Southwestern Chicken & Rice Skillet is a filling, low-fat supper filled with taco-spiced chicken, corn, back beans, salsa, chicken broth, and rice.

Number Of Ingredients 9

2 teaspoons extra virgin olive oil
1lb chicken, cut into bite-sized pieces
1/4 onion, chopped
2 teaspoons taco seasoning (plus salt if using a salt-free blend)
1 cup frozen corn kernels, slightly thawed
1 can black beans, drained & rinsed
2 cups chicken broth
1 cup salsa
1 cup long grain white rice (I used jasmine)

Steps:

  • Heat oil in a very large skillet over high heat. Add chicken and onion then season with taco seasoning and salt, if necessary. Saute for 2-3 minutes - chicken does not need to be cooked all the way through.
  • Add corn, beans, salsa, and chicken broth to the skillet then bring to a boil. Stir in rice then place a lid on top, turn heat down to medium-low, and simmer for 15 minutes. Let sit off the heat for 5 minutes before serving.

1 1/2 lb chicken breast halves, skinless and boneless, diced
1 c white rice, minute rice is best
1 clove garlic, minced
1/2 large onion, diced
1 large poblano or red bell pepper, diced
1 c corn, frozen or fresh
1 can(s) black beans, drained
2 c chicken broth
1 c salsa, chunky
1 1/2 tsp chili powder
1/2 tsp black pepper
1 tsp sea salt
2 Tbsp olive oil, extra virgin
2 c monterey jack cheese
1/2 tsp cumin

Steps:

  • 1. In a large skillet, over medium high heat, heat the oil and add the diced onion, minced garlic and the chicken pieces and stir around until chicken is beginning to turn white. Add the chili powder, cumin, corn, diced peppers and salt and pepper. Stir in the chicken broth and the salsa. Next add the rice, stir. Put lid on pan and simmer on low heat for 15 minutes.
  • 2. Remove lid and add black beans to mixture in the pan and stir. After adding the beans, sprinkle monterey jack cheese over the rice and cover pan with lid and let set another 5 minutes.
  • 3. Sprinkle with cilantro or chopped green onions and sour cream if desired.
  • 4. NOTE: This is a mildly flavored dish. For more heat/spice, use hot peppers like jalapeno, more garlic and maybe a spicier salsa.

1 tablespoon olive oil
1 medium green pepper, diced
1 medium onion, chopped
2 garlic cloves, minced
1 cup uncooked long grain rice
1/2 teaspoon ground cumin
1/8 teaspoon ground turmeric
1 can (14-1/2 ounces) reduced-sodium chicken broth
2 cups frozen corn (about 10 ounces), thawed
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chiles, undrained

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat; saute pepper and onion 3 minutes. Add garlic; cook and stir 1 minute., Stir in rice, spices and broth; bring to a boil. Reduce heat; simmer, covered, until rice is tender, about 15 minutes. Stir in remaining ingredients; cook, covered, until heated through.

1 tablespoon oil
1 lb boneless skinless chicken breast half (4 small)
2 cups water
1 cup thick & chunky salsa
10 ounces frozen corn (about 2 cups)
2 cups brown rice, uncooked (Minute Rice's brown rice)
1/4 cup fat-free cheddar cheese, shredded

Steps:

  • Heat oil in large skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through (170 degrees F).
  • Remove chicken from skillet; set aside. Add water, salsa, and corn to skillet; mix well. Bring to boil.
  • Stir in rice. Reduce heat to low; cover. Simmer 5 minutes. Top rice mixture with chicken; sprinkle with cheese. Cover; simmer an additional 5 minutes or until cheese is melted and rice has absorbed liquid.

1 (10 ounce) can diced tomatoes with green chile peppers
1 (15 ounce) can black beans, rinsed and drained
1 (8.75 ounce) can whole kernel corn, drained
1 pinch ground cumin

Steps:

  • In a large skillet, heat oil over medium high heat. Brown chicken breasts on both sides. Add tomatoes with green chile peppers, beans and corn. Reduce heat and let simmer for 25 to 30 minutes or until chicken is cooked through and juices run clear. Add a dash of cumin and serve.
