2 pounds lean ground beef (90% lean)
1-1/2 cups chopped onions
1 can (28 ounces) diced tomatoes, undrained
1 package (16 ounces) frozen corn, thawed
1 can (15 ounces) black beans, rinsed and drained
1 cup picante sauce
3/4 cup water
1 teaspoon ground cumin
3/4 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • In a Dutch oven, cook beef and onions over medium heat until meat is no longer pink; drain. Stir in the tomatoes, corn, beans, picante sauce, water, cumin, salt, garlic powder and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until corn is tender. Sprinkle with cheese.

Our whole family loves foods spiced with picante sauce, so I developed this recipe! This dish is very quick and easy to make, and it also reheats well. Sometimes I add cooked, sliced potatoes to the stew for a little variety, too.

1 lb boneless skinless chicken breast
2 1/4 cups fat free chicken broth
4 garlic cloves, finely chopped
1 (4 ounce) can chopped green chilies
2 teaspoons all-purpose flour
1 medium red bell pepper, diced
1 medium carrot, sliced
1 cup whole kernel corn
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground cumin
2 tablespoons cilantro, finely chopped
1 teaspoon cornstarch
1/4 cup cold water
12 tortilla chips, coarsely crushed

Steps:

  • Trim fat from chicken. Cut chicken into cubes. Heat 1/2 of the broth to boiling in Dutch oven. Cook chicken in broth about 5 minutes, stirring occasionally, until white. Remove chicken from broth with slotted spoon.
  • Cook garlic and chilies in broth in Dutch oven over medium-high heat 2 minutes, stirring frequently. Stir in flour. Cook over low heat 2 minutes, stirring constantly. Gradually stir in remaining broth.

2 lb lean beef stew meat, cut into 1/2-inch cubes
2 c chopped onion
4 clove garlic, finely minced
2 can(s) (14.5 ounc sized cans) fire roasted diced tomatoes with juice
4 can(s) 4 ounces each can) diced green chiles, drained
2 c corn kernels, frozen
3 tsp dried oregano leaves, crushed
2 tsp cumin (ground)
2 tsp chili powder
1 tsp salt
1/2 tsp teaspoon ground red pepper
1 Tbsp unsweetened cocoa powder
3 Tbsp brown sugar
4 Tbsp yellow cornmeal

Steps:

  • 1. Combine all ingredients, except cornmeal, in a slow cooker, mixing well.
  • 2. Cover and cook on LOW 7 to 8 hours or until meat is tender.
  • 3. Turn control to HIGH. Stir in cornmeal; cover and cook 20 to 25 minutes longer.

1 (15 1/2 ounce) can kidney beans, Drained and rinsed
1 (15 1/2 ounce) can black beans, Drained and rinsed

1 (14 1/2 ounce) can diced tomatoes with green chilies or 2 (14 1/2 ounce) cans diced tomatoes with green chilies
1 (1 1/4 ounce) envelope taco seasoning

Tabasco sauce
1 cup chicken broth, less if you want a thinner soup consistency

Steps:

  • Combine all ingredients except chicken and broth (if using) in slow cooker.
  • Lay chicken on top and cover.
  • Cook on low for 6-8 hours or on high 3-4 hours.
  • Before serving remove and shred chicken. Chicken broth can be added at this point if a thinner consistency is desired.
  • Cook 30 minutes longer on low.
  • Can be served with rice, cheese, sour cream, tortilla chips.

Steps:

2 to 3 lbs. skinless,boneless chicken breast
3 t cumin
3 t dried mexican oregano
1 t salt
1 t freshly ground pepper
1 lb. chili peppers, preferably Pablano: anaheim will do
3/4 lb. fresh husked tomatillos
1/2 cup pumpkin seeds
2 cups chicken stock
2 1/2 T oil
1 medium onion, chopped
5 garlic cloves, chopped
3 ears fresh corn
1/3 cup heavy cream or half and half
2/3 cup chopped cilantro

Steps:

  • 1. Rub chicken with a mixture of cumin,oregano, salt and pepper. 2. Roast peppers and then tomatillos separately under a broiler at top oven shelf setting, turning occasionally until charred all over. 7 to 10 minutes for peppers, 3 to 5 minutes for tomatillos. Place peppers in a plastic storge bag to steam for at least 15 minutes. In the meantime, roast, peel and chop the tomatillos. Rub the skins off the peppers under cold running water. Remove stems and seeds. Chop roasted peppers and set vegetables aside. 3. In a dry skillet over medium heat, toast the pumkin seeds while occasionally shaking the pan until they pop, about 4 to 5 minutes. In a blender of processor, puree the seeds with one cup of the chicken stock. 4. In a large pot, heat the oil over moderate heat. Add onions and garlic and cook for about 5 minutes stirring occasionally until onions are softened. Add the chicken and braise turning occasionally until the pink disappers, about 5 minutes. Add remaining chicken stock, pumpkin seed puree and roasted chopped vegetables. Stir and simmer covered over low heat for 45 minutes. 5. Meanwhile, cut the kernals off the corn cobs, and "milk" cob by rubbing bare cob with back of knife. Or use frozen corn. After the chicken has simmered for 40 minutes, add corn to pot. Add the cream and 1/3 cup of celantro and simmer 10 minutes longer. Salt and pepper to taste. 5. Garnish with additional cilantro on top and serve..

1 cup dried pinto beans, rinsed and picked over
2 3/4 pounds stew meat, well trimmed and cut into 1 1/2" pieces
1 teaspoon salt and pepper
3 tablespoon flour
6 tablespoon olive oil
2 onion cut into 1/2" pieces
8 garlic cloves, minced
1 jalapeno chili, minced with seeds
3 tablespoons tomato paste
1 1/2 cups zinfandel wine
2 cups beef stock
2 cups chicken stock
28 ounces italian plum tomatoes, drained
1 smoked ham hock
1/2 teaspoon dried red pepper flakes
11 ounces linguica sausage-I use hillshire farms
2 bell pepper, cut into 1" pieces
2 poblano chilies
3 zicchini
1/4 cup minced fresh cilantro
makes 1/4 cups Santa Fe Seasoning
1 tablespoon ground cumin
1/2 teaspoon ground cumin
2 1/2 teaspoons ground coriander
2 1/2 teaspoons chili powder
2 teaspoons dried oregano, crumbled
2 teaspoons dried thyme, crumbled
1/4 teaspoon ground cloves, generous
1/4 teaspoon allspice
1/4 teaspoon cinnamon

Steps:

  • mix together all spices for Santa Fe Seasoning. Makes 1/4 cup and can be prepared 1 month ahead.
  • Place beans in heavy medium saucepan with enough cold water to cover. Bring to a boil. Remove from heat. Cover and let stand 1 hour. Drain beans.
  • Place beef in large bowl. Season with salt and pepper. Sprinkle 2 teaspoons Santa Fe Seasoning over; toss well. Add flour and toss to coat.
  • Heat 4 Tablespoons oil in a heavy 4 quart pan over medium-high heat. Add meat in batches and brown well. Transfer to bowl using slotted spoon. Add remaining 2 T oil. Reduce heat to medium,m. Add onions and all but 2 teaspoons remaining seasoning mix and toss to coat. Add garlic, jalapeño and tomato paste and stir 1 minute. Add wine and bring to boil, scraping up browned bits. Add both stocks, tomatoes, ham hock and red pepper flakes and bring to simmer. Return meat to pan. Reduce heat, cover partially and simmer 30 minutes stirring occasionally. Add beans, cover partially and simmer 1 hour. Uncover, add reserved 2 teaspoons seasoning mix and simmer until meat and beans are tender, stirring occasionally, about 45 minutes.
  • Degrease stew if necessary. Remove ham hock, trim fat and discard. Cut ham meat into 1/2" pieces. Mix into stew. (Stew can be prepared 1 day ahead, cover and refrigerate. Bring to simmer before continuing with recipe>)
  • Cook linguine in heavy large skillet over medium-high heat until cooked through, about 2 minutes per side.

This is my take on pozole. I fell in love with traditional pozole a few years ago when a friend from New Mexico made the dish. Although I love the traditional dish, in general I'm not a huge fan of pork or hominy, thus the creation of this recipe.

2 ½ cups dried garbanzo beans
2 pounds elk roast
2 tablespoons olive oil
2 bay leaves
water as needed
2 ½ ounces New Mexico chile pods
6 cups boiling water
1 ½ tablespoons salt
5 cloves garlic, minced
1 teaspoon smoked paprika
1 head cabbage, cored and thinly sliced
2 avocados - peeled, pitted, and sliced
2 limes, cut into wedges
1 teaspoon crushed red pepper, or to taste

Steps:

  • Place garbanzo beans into a large container and cover with several inches of cool water; let soak, 8 hours to overnight.
  • Strain and wash beans and place in a slow cooker. Add elk roast, olive oil, and bay leaves. Fill with enough water to cover garbanzo beans.
  • Cook on High until elk meat falls off the bone when poked with a fork, about 5 hours. An instant-read thermometer inserted into the center should read at least 135 degrees F (57 degrees C).
  • While roast is cooking, bring a medium pot of water to a boil. Add chile pods and boil until tender, about 20 minutes. Remove chile pods with a slotted spoon, leaving most of the water in the pot, transfer to a blender, and process to a thin consistency.
  • Remove elk roast and shred meat. Add meat back to the slow cooker. Scoop blended chiles into a fine mesh strainer and press with a spoon to add sauce to the slow cooker; discard any solids in the strainer. Add 6 cups boiling water, salt, garlic, and smoked paprika, reduce heat to Low, and cook for 3 hours. Serve stew with cabbage, avocados, lime wedges, and crushed red pepper.

1 pound boneless skinless chicken breast half or thighs
2 1/4 cups fat-free chicken broth
4 cloves garlic, finely chopped
1-2 medium jalapeno chiles, seeded and diced
2 teaspoons all-purpose flour
1 medium red bell pepper, diced (1 cup)
1 medium carrot, sliced (1/2 cup)
1 cup whole kernel corn
2 tablespoons finely chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground cumin
1 teaspoon cornstarch
1/4 cup cold water
, reduced-fat tortilla chip, or Baked Tortilla Chips (see Appetizers & Snacks chapter), if desired

Steps:

  • 1. Remove fat from chicken. Cut chicken into 1-inch pieces. Heat 1/2 cup of the broth to boiling in 3-quart saucepan. Cook chicken in broth about 5 minutes, stirring occasionally, until white. Remove chicken from broth with slotted spoon. 2. Cook garlic and chilies in broth in Dutch oven over medium-high heat 2 minutes, stirring frequently. Stir in flour reduce heat to low. Cook 2 minutes, stirring constantly. Gradually stir in remaining 1 3/4 cups broth. 3. Stir in chicken and remaining ingredients except cornstarch, water, and tortilla chips. Heat to boiling reduce heat. Cover and simmer about 20 minutes, stirring occasionally, until chicken is no longer pink in center. 4. Mix cornstarch and water stir into chicken mixture. Cook, stirring frequently, until heated through and thickened. Serve with tortilla chips. SOUTHWEST TURKEY TENDERLOIN STEW



Southwest Turkey Tenderloin Stew image

This is a wonderfully satisfying stew. You can make it as spicy as you want. We used no-salt tomatoes, and didn't miss the sodium at all. As a side note, this can also be done on the stove top by pan-frying the turkey in a dutch oven and then adding the ingredients and simmering for at least 30 minutes. Both methods work great. We serve this over brown rice. Also, if you have frozen pepper and onions, those work great!

1 1/2 lbs turkey tenderloins, cut into 3/4 inch pieces
1 tablespoon chili powder
1 teaspoon ground cumin
3/4 teaspoon salt
1 (15 ounce) can diced tomatoes with mild green chilies
1 (15 ounce) can garbanzo beans, drained and rinsed (optional)
1 (15 ounce) can black beans, drained but not rinsed
1 (15 1/2 ounce) can pinto beans in chili sauce, un-drained
1 (4 ounce) can mild green chilies (optional)
1 red bell pepper, cut into 3/4 inch pieces
1 green bell pepper, cut into 3/4 inch pieces
3/4 cup onion, chopped
3/4 cup salsa
3 garlic cloves, minced
fresh cilantro (optional)

Steps:

  • Place turkey in slow cooker. Sprinkle chili powder, cumin and salt over turkey; toss to coat.
  • Add beans, tomatoes, chilies, bell peppers, onion, salsa and garlic. Mix well.
  • Cover and cool on Low 5-8 hours or until turkey is no longer pink in center and vegetables are crisp-tender.
  • Ladle into bowls. Garnish with cilantro, if desired.
  • Makes 8 servings.

This recipe from New Mexico and a dear friend of the parish when I lived there- you remember the one with the 4 boys-Mathew,Mark,Luke and John. She is a marvelous cook and baker and I learned a lot of secrets from her when I was very young living there ( about 22)....

FIRST:
3 large frozen chicken breasts, boneless and skinless
1/2 c water
1 medium yellow onion, chopped
1 can(s) medium enchilada sauce ( i use mild)
1 oz salsa verde
2 Tbsp liquid smoke flavoring
SECOND:
1/2 c manzanilla olives, sliced in half (large spanish olives)
1 c frozen whole kernel corn
15 oz can black beans,undrained
15 oz can stewed tomatoes,diced
1 tsp cumin (in her recipe but i don't use)
2 Tbsp minced onion
2 tsp garlic powder
THIRD:
1/2 c instant brown rice, uncooked
1/2 c water
1 tsp chicken bouillon granules or 1 cube

Steps:

  • 1. First: Place all ingredients in crock pot. Cook on high for 2 hours.
  • 2. Second: Add these ingredients. Stir and cook 1 hour on high.
  • 3. Third: Cook rice in microwave safe dish and add to crock pot.( In place of the water and bullion you may use 1/2 cup of chicken broth). --- Remove chicken from pot - shred or dice and return to pot. Stir to mix in and cook on low for 1 hour, taste to adjust seasoning if needed. --- Serve with cornbread or tortilla chips and sprinkle top of stew with shredded cheese.

1 medium onion, diced
2 gloves garlic, crushed or diced
1/4 cup olive oil
1 1/2 pounds chorizo or hot Italian sausage
2 large cans sliced mushrooms
1 32oz bottle of medium salsa
2 cans green beans
1 can red kidney beans
Tortilla or corn chips

Steps:

  • In large stock pot, sauté olive oil, garlic and onion over medium high heat approximately 5-7 minutes. Remove sausage from casings and add to pot. Reduce heat to medium. Sautee sausage until thoroughly cooked, about 10 minutes, making sure to stir vigorously to break sausage into small pieces. When sausage is cooked through add all other ingredients. Reduce heat to low and cook until stew is heated. Serve with crumbled tortilla or corn chips, if desired.

This is a common stew served in the Southwest. The literal translation is meat in broth. A good filling meal on a chilly day. It can be served as a meal unto itself or as a side dish.

3 tablespoon(s) olive oil
4 medium anaheim peppers
1 medium white onion
1 teaspoon(s) ground cumin
1 teaspoon(s) chili powder (dark if available)
1 teaspoon(s) smoked paprika
2 medium jalapeno peppers
1 pinch(es) red pepper flakes (optional)
1 small can rotel tomatoes & chili
1 small can hunts tomato sauce
1 teaspoon(s) each salt and black pepper
2 medium russet potatoes
1 can(s) beef stock
- water

Steps:

  • Cut steak into bite sized cubes and set aside. Cut anaheim peppers into thin strips, set aside. Peel and quarter onion and place in food processor Cut jalapenos in half, remove seeds and veins and place pepper pieces in food processor with onion. Pulse food processor just until onion and pepper is coarsely chopped.
  • Place heavy saucepan or skillet over medium high heat. Pour oil into pan and when shimmering, add steak cubes. Brown meat on all sides, stirring frequently with wooden spoon to avoid burning or sticking.
  • Do not drain oil or remove meat; just add the Anaheim and jalapeno pepper and the onion to the meat. Cook for a couple more minutes until onion and peppers are tender (but not brown)
  • Add cumin, chili powder, paprika, red pepper flakes and stir in until blended with meat mixture. (This will just take a few seconds)
  • Add Rotel tomatoes, tomato sauce, salt and pepper, and beef stock. Add enough water to completely cover the meat.
  • Turn heat to low and simmer for 30-45 minutes, stirring frequently. Add water if necessary.
  • Peel and cube potatoes into bite size pieces, add to meat mixture, also add 1 or 2 cups of water so meat and potatoes are completely covered. Continue to simmer another 30 -45 minutes or so until liquid has cooked down and thickened to a stew-like consistency. NOTE: If it is not thickening to suit your taste, throw in a pinch of instant mashed potatoes or cornmeal and stir until well blended and mixture begins to thicken. If it thickens too much for your taste, add a cup of water and stir until well blended into stew mixture.
  • Serve while hot. Store leftovers in fridge. It is actually better the second day.
