1-1/4 cups all-purpose flour
3/4 cup cornmeal
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon cayenne pepper
1 teaspoon chili powder
1/2 teaspoon salt
1 cup milk
1/4 cup vegetable oil
1 large egg
3/4 cup shredded cheddar cheese
3/4 cup shredded Monterey Jack cheese
TOPPING:
1-1/2 pounds ground beef
2/3 cup water
2 envelopes taco seasoning, divided
2 cups sour cream
1-3/4 cups (10 ounces each) shredded cheddar cheese
1-3/4 cups shredded Monterey Jack cheese
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 cup salsa

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder, cayenne, chili powder and salt. Combine the milk, oil and egg; stir into dry ingredients just until moistened. Stir in the cheeses. , Spread into a greased 15x10x1-in. baking pan. Bake at 400° for 10-12 minutes or until a toothpick comes out clean., In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in water and one envelope of taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Set aside., In a small bowl, combine the sour cream and remaining taco seasoning; mix well. Spread over crust. Sprinkle with the beef mixture and half of the cheeses. , Combine the corn, beans and salsa; spoon over cheese. Sprinkle with remaining cheese. Broil 5-10 minutes or until cheese is melted.

1 large flour tortilla
½ cup shredded asadero cheese, divided
⅓ cup salsa
1 medium egg
4 slices avocado, or to taste

1 tablespoon crema con sal (salted Mexican-style sour cream)
1 pinch freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Crumble sausage into a large skillet and cook until browned over medium-high heat, about 5 minutes. Drain grease and remove browned pork to a plate. Clean out skillet.
  • Place flour tortilla into the skillet. Sprinkle 1/2 of the asadero cheese onto the tortilla and spread salsa over the cheese. Top with sausage crumbles and remaining cheese.
  • Crack open the egg and carefully add to the middle of the pizza; cook for 12 minutes.
  • Top pizza with avocado slices, chopped cilantro, crema con sal, and black pepper.

1 1/2 pounds ground beef
one jar salsa, 12 ounces
one can corn, drained, 8 ounces
1 1/2 cup shredded cheddar cheese, 6 ounces
1/2 cup sliced pitted ripe olives
2 to 3 tablespoons snipped fresh cilantro
3/4 teaspoons ground cumin
1/4 teaspoon pepper
one package hot roll mix, 16 ounces
1/4 cup cornmeal
1/2 teaspoon ground cumin
one beaten egg

Steps:

  • 1. for the filling, in a large skillet, cook ground beef till Brown. Drain fat. Stir in salsa, corn, cheese, olives, cilantro, the 3/4 teaspoon cumin, and pepper. Set aside.
  • 2. To make the hot roll mix as the package directs, except stir in the cornmeal and the 1/2 teaspoon cumin into the flour mixture and increase hot tap water to 1 1/4 cups. Turn the dough out onto a lightly floured surface. Knead about five minutes or until smooth and elastic. Divide the dough in half. Cover and let rest five minutes.
  • 3. Meanwhile, grease an 11 to 13 inch pizza pan. Sprinkle with additional cornmeal if desired. On a lightly floured surface, roll each half of dough into a circle 1 inch larger than pizza pan. Transfer one crust to pan. Spread meat mixture over dough.
  • 4. Bake in a 375° oven for 30 to 35 minutes or until pastry is Golden and pizza is heated through. If needed, to prevent over Browning, cover pizza with foil after 20 minutes. Makes six servings.

I made this up for our weekly Photo Club competition & IMHO it is very good - hope you think so too. Use any mix of seafood that you like, make it hotter, more garlic etc etc - that's what a pizza is all about. This one suits my taste buds. To bake it I used the type of pizza pan that has holes in the bottom to allow heat in to crisp the bottom. Make up ahead and keep in the fridge for several hours then pop it in the oven 20-25 minutes before serving..

2 tablespoons butter or 2 tablespoons margarine, melted

3 cloves fresh garlic, smashed or 2 tablespoons flaked dried garlic

My Mom told me I really messed up making this for her because she will never order another taco pizza again! This dish is time consuming to prepare but soooo good. The corn and Catalina give it just a touch of sweet with the savory, the flavors are multi dimensional. I prepared this for New Years Eve as appetizer and have made it for supper several times. Hope you all enjoy this!

2 package(s) favorite taco seasoning packets (i use ortega)
- water called for on taco seasoning packets
2 can(s) refrigerated crescent rolls
2 can(s) refried beans
1 package(s) favorite taco seasoning packet (ortega again, lol)
4 cup(s) mild or sharp cheddar or colby jack shredded cheese
1 large lettuce head (shredded)
2 large tomato (diced)
8 ounce(s) frozen white corn (thawed and drained)
1 can(s) sliced black olives (drained and rinsed)
1 bunch(es) green onions (finely chopped)
1 large bag of nacho flavored tortilla chips (crushed)
- sour cream
- catalina dressing (i use kraft)
- ranch dressing (i make hvr, not bottled)

Steps:

  • Brown ground chuck until no pink, drain, add 2 packets of taco seasoning and water called for on the packets. Prepare as directed on packets. Keep warm on low.
  • *While preparing taco meat above* Spray large jelly roll pan with non-stick spray. Roll out crescents and press into pan, try and seal the seams best you can. Pierce dough every inch or so with a fork. Bake at temp and time on package.
  • Combine refried beans and remaining packet of taco seasoning (no water)
  • Assemble right before serving: On baked crescents, spread seasoned refried beans, top with hot taco meat, top with shredded cheese. Stop here if traveling with this dish (toppings to be added by individuals or added at event) or if everyones tastes are different. If not continue to top in this order lettuce, tomato, corn, black olives, green onions and tortilla chips. Drizzle with Catalina, then with Ranch. Cut in desired size pieces. Serve with sour cream. Number Of Ingredients 21

1 1/4 cups all-purpose flour
3/4 cup cornmeal
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon cayenne
1 teaspoon chili powder
1/2 teaspoon salt
1 cup milk
1/4 cup vegetable oil
1 egg, beaten
3/4 cup cheddar cheese, shredded
3/4 cup monterey jack cheese, shredded
1 1/2 lbs ground beef
2/3 cup water
2 (1 1/4 ounce) envelopes taco seasoning, divided
2 cups sour cream
1 3/4 cups cheddar cheese, shredded
1 3/4 cups monterey jack cheese, shredded
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can black beans, rinsed & drained
1 cup salsa

Steps:

  • Combine dry ingredients for crust in a large bowl.
  • Combine milk, oil& egg in a separate bowl; stir into dry ingredients just until moistened.
  • Stir in the cheeses.
  • Spread into a greased 15 x 10 x 1 inch baking pan and bake in a preheated 400F for 10- 12 minutes or until a toothpick comes out clean.
  • Cook beef in a large skillet, over medium heat until no longer pink, about 10 minutes; drain off fat.
  • Stir in water& 1 envelope of taco seasoning.
  • Bring to a boil, reduce heat& simmer, uncovered, for 5 minutes.
  • Set aside.
  • Combine sour cream& 2nd package of taco seasoning in a small bowl; mix well.
  • Spread over crust.
  • Sprinkle beef mixture over top, followed by half of the cheese mixture.
  • Combine the corn, beans& salsa in a small bowl; spoon over pizza top, followed by the other half of the cheese mixture.
  • Broil 5- 6 inches from the heat for 5- 10 minutes or until the cheeses are melted.
  • Watch Carefully!

8 (10 inch) flour tortillas (*)
8 ounces shredded mexican cheese
1 cup thick and chunky picante sauce
2 cups chopped cooked chicken
1 (15 ounce) can black beans, rinsed and drained
1/2 cup frozen corn, thawed
2 plum tomatoes, seeded and chopped
1 green onion, chopped
2 tablespoons fresh lime juice
1 tablespoon fresh cilantro
1 garlic clove, pressed
1/2 teaspoon creole seasoning
sour cream
chopped avocado

Steps:

  • Top 4 flour tortillas evenly with 1 cup cheese; top with remaining flour tortillas. Divide picante sauce, Black Bean Salsa, chicken, and remaining 1 cup cheese over flour tortillas. Bake at 400° for 15 minutes, or until cheese is bubbly. Garnish, if desired.
  • *2 (11.5-ounce) cans refrigerated corn sticks may be substituted for tortillas. Unroll and press perforations to seal into a lightly greased jellyroll pan to create a rectangular crust. Bake at 375° on lower oven rack 10 minutes. Add toppings, and bake 15 more minutes. Makes 8 pieces.
  • Black Bean Salsa:.
  • Stir together all ingredients. Cover and chill until ready to serve.

1 pkg. (1 lb.) frozen pepper stir-fry, thawed
2 tsp. chili powder
1 pkg. (10 oz.) thin pizza crust
6 oz. 2% Milk VELVEETA, cut up, divided

Steps:

  • Place pepper stir-fry in strainer; press with back of spoon to drain completely. Toss with chili powder in medium bowl.
  • Top pizza crust with 1/2 of the VELVEETA; cover with pepper mixture.
  • Bake at 450°F for 15 minutes. Sprinkle with remaining VELVEETA. Bake an additional 3 to 4 minutes or until VELVEETA is melted. Cut into wedges to serve.
