1 bottle (8 ounces) reduced-fat Italian salad dressing
10 garlic cloves, minced
1 teaspoon white pepper
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 medium green pepper, cut into 1-inch pieces
1 medium sweet red pepper, cut into 1-inch pieces
1 medium onion, cut into 1-inch pieces
8 large fresh mushrooms
8 cherry tomatoes
1 pound boneless skinless chicken breasts, cut into 1-inch cubes

Steps:

  • In a large bowl, combine the first seven ingredients. Pour half into a large resealable plastic bag; add vegetables. Seal bag and turn to coat. Pour remaining marinade into another large resealable plastic bag; add chicken. Seal bag and turn to coat. Refrigerate vegetables and chicken for at least 2-3 hours., Drain chicken, discarding marinade. Drain vegetables, reserving marinade for basting. On eight metal or soaked wooden skewers, alternately thread chicken and vegetables. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 6-8 minutes on each side or until chicken is no longer pink and vegetables are tender, basting frequently with reserved marinade.

0.5 cups orange juice
0.5 units lime
1 tablespoons olive oil
2 cloves garlic
1 teaspoons cumin
0.5 teaspoons paprika
0.5 teaspoons salt
0.5 teaspoons dried oregano
1 units red bell pepper
1 units yellow bell pepper
1 units red onion
2 pounds chicken

Steps:

  • 1. Soak bamboo skewers in water for 20 to 30 minutes.
  • 2. In a medium bowl mix orange juice, lime juice, olive oil, minced garlic cloves, ground cumin, paprika, salt, and oregano. Mix well and pour into a Ziploc bag. Set aside.
  • 3. Cut red and yellow bell peppers into bite size pieces and put into a bowl.
  • 4. Cut onion into bite size pieces and put into a bowl and set aside.
  • 5. Cut chicken into bite size pieces and put into marinade and refrigerate for an hour or overnight.
  • 6. Using soaked bamboo skewers, thread a chicken piece, a red bell pepper, chicken piece, an onion piece, chicken and yellow bell pepper. Alternate until all of the chicken and vegetables are used up.
  • 7. Preheat grill.
  • 8. Grill for 6 to 8 minutes till firm and peppers are tender and soft.
