Mince chives. Zest and quarter lemon. • Melt 1 TBSP plain butter in a large pan over medium-high heat. Add panko and almonds; season with salt and pepper. Cook, stirring, until golden brown, 3-4 minutes. • Turn off heat. Stir in a pinch of lemon zest and a pinch of chili flakes. Transfer to a small bowl.
- • Heat a drizzle of olive oil in same pan over medium-high heat. Add asparagus and cook, stirring often, until bright green and tender, 2-4 minutes. • Add tomato and cook, stirring, until slightly softened, 1-2 minutes. Season with salt and pepper.
- • Add drained penne, garlic herb butter, half the Parmesan (save the rest for serving), and 1⁄3 cup reserved pasta cooking water (½ cup for 4 servings) to pan with veggies; stir until thoroughly combined. Season with salt and pepper.
- • Add half the chives, remaining lemon zest, 1 TBSP plain butter (2 TBSP for 4 servings), and as many remaining chili flakes as you like to pan with pasta. Cook, stirring, until everything is thoroughly coated in sauce, 1-2 minutes. TIP: If needed, stir in more reserved pasta cooking water a splash at a time. • Turn off heat; stir in a squeeze of lemon juice to taste. Taste and season with salt and pepper.
- • Divide pasta between bowls. Sprinkle with panko mixture and remaining Parmesan. Add a drizzle of olive oil over bowls. Garnish with remaining chives and serve with any remaining lemon wedges on the side.

MAC'S SPAGHETTI RED (SPICY WITH A KICK)
This is a simple recipe that has passed from my grandma to my dad to me. It's cheap and quick to make. If you like spicy food and you like spaghetti I think you'll like this recipe. I like to serve it with slices of french bread that have been slathered with garlic spread and lightly toasted in the oven. It has a kick I hope you like it!

- In a large skillet over med-high heat brown the hamburger (use a spatula to crumble the meat up fine while it cooks.
- In a large stock pot start your pasta water to boil (don't forget to season the water with salt). Add spaghetti when the water has come to a rolling boil.
- Once the meat is browned, strain it and return it to the pan.
- Add the other ingredients except the spaghetti. Mix and simmer over low-med heat (be sure to stir occasionally so that it doesn't stick).
- Strain the pasta when it's done and return to the stock pot.
- Pour the meat sauce into the stock pot with the spaghetti and mix well.

- Bring the water to a boil in a saucepan. Remove from the heat and stir in the couscous. Cover and let stand until the couscous absorbs the water entirely, about 10 minutes; fluff with a fork.

BACON & TOMATO PASTA WITH A KICK
I just made this up on a whim, and it turned out fantastic. It's a nice light pasta sauce that is offset by rich bacon and a tiny Tabasco kick. I personally had it with toasted garlic bread and a balsamic vinaigrette salad and it was the perfect sized meal. My husband approved.

- Put water on to boil in pot with table salt, (for pasta).
- Put diced tomatoes in a bowl. Squeeze lemon over top. Add in coarse ground salt, black pepper, red pepper flakes, and parsley. Stir up to mix flavors.
- Heat olive oil on medium/high for a couple minute on a pan. Once pan is hot, adjust temperature down to medium and add garlic and bacon pieces. Fry for about 3 minutes.
- Pour tomato mixture into pan. Add in 1 tsp Tabasco sauce & stir thoroughly. Cover and turn temperature down to medium/low. Let simmer for approximately 6-8 minutes.
- Add pasta to boiling water. Cook until al dente. Drain. Put in serving bowl.
- Add sauce to pasta. Stir and serve!
