PORK SOUVLAKIA
I'm a cook in a senior citizens' home where I don't get much of an opportunity to experiment with cooking. So whenever I get a chance, I head to my own kitchen and create new dishes like this.

Steps:
- In a large resealable plastic bag, combine the first seven ingredients; add pork. Seal bag; refrigerate overnight. Discard marinade. Thread meat on skewers, leaving a small space between pieces. , Grill, covered, over medium heat for 15-20 minutes or until meat is no longer pink.

Steps:
- Thread the meat cubes on to the skewers.
- Make sure the barbecue has reached the right heat. Ideally for the best results kebab should be cooked over charcoal. Place the skewers on the barbeque and liberally apply salt, turn the skewers over and salt the other side. Turn the skewers from time to time to ensure that the meat cooks evenly on all sides.
- Just before the souvlakia are cooked, warm some Pitta bread over the grill. Remove the souvlakia from the grill and using a fork take the meat off the skewers and put it into a serving dish.
- Divide a pitta in two and in the pocket spoon in the meat, tomatoes, onion, parsley, salt and lemon juice.

SOUVLAKIA
This is a very common dish in Greece, and is usually made with lamb. However, feel free to substitute pork or chicken, as they go well with the marinade too. You can also add some onion and other vegetables on the skewer if you'd like! Serve this with tzatziki sauce, pita bread and a delicious greek salad! Note: Prep time does not include marinating time!!

Steps:
- Combine all ingredients except lamb in a large bowl; stir with a wire whisk. Add lamb, stirring gently to combine. Cover and marinate in the refrigerator at least 8 hours, up to 24 hours.
- Remove lamb from marinade, reserving marinade. Set meat aside.
- Place marinade in a saucepan, bring to a boil, reduce heat and simmer 5 minutes. Remove from heat and set aside.
- Place lamb on metal skewers; grill over medium coals or broil 4 to 6 inches from heat 8 to 10 minutes on each side or to desired degree of doneness, basting frequently with marinade.
