I love this twist on potato salad. The chilies,corn, and cilantro really help it pop. I got the recipe from Taste of Home.

2 lbs small red potatoes, quartered
1/4 cup olive oil
3/4 teaspoon salt
1/2 teaspoon pepper, divided
3 ounces of softened cream cheese
1/2 cup sour cream
4 ounces chopped green chilies
1 teaspoon smoke paprika
1/2 teaspoon garlic powder
1 (15 ounce) can kernel corn, drained
1 small red onion, finely chopped
1 small sweet red pepper, finely chopped
1/2 cup minced cilantro

Steps:

  • Toss potatoes with oil, half of the salt, and half the pepper. Place in a greased baking pan and bake at 400 for 30 minutes or until tender.
  • To make the dressing, beat cream cheese and sour cream until smooth. Stir in the chilies,paprika, garlic poweder, and remaining salt and pepper.
  • In a big bowl, combine corn, onion, red pepper, and potatoes. Add 1 cup dressing and cilantro, toss to coat. There will be dressing left over.

1-1/2 pounds large red potatoes, quartered lengthwise
3 tablespoons olive oil
2 poblano peppers
2 medium ears sweet corn, husks removed
1/2 cup buttermilk
1/2 cup sour cream
1 tablespoon lime juice
1 jalapeno pepper, seeded and minced
1 tablespoon minced fresh cilantro
1-1/2 teaspoons garlic salt
1 teaspoon ground cumin
1/4 to 1/2 teaspoon cayenne pepper
Lime wedges

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 5 minutes. Drain potatoes and toss with oil., Grill poblanos, covered, over high heat 8-10 minutes or until skins are blistered and blackened on all sides, turning occasionally. Immediately place peppers in a small bowl; let stand, covered, 20 minutes. Reduce grill temperature to medium heat., Grill corn and potatoes, covered, over medium heat 12-15 minutes or until tender and lightly browned, turning occasionally. Cool slightly., Peel off and discard charred skin from poblanos; remove stems and seeds. Cut peppers into 1/2-in. pieces and place in a large bowl. Cut corn from cobs and cut potatoes into 3/4-in. pieces; add to peppers., In a small bowl, whisk buttermilk, sour cream and lime juice until blended; stir in jalapeno, cilantro and seasonings. Add to potato mixture, stirring in as much dressing as desired to coat. Serve with lime wedges. Refrigerate leftovers.

1 1/2 cups mayonnaise (plain yogurt works well or a combination of both)
3 -4 tablespoons Dijon mustard (start with least amount)
2 tablespoons fresh lime juice
1 -2 tablespoon chipotle pepper, pureed (in adobo)
1 large ripe tomatoes, seeded and diced
1/4 cup chopped cilantro leaf, loosely packed
3 green onions, sliced thin, white and green parts
1 medium red onion, thinly sliced
3 -4 slices bacon, cooked crisp and crumbled (optional)
1/4-1/2 teaspoon cayenne
3 -4 garlic cloves, finely chopped
salt
fresh ground black pepper
3 1/2-4 lbs new potatoes, cooked, drained and sliced 1/2-inch thick (cooked in salted water)

Steps:

  • Combine all the ingredients, except the potatoes, in a medium bowl and season with salt and pepper, to taste. Place warm potatoes in a large bowl and pour the mixture over potatoes and mix well. Season again with salt and pepper, to taste.
  • Can be eaten warm or cold.

2 tablespoons olive oil
2 lbs red potatoes, diced
1/2 onion, diced
2 teaspoons garlic, minced
1 teaspoon kosher salt
1/2 teaspoon ground pepper
10 slices cooked bacon, crumbled
1 bunch green onion, chopped
3/4 cup ranch salad dressing

Steps:

  • Toss first six ingredients together and place in single layer on cookie sheet sprayed with Pam.
  • Bake at 425 degrees for 40 minutes, stirring occasionally.
  • Transfer to large bowl.
  • Toss remaining ingredients. Can be eaten warm or cold. We prefer it room temp to warm.

4 large hard-boiled eggs, diced
1/4 cup kalamata olive, pitted & chopped
2 pickled jalapeno peppers, chopped
3/4 cup mayonnaise (or more to taste)
2 teaspoons whole grain mustard
1 teaspoon chopped fresh cilantro
1 teaspoon chopped fresh oregano
salt and pepper

Steps:

  • Cook potatoes in boiling water to cover 15 to 20 minutes or until tender.
  • Rinse under cold water, peel and dice in a large bowl.
  • Add chopped egg, olives& jalapeno, tossing gently until combined.
  • Combine mayonnaise, mustard, cilantro and oregano.
