BACON-CRUSTED QUICHE



Bacon-Crusted Quiche image

1 pound bacon
6 large eggs, lightly beaten
1 cup milk
9 ounces frozen spinach, thawed and drained of water
8 ounces frozen shredded potatoes, thawed and drained of water
Kosher salt and freshly cracked black pepper
2 cups shredded Cheddar

Steps:

  • Heat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Lay out 6 horizontal strips of bacon on the prepared baking sheet. Fold every other strip of bacon in half onto itself and lay one strip of bacon in the middle, vertical to the folded strips. Unfold the strips back over the vertical strip of bacon. Repeat this process using alternating vertical strips to weave into a lattice. (The bacon lattice should have an equal number of horizontal and vertical strips.) Bake until nearly cooked but still very pliable, about 15 minutes. Slide the bacon lattice into a 9-inch pie pan and press into place.
  • Top the bacon with a paper towel, then a layer of foil and either another pie pan or pie weights to weigh it down. Allow to cool for 10 minutes, then remove the weights and pat off any remaining excess oil with a paper towel.
  • Meanwhile, thoroughly mix together the eggs, milk, spinach, potatoes, some salt and pepper and 1 cup of the Cheddar. Pour the egg mixture into the bacon crust and top with the remaining cup Cheddar.
  • Bake until set and the cheese is browned, 30 to 45 minutes. Let rest 5 to 10 minutes, then serve warm or room temperature.

This recipe calls for 6 JUMBO eggs. You may need to add a few more eggs if you are using small to large sizes. TIP: Add finely chopped cilantro to the egg mixture before baking. We also like to add red pepper flakes to spice it up! These also freeze well, so you can prepare breakfast for the whole week! My husband loves these!

6 large eggs
1/4 c heavy cream
1/4 c green bell pepper
1/4 c red bell pepper
1/4 c onion
2 Tbsp cilantro, fresh
12 slice bacon
1/2 c cheddar cheese

Steps:

  • 1. Pre-heat oven to 350 degrees.
  • 2. Wrap a single slice of bacon along the walls of a cupcake pan (where normally place the cupcake batter). There will be about an inch of bacon left after covering the walls. Place this leftover bacon slice onto the center of the cup to cover the bottom.
  • 3. Repeat step 2 until each cupcake cup is wrapped in bacon. Place cupcake pan in the refrigerator to cool while you prepare the other ingredients.
  • 4. Dice bell peppers and onion, mix together with a fork.
  • 5. Scramble 6 JUMBO eggs (7-8 large eggs) in a bowl.
  • 6. Gently combine heavy cream with eggs until thoroughly mixed.
  • 7. Add peppers and onions to the egg mixture, along with half of the shredded cheese and mix well. Save 1/8th cup of peppers and onions for a later step.
  • 8. Remove the cupcake pan from the fridge and spoon the egg mixture into each cup, filling it up about 2/3 of the way (I use a 1/4 cup scoop to spoon the eggs into the cups).
  • 9. Sprinkle the remaining peppers and onions into the cups and top with the remaining cheese.
  • 10. Place in pre-heated oven on the middle rack for 30-35 minutes.
  • 11. Remove from oven and let stand 5 minutes. Garnish with chooped cilantro and enjoy!

2 tablespoons milk

1 can (12 oz) refrigerated Pillsbury™ Flaky Layers Buttermilk Biscuits (10 Count)

Steps:

  • Heat oven to 375°F. Spray 10 regular-size muffin cups with CRISCO® Original No-Stick Cooking Spray. In 8-inch skillet, cook bacon until crisp. Drain on paper towels. Crumble bacon; set aside.
  • Meanwhile, in small bowl, beat cream cheese until smooth. Gradually add milk and eggs, beating at low speed until smooth. Stir in Swiss cheese and onions. Set aside.
  • Separate dough into 10 biscuits. Press or roll each to form 5-inch round. Place 1 biscuit round in each muffin cup; firmly press in bottom and up sides, forming 1/4-inch rim. Place half of bacon in bottom of dough-lined muffin cups. Spoon cheese mixture evenly into cups.
  • Bake 21 to 26 minutes or until filling is set and edges of biscuit cups are golden brown. Sprinkle each with remaining bacon; lightly press into filling. Remove biscuit cups from pan.

1 medium onion, chopped (1/2 cup)
2 garlic cloves, minced
1 tablespoon olive oil or 1 tablespoon cooking oil
1 -2 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups cooked wild rice
1 cup monterey jack pepper cheese, shredded (4 ounces)
3/4 cup skim milk
1/3 cup Egg Beaters egg substitute
nonstick cooking spray
green pepper, chopped (optional)
salsa (optional)

Steps:

  • In a saucepan cook onion and garlic in hot oil till tender but not brown.
  • Stir in chili powder, cumin, and salt.
  • Cook for 1 minutes more.
  • Cool.
  • Stir in beans, cooked rice, cheese, milk, and eggs.
  • Spray a 10-inch pie place or quiche dish with nonstick coating.
  • Spoon mixture into pie place and bake, uncovered, at 350 degrees for 30 minutes or till center is set.
  • Let stand 10 minutes.
  • If desired, sprinkle with green pepper and serve with salsa.

2 unbaked pastry shells (9 inches)
2 teaspoons chili powder
1 teaspoon ground cumin
1-1/2 cups shredded cheddar cheese
1-1/2 cups shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
8 large eggs, lightly beaten
2 cups half-and-half cream
2 cans (4 ounces each) chopped green chilies
2 cans (2-1/4 ounces each) sliced ripe olives, drained
1/4 cup chopped green onions
2 tablespoons minced fresh cilantro
1/2 teaspoon salt
1/2 teaspoon pepper
Salsa and sour cream, optional

Steps:

  • Line unpricked pastry shells with a double thickness of heavy-duty foil. Bake at 400° for 5 minutes. Remove foil; bake 5 minutes longer., Sprinkle chili powder and cumin over shells; sprinkle with cheeses. In a large bowl, whisk the eggs, cream, chilies, olives, onions, cilantro, salt and pepper. 4 large eggs, divided use

1-1/2 cups shredded Gruyere cheese

Steps:

  • Preheat oven to 400°. On a lightly floured surface, unfold puff pastry. Roll each sheet into a 12-in. square; cut each into 9 squares. Place in ungreased muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up., In a small bowl, whisk 3 eggs, 1 cup cream, thyme and seasonings. In another bowl, combine cheese, spinach, red pepper and bacon; divide among pastry cups. 8 corn tortillas
3 tablespoons oil
1/2 medium onion, chopped
1 (7 ounce) can corn mixed with chopped peppers, drained
3 tablespoons canned diced diced green chilies
3 tablespoons chopped black olives
1 large tomatoes, peeled, seeded and diced
1 cup half-and-half
3 eggs
1/2 teaspoon salt
cayenne pepper, to taste
2 cups shredded monterey jack cheese
avocado, slices
parsley or cilantro

Steps:

  • Submerge tortillas, one at a time in hot oil in skillet for about 5 seconds, just to seal and soften. Drain on paper towels.
  • Place one tortilla in center of 9 inch quiche or pie pan.
  • Arrange remaining tortillas around pan, overlapping slightly and allowing edge to extend 1-2 inches above rim of pan; set aside.
  • In oil remaining in skillet, cook onion until tender, but not browned.
  • Stir in corn, green chilies, olives and tomato.
  • Cook, stirring frequently, for about 5 minutes or until some of the moisture is evaporated; set aside.
  • In bowl, combine half-and-half, eggs, salt, and cayenne pepper.
  • Sprinkle cheese evenly over tortilla shell.
  • Sprinkle vegetables over cheese.
  • Pour egg mixture over all.
  • Bake at 375°F for 35 minutes.
  • Cool 5 minutes.
  • Garnish top with avocado slices and cilantro or parsley.
