Growing up in the south this side dish/veggie was a main staple. Especially when you have home grown veggies on hand.

Number Of Ingredients 6

8 okra pods
1 cup yellow cornmeal
1 tablespoon flour
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup oil

Steps:

  • Slice okra in 1/4-inch slices.
  • Wash in cold water.
  • Mix cornmeal, flour, salt, and pepper together.
  • Roll okra in cornmeal mix.
  • Fry in hot skillet for 10 minutes or until golden brown.
  • Drain on paper towels or brown paper bags.

This is another recipe I grew up with. This is passed down from word of mouth, no one has ever written it down before! Fresh, fried okra is soo simple to fix and soo good!

Number Of Ingredients 6

1 lb fresh okra, cut into pieces (don't use the top of the stem but the bottom is wonderful to eat)
2 -3 cups cornmeal
1 egg
2 cups buttermilk (regular or lowfat milk is fine, too)
salt and pepper
oil

Steps:

  • In a big bowl beat egg with a fork, pour milk in and combine. Pour the cornmeal in another big bowl.
  • Pour enough oil in a big skillet, halfway up, or you can use a deep fryer. Set heat to Medium-high.
  • Put some okra pieces in milk mixture and then coat in cornmeal batter. Fry in skillet 10-15 min, occasionally turning/stirring them around. They are done when crispy and golden brown but not black!
  • Drain on paper towel lined plate. Sprinkle with salt and pepper (i don't use pepper but some people prefer it).
  • Repeat with rest of okra till all gone. Enjoy!

4 1/2 lbs small okra pods
7 garlic cloves
7 hot peppers
7 teaspoons dill seeds
1 quart vinegar
1 cup water
1/2 cup pickling salt

Steps:

  • Wash okra well. Drain and set aside. Place 1 clove
  • garlic and 1 hot pepper into each of 7 hot
  • sterilized pint jars. Pack jars firmly with okra,
  • leaving 1/2 inch head space; add 1 teaspoon dill
  • seed to each. Combine vinegar, water, and salt in a
  • large saucepan; bring to a boil and pour over okra.
  • Screw metal bands on tightly. Process 10 minutes in
  • a boiling water bath. Let pickles stand at least 5
  • weeks before opening. This is really hot. You may
  • want to cut the amount of spices used.

8 ounces fresh okra
soy sauce
bonito flakes

Steps:

  • Bring a large pot of lightly salted water to a rapid boil.
  • Wash the okra thoroughly.
  • Put whole okra into rapidly boiling water and cook for 2 minutes.
  • Drain.
  • When okra is cool enough to handle, cut in thin slices and place in serving dishes, discarding the stems.
  • Serve topped with bonito flakes and a little soy sauce.
