2 tablespoons butter
2 tablespoons chopped cashews
2 tablespoons raisins
4 ounces uncooked pasta, broken into 1 inch pieces
2 cups milk
6 tablespoons white sugar

Steps:

  • Heat butter in a large skillet over medium heat. Fry the cashews and raisins until golden brown. Remove from pan, and set aside. In the same pan, fry the dry pasta pieces until golden brown, about 5 minutes.
  • Add the milk to the skillet, and increase the heat to medium. Bring to a boil, then reduce the heat back to low; simmer until the spaghetti is tender, and the milk is thickened. Stir in the sugar, cashews and raisins; turn off heat, and let stand for 30 minutes. Serve hot or cold.

Grandma's Spaghetti and Cheese Pudding image

This is a vegetarian recipe which is not that diet-friendly but still it's a comfort food which you can indulge yourself once in a while.

500 g spaghetti (better use whole wheat spaghetti, it's healthier this way)
200 g low fat cottage cheese
200 g feta cheese
3 eggs
1 tablespoon olive oil
sea salt, to taste
white pepper, to taste

Steps:

  • Boil the pasta following the instructions on the package. (10-12 minutes).
  • Preheat your oven at 392?.
  • Coat the oven tray with some olive oil.
  • Drain the spaghetti and put them in a large bowl.
  • Whisk the eggs with salt and pepper and pour them over the pasta.
  • Using a fork, blend cheeses together and when they have a paste-like consistency add them over the spaghetti.
  • *Add sliced/mashed garlic. (optional).
  • Mix well, then put them in the oven tray.
  • Place the tray in the oven and cook for about 30-35 minutes, until golden and crispy. You can use the grill for the last 10 minutes to create a lovely crust on top.
