EASY SOUTHWESTERN CHICKEN

2 tablespoons ground cumin
2 teaspoons garlic salt
2 teaspoons ground dried chipotle pepper
2 teaspoons paprika
2 (10 ounce) cans diced tomatoes with green chile peppers
1 (15 ounce) can black beans
1 (8 ounce) can whole kernel corn
2 pounds skinless, boneless chicken breast meat - cut into cubes
1 tablespoon olive oil
1 small red onion, diced
1 cup uncooked instant rice
1 cup grated Cheddar cheese

Steps:

  • Combine cumin, salt, dried chipotle pepper, and paprika in a large, resealable plastic bag. Seal bag and shake to mix. Measure 2 teaspoons of the seasoning into a large bowl; add diced tomatoes with green chile peppers, black beans, and corn to the bowl and stir.
  • Put chicken in the bag with the remaining seasoning; shake to coat.
  • Heat olive oil in a large skillet over high heat. Turn seasoned chicken out into the skillet, add red onion, and saute in the hot oil until the chicken is browned, about 5 minutes.
  • Reduce heat to medium-high. Stir tomato mixture with the chicken; bring to a boil, add rice, and stir.
  • Reduce heat to low. Sprinkle Cheddar cheese over the chicken mixture. Place a cover on the skillet and simmer until the rice is tender and the chicken no longer pink in the middle, about 5 minutes. Remove from heat to cool for 5 minutes before serving.

1/2 cup peanut oil
3 tablespoons chili powder
1 tablespoon spanish paprika
2 jalapeno peppers, stemmed and seeded
3 garlic cloves
2 broiler-fryer chickens
4 small fresh sage sprigs
2 tablespoons dried sage
2 teaspoons Mexican oregano
4 garlic cloves, halved and divided
1 tablespoon red wine vinegar
1 tablespoon dried sage
1 tablespoon brown mustard or 1 tablespoon spicy mustard

Steps:

  • Combine first 5 ingredients in electric blender or food processor; cover and process until smooth. Remove giblets and rinse chickens with cold water; pat dry. Place 2 stems of fresh sage, 1 tsp of oregano, and 2 halved garlic cloves in cavity of each chicken.
  • Tie ends of legs together with kitchen string. Lift wingtips up and over back and tuck under bird. Secure chickesn to rotisserie spit over drip pan surrounded by hot coals. Brush birds with oil mixture. Continue brushing every 5 to 7 minutes, while maintaining an even medium heat. After 30 to 40 minutes, carefully insert meat thermometer into meaty interior portion of a thigh on each chicken.
  • Chickens are done when temperature reaches 180 degrees. Once done, remove chicken to warmed platter. Untie birds and remove sage and garlic from chicken cavities; reserving garlic cloves. Remove chicken to a serving platter; set aside and keep warm.
  • Skim fat from pan drippings. Combine drippings with vinegar, sage, reserved garlic cloves, and mustard in electric blender or food processor; blend until smooth. Accompany chicken with sauce.

2 cups frozen corn, thawed
1 cup chopped roasted sweet red peppers
1 cup chopped red or sweet onion
1 cup minced fresh cilantro
DRESSING:
3 tablespoons lime juice
3 tablespoons olive oil
4 teaspoons honey
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon coarsely ground pepper
SALADS:
Torn mixed salad greens and sliced almonds
PITAS:
Whole wheat pita pocket halves and lettuce leaves
WRAPS:
Whole wheat tortillas and sliced ripe avocado

nonstick cooking spray
1 (3 pound) cooked rotisserie chicken, meat removed from bones and chopped
1 ½ cups uncooked white rice
1 (19 ounce) can black beans, rinsed and drained
1 (12 ounce) can whole kernel corn, drained
2 ¾ cups tomato sauce
2 cups chicken broth
1 cup sour cream
1 tablespoon chili powder
1 teaspoon salt
½ teaspoon ground cumin
½ teaspoon ground ancho chile pepper
½ teaspoon ground white pepper
½ cup chicken broth
1 ½ cups grated aged Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spray a 4-quart casserole dish with nonstick spray. Add chicken, uncooked rice, black beans, and corn and stir until combined. Set aside.
  • Mix tomato sauce, 2 cups chicken broth, sour cream, chili powder, salt, cumin, ancho chile pepper, and white pepper together in a large bowl. Pour into the casserole dish and mix well; contents should be fairly soupy. Cover with foil.
  • Bake in the preheated oven for 40 minutes. Remove from the oven, uncover, and stir.
  • Add the remaining 1/2 cup chicken broth if the casserole is too dry or beginning to stick. Cover again and return to the oven until rice is soft, about 40 more minutes.
  • Remove foil, stir contents, and sprinkle with grated Cheddar cheese. Return to the oven until cheese is melted, about 5 minutes.

3/4 cup reduced-fat sour cream
2 to 3 tablespoons chopped pickled jalapenos
2 tablespoons fresh lime juice
Coarse salt and ground pepper
4 sandwich wraps (10 inches each)
3 cups baby spinach
3 cups shredded cooked chicken or turkey
1 can (15 ounces) drained and rinsed black beans
1 large tomato, thinly sliced
1 small red onion, thinly sliced
1 avocado, thinly sliced

Steps:

  • In a bowl, whisk together sour cream, jalapenos, and lime juice; season with salt and pepper.
  • Spread sandwich wraps with sour-cream sauce, leaving a 2-inch border. In center of wraps, layer equal amounts of baby spinach, shredded chicken, black beans, tomato, onion, and avocado. For each wrap, fold two sides of wrap over filling, then roll tightly, ending seam side down.
