FIESTA SPAGHETTI

Welcome a fiesta of flavor in ordinary spaghetti!

1 package (16 oz) spaghetti
2 tablespoons olive oil
1 medium onion, chopped (1/2 cup)
1 medium red bell pepper, chopped (1 cup)
1 lb lean (at least 80%) ground beef
1/3 cup sugar
1 package (1 oz) Old El Paso™ taco seasoning mix
1 can (28 oz) crushed tomatoes, undrained
1 can (8 oz) Muir Glen™ organic tomato sauce
1 can (11 oz) whole kernel corn with red and green peppers, drained
1 jar (4.5 oz) sliced mushrooms, drained
Shredded cheddar cheese, if desired

Steps:

  • Cook and drain spaghetti as directed on package.
  • Meanwhile, in 12-inch skillet, heat oil over medium heat. Cook onion and bell pepper in oil 3 to 4 minutes, stirring occasionally, until tender. Remove from skillet. Add beef; cook over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain.
  • Return onion and bell pepper to skillet. Stir in sugar, taco seasoning mix, tomatoes, tomato sauce, corn and mushrooms. Heat to boiling. Reduce heat to low; simmer 5 minutes, stirring occasionally. Serve over spaghetti. Sprinkle with cheese.

The Best and Easiest Spaghetti image

This is the recipe my mother taught me when I was a teenager.

1 pound lean ground beef
12 ounces spaghetti
1 onion, chopped
⅓ cup vegetable oil
½ teaspoon salt
¼ teaspoon ground turmeric
2 ½ tablespoons tomato paste
⅔ cup water

Steps:

  • Heat oil in a medium skillet. Add chopped onions, and cook until tender. Add ground beef, and brown. Stir in salt and turmeric. Dilute tomato paste in water, and add to the beef mixture. Cook for 30 minutes over medium heat.
  • Cook spaghetti in a large kettle of boiling salted water according to package directions. Drain well.
  • Combine beef mixture and noodles in a large kettle. Cover, and cook over medium heat for 30 to 40 minutes.

2 tablespoons olive oil
1/2 cup chopped onion
1 medium red bell pepper, chopped
1 lb lean (at least 80%) ground beef
1/4 cup sugar
1 package (1 oz) Old El Paso™ taco seasoning mix
1 can (28 oz) Muir Glen™ organic crushed tomatoes with basil, undrained
1 can (8 oz) tomato sauce
1 can (11 oz) whole kernel corn with red and green peppers, drained
1 jar (4.5 oz) sliced mushrooms, drained
Grated Parmesan cheese, if desired

Steps:

  • Cook and drain spaghetti as directed on package; cover to keep warm.
  • Meanwhile, in 12-inch skillet, heat oil over medium heat. Cook onion and bell pepper in oil 3 to 4 minutes, stirring occasionally, until tender. Remove from skillet. Add beef to same skillet. Cook 8 to 10 minutes, stirring frequently, until thoroughly cooked; drain.
  • Add onion and bell pepper to beef; mix well. Stir in sugar, taco seasoning mix, tomatoes, tomato sauce, corn and mushrooms. Heat to boiling. Reduce heat to low; simmer 5 minutes, stirring occasionally. Serve over spaghetti. Sprinkle with cheese.
