FIVE-SPICE, SOY & LEMON ROAST CHICKEN

Try a roast with a difference - Chinese five-spice, citrus and ginger add warmth to the rich soy and hoisin sauce-based gravy

thumb-sized piece ginger , thinly sliced
1 large chicken (about 1.8-2kg), untied
2 bunches spring onions
1 head garlic , halved across the middle
1 lemon , halved, plus 4 wedges
1 tsp Chinese five-spice powder
1 tbsp vegetable or sunflower oil , to drizzle
1-2 tsp golden caster sugar
2 tbsp dark soy sauce
2 tbsp hoisin sauce
fragrant rice and steamed greens or stir-fried vegetables , to serve

Steps:

  • Put most of the sliced ginger into a large roasting tin, then sit the chicken on top. Stuff the chicken with remaining ginger, the green ends from one bunch of onions, half of the garlic and a lemon half. Mix the five-spice, 2 tsp oil and seasoning, then rub all over the chicken. Nestle the other half of the garlic nearby, and drizzle all with 1 tsp oil. Loosely re-tie the legs. Set aside at room temperature for half an hour or so.
  • Heat the oven to 190C/170C fan/gas 5. Roast the chicken for 1 hr. Toss the lemon wedges and the spring onion ends into the pan juices, then roast for 30 mins more or until the meat is cooked at the thickest part of the thigh and the lemon wedges are sticky. Lift the chicken from the pan and set aside, uncovered, to rest.
  • Spoon away any excess fat from the pan, then put the pan onto a medium heat and bring to a simmer. Add 1 tsp sugar, the soy, hoisin, juice from the remaining half lemon and any resting juices. Simmer for a few mins until it thickens slightly, then check the seasoning and add more sugar if needed - don't add any extra salt as the soy and hoisin will add plenty. Serve with the chicken, rice and vegetables.

This was originally a Kikkoman Soy Sauce recipe advertised in a magazine. We really like it. It's great with lemon rice and roasted vegetables.

4 lbs whole chickens
3 tablespoons soy sauce
2 tablespoons fresh lemon juice
2 tablespoons olive oil
2 teaspoons dried rosemary or 2 teaspoons fresh rosemary, crumbled
2 cloves garlic, pressed
1 lemon, cut in half

Steps:

  • Remove and discard giblets and neck from chicken.
  • Rinse chicken under cold running water; drain well and pat dry.
  • Place chicken breast side up, on rack in shallow roasting pan.
  • Blend soy sauce, lemon juice, oil, rosemary and garlic.
  • Brush chicken cavity and skin thoroughly with mixture, then place lemon halves in cavity.
  • Roast at 350 for 1 hour and 45 minutes, or until meat thermometer inserted into thickest part of thigh registers 185, brushing with soy/lemon mixture every 30 minutes.
  • Remove chicken from oven and let stand 10 minutes before carving.

2 tablespoons fresh lemon juice
2 tablespoons vegetable oil
1 1/2 teaspoons sugar
1/2 teaspoon toasted sesame oil
1/2 pound white button or cremini mushrooms, trimmed and thinly sliced
1 1/2 cups cooked shredded chicken
1/2 head napa cabbage (about 1 pound), cored and shredded
6 radishes, thinly sliced
1 carrot, thinly sliced with a vegetable peeler
1 celery stalk, thinly sliced
1/4 cup fresh mint leaves
1 scallion, sliced into thin strips

Steps:

  • In a small saucepan, combine soy sauce, lemon juice, vegetable oil, sugar, and sesame oil. Bring to a boil, then let cool to room temperature.
  • Transfer soy mixture to a medium bowl and stir in mushrooms. Let stand, stirring occasionally, until mushrooms soften, about 3 to 5 minutes. Add chicken, cabbage, radishes, carrot, celery, and mint; toss to combine. Top salad with scallion.

1 tablespoon peanut oil or 1 tablespoon other oil
2 lbs bone-in chicken thighs, rinsed and patted dry with paper towels
1 teaspoon minced garlic
1 tablespoon grated lemon zest
1/4 teaspoon cayenne pepper (or to taste)
2 tablespoons soy sauce
1 teaspoon sugar
1/3 cup water
1 lemon, juice of

Steps:

  • Heat a large, deep skillet (non-stick is preferred) over med-high heat for 2-3 minutes.
  • Add in the oil, swirl to coat the pan; then add in the chicken; brown quickly on both sides.
  • Turn off the heat and remove the chicken and all but 1 tablespoon of fat from the skillet; let the pan cool for a minute or so, then turn the heat to medium and add in the garlic; cook/stir until it softens, a minute or two.
  • Add in the remaining ingredients except for the lemon juice; stir.
  • Return the chicken to the skillet and turn it once or twice in the liquid; cover, decrease heat to med-low, and simmer, turning once or twice, until the chicken is done, 20-30 minutes.
  • Remove the chicken to a serving platter and stir the lemon juice into the broth; pour some of the broth over the chicken and pass the rest at the table.

6 chicken breast halves
1/2 cup soy sauce
1/2 cup fresh lemon juice

  • Place chicken skin side up in 9x13-inch baking dish. Pour soy sauce and lemon juice over chicken. Drizzle chicken with oriental sesame oil. Marinate chicken in refrigerator 1 to 2 hours.

3 tablespoons soy sauce
3 tablespoons white wine
1 tablespoons mirin or cooking sake
1 tablespoons extra virgin olive oil
1 teaspoon fresh ginger, chopped

2 pounds bone-in, skin-on chicken thighs and/or legs (6 pieces)
1 onion, sliced

1 tablespoon green onions, whites only
Juice of 1/2 lemon
2 tablespoons extra virgin olive oil

Steps:

  • Mix soy sauce, wine, oil and ginger. Add 1 teaspoon of sugar if you like sweet flavors. Clean chicken. Remove excess fat and poke a few times with your knife. Place chicken in large Ziploc bag with the soy ginger sauce. Massage chicken in the soy ginger sauce and let it marinate for 2 hours at room temperature. Preheat oven to 350° F. In a heavy pan or Dutch oven large enough to hold all the chicken in a single layer, heat 2 tablespoons extra virgin olive oil over medium high heat. When oil is hot, sear chicken pieces, skin side down for 4 to 5 minutes or more until golden brown. Turn over and brown the other side for another 4 minutes until golden brown. Remove chicken and set aside. With the pan still hot, add onion slices and lemon slices. Cook until onions have wilted and brown bits on bottom of pan have loosened. 5-7 minutes. Turn heat off. Place chicken pieces, skin-side up on top of onion mixture. Pour juice of 1/2 lemon and 1 tablespoon of sake or mirin on top. Transfer pan to oven and bake for 40 - 45 minutes. Serve on top of rice and sprinkle with the green onion.

2 cloves garlic, minced

1 large head broccoli, cut into 1-inch florets (about 8 cups)

  • Preheat oven to 375 degrees. In a bowl, toss chicken with garlic, a generous pinch of black pepper, orange zest and half the lemon zest. Rub seasoning all over chicken. In a medium baking dish, mix soy sauce, honey and lemon juice until honey dissolves. Lay chicken in marinade, flesh-side down, and marinate at least 10 minutes. (If marinating more than 1 hour, make sure marinade doesn't cover skin.) Remove chicken from marinade and transfer to a roasting pan, skin-side up. Lightly brush marinade over chicken, then transfer to oven. Reserve marinade. Roast until just cooked through, about 25 minutes. Brush chicken with marinade twice during roasting. Meanwhile, toss broccoli with olive oil and a pinch of salt. Place in a microwave-safe bowl and cover tightly with two layers of plastic wrap. Microwave on high until broccoli is tender but still has some crunch, 2-3 minutes. Transfer broccoli to a serving bowl. Top with remaining lemon zest. Serve broccoli alongside chicken. Drizzle chicken pan juices over top.

24 chicken wings
2 cups soy sauce
2 cups lemon juice

Steps:

  • Note: I had to put counts in the ingredients list for the recipe to be accepted, but this recipe works for any amount of wings.
  • Cut up chicken wings into segments if necessary. Place in a suitable container for marinating.
  • Mix soy sauce and lemon juice in equal parts, making enough to completely cover chicken wings in their container.
  • Marinate in refrigerator overnight, but no longer than 24 hours.
  • Drain wings and discard marinade.
  • Arrange wings in a single layer on a baking sheet or sheet pan. Use foil if you want to save elbow grease cleaning the pan later. Depending upon the number of wings, make multiple batches.
  • Place wings under preheated broiler, about 6 to 8 inches from unit.
  • Broil on each side until you think you've burnt them. Really. These are best when they are very dark brown, just before they really start to burn. For my broiler, this is about 10 minutes per side.
  • Be prepared to make these for every holiday party you will every attend again. Your hosts will demand it.
  • Frozen chicken wing segments (thawed) seem to actually work out better than fresh. Go figure.
  • Reconstituted lemon juice is fine.

BARBECUE CHICKEN BREASTS WITH SOY-LEMON MARINADE



Barbecue Chicken Breasts with Soy-Lemon Marinade image

Lemons have a broad appeal for those who barbecue because of the variety of ways in which they can be used. Lemon slices heighten both the color and flavor of sop mops or bastes and sauces, and a sprinkling of lemon on fresh-cut fruits will prevent oxidation, which causes fruits to turn brown before they can hit the grill. A twist of lemon will neutralize the odor of fish, a must for cedar plank-smoked salmon. Perhaps most important, in a marinade the acid in lemon juice will help break down the meat's collagen fibers, thus helping to tenderize tougher cuts. This recipe, cooked using the indirect heat method at high temperature, is easily one of the quickest and most flavorful recipes I know. Cooking with indirect heat at a high temperature on a closed grill will simulate an indoor oven without sacrificing smoke flavor and will prevent premature caramelization of the soy sauce.

1 cup soy sauce
1/2 cup fresh lemon juice
1 1/2 teaspoons black pepper
1 1/4 teaspoons garlic powder
1 1/4 teaspoons onion powder

1 1/4 teaspoons sugar
1 1/4 teaspoons MSG (optional)
6 boneless and skinless chicken breasts

Steps:

  • Melt the butter in a small saucepan. Remove from the heat and add the remaining marinade ingredients. Mix until well blended. Place the chicken in a shallow dish or a resealable plastic bag. Reserve 1 cup of the marinade for basting, and then pour the remaining marinade over the chicken. Cover the dish or seal the bag and marinate the chicken in the refrigerator for 30 to 45 minutes.
  • Build a fire (wood or a combination of charcoal and wood) for indirect cooking by situating the coals on only one side of the cooker, leaving the other side void. When the temperature reaches 400°F, remove the chicken from the marinade and place it on the grill grate, away from the coals. Cook covered for 8 minutes, then flip the chicken and baste with the reserved marinade. Cook the chicken for 8 minutes longer, or until the internal temperature reaches 160°F.
  • A room-temperature lemon will juice much more easily than a lemon straight out of the refrigerator. When making recipes such as Soy-Lemon Marinade, three tablespoons of juice per lemon can be expected. To get even more juice from your lemon, roll it along a work surface, pressing firmly, before slicing and squeezing.
