SOY FLOUR OATMEAL CHOCOLATE CHIP COOKIES

I had gotten some Bob's Red Mill Soy Flour for my daughter and was experimenting with it having never used Soy flour before. The cookies turned out very well and my kids had them almost gone in a few minutes! Just a note that the cookie dough will have a terrible after taste (I love to eat the dough), but the cookies will taste great! The cinnamon is optional because we love cinnamon, but you can leave it out.

Number Of Ingredients 12

1 cup butter
1 cup sugar
3/4 cup brown sugar
2 eggs
1 tablespoon vanilla extract
2/3 cup soy flour
2 cups flour, Sifted (could try some other gluten-free flour)
2 teaspoons cinnamon (optional)
1 3/4 cups oatmeal
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups chocolate chips

Steps:

  • In a large bowl, combine the butter and the sugars and cream them well together.
  • Add the eggs and the vanilla and continue to mix well.
  • In a separate bowl, mix the flours together and add the baking soda, salt and the cinnamon to the flour. Stir the flour well.
  • Add the flour the creamed mixture and mix well. Add the oatmeal and the chocolate chips to the dough.
  • Drop onto a cookie sheet. These will rise to be a good size cookie.
  • Bake at 375°F for about 10-12 minutes.
  • Transfer onto a cooling rack and enjoy warm!

2 cups Gold Medal™ Gluten Free Oat Flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1/2 cup packed brown sugar
1/3 cup granulated sugar
1 egg
1 teaspoon pure vanilla extract
1 cup dark chocolate chips
1/2 cup chopped dried cherries
1/2 cup coarsely chopped walnuts

Steps:

  • Heat oven to 375°F. In medium bowl, mix oat flour, baking soda and salt; set aside.
  • In large bowl, beat softened butter and sugars with electric mixer on medium speed 3 to 5 minutes or until fluffy, scraping side of bowl occasionally.
  • Beat in egg and vanilla until smooth. Stir in oat flour mixture just until blended. Stir in chocolate chips, cherries and walnuts.
  • Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 10 to 12 minutes or until tops are dry and light brown. Cool 3 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes. Store covered in airtight container.

In my quest to make the ULTIMATE Chocolate Chip cookie, one that's healthier than most, I decided to play around with oatmeal. I was never a big fan of traditional oatmeal cookies, but grinding up the oatmeal to use in place of regular flour in cookies sounded both interesting and healthy. My biggest critics (my family) thinks these are by far the best "healthy" chocolate chip cookie they've ever had! Hope you do too!

Number Of Ingredients 12

1/2 cup butter
1 cup brown sugar
3 tablespoons granulated sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups ground oatmeal (to flour consistency)
1/4 cup unbleached all-purpose flour
1 1/4 teaspoons instant coffee, finely ground
12 ounces chocolate chips

Steps:

  • Before starting, grind enough oatmeal in the food processor to make the necessary 1 3/4 cups you will need to make these cookies! Or, if you're lucky enough to find Oat Flour, use that!
  • With electric mixer, blend butter with both sugars, egg and vanilla extract.
  • Add dry ingredients to mixture- blend well.
  • Stir in chocolate chips.
  • Spoon golf ball-size balls of mixture onto prepared cookie sheets (either use cooking spray or parchment paper).
  • Bake at 265 degrees for 23 minutes (yes, I know this sounds strange, but trust me, it works!).
  • Enjoy!
