Jalapeno peppers are quite abundant in this area of the country, and there are numerous ranches here that raise lambs. People seem to be eating food that's a little hotter nowadays, so I think this recipe will appeal to them.

1 cup salsa
1/2 cup chopped onion
1/4 cup molasses
1/4 cup fresh lime juice (about 2 limes)
1/4 cup chicken broth
2 garlic cloves, minced
1 to 3 tablespoons chopped seeded jalapeno peppers
2 teaspoons sugar
4 lamb chops (1 inch thick)
Sour cream

Steps:

  • In a saucepan, combine the first eight ingredients. Simmer, uncovered, for 15-20 minutes. , Meanwhile, grill lamb chops, turning once, over medium heat for 10-14 minutes for medium-rare, 14-16 minutes for medium. Brush with sauce during the last few minutes of grilling. , Serve with sour cream.

This lamb recipe comes from a feast that Mark Bittman and Sam Sifton prepared in Charleston, S.C. They found good lamb and decided to cook it two different ways, braised and grilled, to bring different textures and flavors to the plate - and also to nod to the tradition of the paschal lamb in Jewish and Christian springtime traditions.

4 cloves garlic, chopped fine
2 tablespoons fresh rosemary leaves, chopped fine
2 tablespoons olive oil
1 boneless leg of lamb, 5 to 6 pounds, butterflied
Kosher salt and black pepper
2 handfuls pecan shells, or wood chips, soaked in water

Steps:

  • Combine the garlic, rosemary and olive oil in a bowl. Season the lamb with salt and pepper, then massage with the garlic and rosemary mixture and put the meat in the bowl. Cover and allow to marinate in the refrigerator for at least 30 minutes.
  • Allow it to come to room temperature, approximately 30 minutes. Meanwhile, build a fire in your grill, leaving 1/3 of the cooking area free of coals.
  • When the fire is hot, sprinkle the pecan shells or wood chips over the fire and place the lamb fat side down. Sear each side of the lamb for approximately 4 minutes each, then remove the lamb to the side of the grill without coals and roast, covered, for approximately 30 to 40 minutes.
  • Tent in foil for 10 to 15 minutes, and serve.

1 cup orange juice
2 jalapeno peppers, seeded and finely chopped
1 teaspoon ground cumin
1/2 teaspoon salt, optional
Dash pepper
3/4 cup halved sliced sweet onion
4 teaspoons cornstarch
1/4 cup cold water
1 cup fresh orange sections
2 tablespoons minced fresh cilantro
8 lamb loin chops (1 inch thick and 4 ounces each)

Steps:

  • In a small saucepan, combine the orange juice, jalapeno, cumin, salt if desired and pepper. Cook over medium-high heat until mixture begins to simmer. Stir in onion. , Combine cornstarch and water until smooth; gradually add to the sauce. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat. Stir in oranges and cilantro; keep warm., Grill lamb chops, covered, over medium heat or broil 4-6 in. from the heat for 4-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with orange sauce.

A very flavorful marinade. Another family favorite from Jr. League's California Heritage Continues. Prep time does not include 4 hour marinating time.

2 tomatoes, quartered
2 cups chopped onions
1/2 cup chopped red bell pepper
4 cloves garlic
1/4 cup cilantro leaf, fresh (packed)
2/3 cup soy sauce
5 tablespoons oil
2 tablespoons fresh lime juice
1 1/2 teaspoons black pepper
4 whole chicken breasts (about 2 pounds)

Steps:

  • Split chicken breasts.
  • Place tomatoes, onions, pepper, garlic, cilantro, soy sauce, oil, lime juice and black pepper in food processor and process for 30 seconds.
  • Pour marinade over the chicken breasts and marinate, covered and refrigerated for at least 4 hours, turning frequently.
  • Remove chicken from the marinade and grill over medium coals for 20 to 30 minutes, turning frequently and basting with marinade.
  • Sprinkle the breasts with parsley before serving.
  • Serve with black beans.
  • If serving marinade as a sauce with the chicken, be sure to cook thoroughly!
