This is a recipe that I have been working on for a while. They are great for my husband's football parties! Serve with sour cream or ranch dressing on the side. Enjoy!

4 baking potatoes
½ onion, diced
½ cup milk
salt and pepper to taste
3 tablespoons butter
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
2 jalapeno peppers, seeded and chopped
1 tablespoon minced garlic
2 cups shredded Cheddar cheese
4 tablespoons bacon bits
¼ cup sour cream

Steps:

  • Cook each potato in the microwave until tender enough to pierce with a fork, about 8 minutes. Allow potatoes to cool, then slice in half lengthwise.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Scoop out the centers of the potato halves, leaving about 1/2 inch of potato in the skin to keep its shape. Place skins on a greased baking sheet and place the scoopings into a bowl. Mash the potato in the bowl with milk, salt, pepper and butter until smooth, or as smooth as you prefer. Stir in the green and red peppers, jalapeno and garlic until evenly distributed. Mound the mixture into the potato skins. Sprinkle cheese and bacon bits over the top.
  • Bake for 15 minutes in the preheated oven, or until the cheese is starting to toast.

4 slices bacon
6 Yukon gold potatoes, peeled and thinly sliced
¼ cup butter
2 jalapeno peppers, seeded and finely chopped
2 tablespoons finely chopped onion
2 cloves garlic, minced
¼ cup all-purpose flour
2 teaspoons salt
1 ½ teaspoons ground cumin
1 teaspoon chili powder
½ teaspoon ground black pepper
2 ½ cups milk
1 ½ cups shredded Colby-Monterey Jack cheese

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble into small pieces.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Layer potatoes in the prepared casserole dish.
  • Melt butter in a saucepan over medium heat. Add jalapeno peppers, onion, and garlic; cook and stir until slightly softened, about 5 minutes. Stir in flour until smooth. Season with salt, cumin, chili powder, and pepper; cook until fragrant, about 1 minute. Pour in milk, stirring until sauce thickens, about 5 minutes.
  • Remove sauce from heat. Add Colby-Monterey Jack cheese gradually, making figure 8 motions with a spoon until cheese is melted. Pour sauce over potatoes.

This is my modified version of "Sweet Potatoes with Warm Black Bean Salad" (a recipe from Eatingwell.com). A great vegetarian dinner or side dish to grilled meats. I added a bit more spice to the original recipe and we love it.

2 medium sweet potatoes
1 tablespoon extra-virgin olive oil
1 small onion, finely diced
1 (15 ounce) can black beans, drained and rinsed
1 (10 ounce) can Rotel tomatoes & chilies
1/4-1/2 teaspoon red pepper flakes
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/2 teaspoon sea salt
4 tablespoons reduced-fat sour cream (optional) or 4 tablespoons nonfat sour cream (optional)
4 tablespoons chopped fresh cilantro (optional)
4 tablespoons chopped fresh chives (optional)

Steps:

  • Scrub and dry sweet potatoes.Prick each potato with a fork in several places. Wrap in foil and bake in a 375 degree oven for 50-60 minutes or until tender all the way through.
  • Meanwhile, in a small sauce pan, saute onion in olive oil until clear. Add black beans, Rotel, cumin, paprika, coriander, salt and red pepper flakes. Simmer bean mixture on medium heat for about 15 minutes.
  • Remove potatoes from oven, unwrap and slice potatoes lengthwise, making several cuts. Then slice crosswise, making a cross-hatch pattern, opening up the potato. Spoon half of the bean mixture onto each potato.
  • Top each potato with a 1-2 tablespoons of sour cream and sprinkle with cilantro or chives, if desired.

5 lbs potatoes, peeled and quartered
1/2 cup butter
1/2 cup milk (a bit more or less to obtain your desired consistency when mashing the potatoes)
8 ounces smoked gouda cheese, shredded
3 garlic cloves, minced
2 chipotle chiles in adobo, finely chopped
salt and pepper, to taste

Steps:

  • Preheat oven to 350°F
  • In a large pot, boil potatoes in water until tender but not falling apart, about 20-25 minutes.
  • Drain potatoes and mash with the butter and milk. I use my hand mixer.
  • Add salt and pepper to taste.
  • In a large bowl combine potatoes, Gouda, garlic and chipotle peppers; mix well.
  • Put potatoes into a 4 quart casserole and bake, covered, for 45 to 55 minutes stirring once.
  • I like to uncover the potatoes the last 15 minutes or so of baking time to brown the top a little.
  • Potatoes can be made ahead. Mix as above, do not bake. Cover and refrigerate up to 24 hours. Bake as directed or until potatoes are heated through.

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. Place spreadable cheese in medium bowl. Gradually stir in half-and-half and chiles; blend well. Set aside.
  • In sprayed baking dish, layer potatoes, broccoli and ham. Pour spreadable cheese mixture over top; sprinkle with Cheddar cheese. Cover with foil.

2 large potatoes, unpeeled and scrubbed
3 tablespoons vegetable oil
1/2 teaspoon garlic salt
1/8 teaspoon black pepper
1/4 cup barbecue sauce
1 cup shredded colby cheese
1/3 cup sliced green onion
1/4 cup chopped fresh parsley or 4 teaspoons dried parsley
1/2 cup sour cream (optional)

Steps:

  • Fry bacon in a medium skillet until browned and crisp; drain well; crumble. Line 2 large baking sheets with foil. Preheat oven to 450*.

Total time: about 1 hour
1 lb. Yukon gold potatoes, peeled, quartered
1 ⁄3 cup low-fat buttermilk
2 Tbsp. scallions, thinly sliced
1 Tbsp. unsalted butter
2 tsp. chipotle chiles in adobo sauce, minced
Salt to taste
FOR THE STEAKS, COMBINE:
2 tsp. brown sugar
1 tsp. kosher salt
1 tsp. paprika
1 ⁄2 tsp. chili powder
1 ⁄2 tsp. black pepper
4 beef tenderloin filets (2 oz. each)
FOR THE SPINACH, HEAT:
1 Tbsp. olive oil
1 ⁄2 cup grape tomatoes
8 cups spinach leaves

Steps:

  • Boil potatoes in salted water in a saucepan over high heat, 15 minutes or until tender. Drain, return potatoes to the pan, and dry briefly over medium heat. Off heat, mash potatoes to desired consistency, then add the buttermilk, scallions, butter, chiles, and salt. Keep warm over very low heat. Combine brown sugar, salt, and spices for the steaks in a bowl. Press mixture onto both sides of filets. Heat 1 Tbsp. oil in a sauté pan over medium-high, add the steaks, and sauté 2-3 minutes per side for medium-rare. Remove filets from pan and keep warm. Heat 1 Tbsp. oil over medium-high in second sauté pan. Add tomatoes and cook until blistered, about 1 minute. Add spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste. Steps to Success: 1. Add buttermilk to the cooked potatoes for a creamy texture. 2. Make sure skillet is hot, then sear filets quickly, 2-3 minutes per side. Watch so they don't burn. 3.   • Preheat the oven to 400 degrees. Wash the sweet potatoes, scrubbing them well to remove any dirt or soil. With a fork, prick the sweet potatoes. Place on the oven rack; bake about 45 minutes, or until a knife inserted in the center goes in easily. Remove the potatoes from the oven.

4 sweet potatoes, unpeeled,cut into generous 1 inch chunks
3 tablespoons olive oil or 3 tablespoons canola oil

Steps:

  • Preheat your oven to 425.

4 medium sweet potatoes, scrubbed
2 teaspoons chipotle chilies in adobo (or to taste)
2 tablespoons olive oil
salt

Steps:

  • Set Sun Oven out to preheat. Lightly coat a baking pan with cooking spray. Place the sweet potatoes in the pan and bake in the Sun Oven until soft, 1 1/2 to 2 hours. Remove pan from the Sun Oven. When the potatoes are cool enough to handle cut off the top third of each one. Scoop out all the flesh from the smaller top parts and discard the skin. Scoop out the flesh from the larger parts leaving a 1/2-inch thick layer inside the skins. Place the skins back in the baking pan. Using an electric mixer or food processor, mix the scooped out flesh, chipotle chilies, and salt. Spoon the mixture into the reserved skins. Cover the pan with tin foil and a dark tea towel and bake in the Sun Oven until heated through, 30 to 40 minutes.

4 large baking potatoes
1/2 cup shredded monterey jack cheese (about 2 oz.)
1/2 cup shredded mild cheddar cheese (about 2 oz.)

1 canned chipotle chile, minced
2 tablespoons adobo sauce (from can of chipotle chilies)

Steps:

  • Preheat oven to 400 degrees F.
  • Scrub potatoes under water; pat dry.
  • Pierce potatoes with fork or other tool.
  • Place potatoes on baking sheet; bake at 400 degrees F.
  • for 75-90 minutes, or until potato is tender.
  • After potato has cooled somewhat, slice off top fourth of potato lengthwise; scoop out cooked potato into a bowl.
  • Add cheeses, butter, sour cream, chipotle, and adobo sauce to bowl, and mash mixture all together, mixing well.
  • Season to taste with salt and pepper.
  • Refill potatoes with mixture, mounding over tops as necessary.
  • Reheat potatoes in 400 degree F.
  • oven for 7-10 minutes or until heated through and cheese is melted.
  • Garnish tops of potato with minced cilantro or paprika, if desired.
