2 pork tenderloins (1 pound each)
2 tablespoons canola oil
1 envelope taco seasoning
3 medium limes, cut into wedges

Steps:

  • Preheat oven to 425°. Rub tenderloins with oil; sprinkle with taco seasoning. Place on a rack in a shallow roasting pan., Roast 25-30 minutes or until a thermometer reads 145°. Remove tenderloins from oven; tent with foil. Let stand 10 minutes before slicing. Squeeze lime wedges over pork.

This pork tenderloin recipe is a wonderful treat and is great when served with rice, beans and tortillas. I highly recommend using the New Mexico Green Chiles, if you happen to have them in your area. If not, you can substitute jalapenos. If you find them frozen or in the can, they are precooked so no need to do anything but put them in the crock pot. If you happen to use fresh chiles or jalapenos, you will need to cook them first.

1 pork tenderloin
1 medium onion, chopped
1 -2 cup of new mexico green chili peppers or 1 -2 cup jalapeno, diced
2 -3 garlic cloves, minced
1 -2 teaspoon cayenne pepper (optional)
1 1/2-2 cups water

Steps:

  • Place the pork tenderloin in the crock pot.
  • Place the remaining ingredients on top of the pork tenderloin.
  • Cook on low for approximately 8 hours.
  • If the water is low before the cooking time is up, add 1/2 cup of water at a time.
  • If there is water left over after cooking, drain the water.
  • Shred with fork, then serve with tortillas or use as taco/burrito filling.

1 medium sweet red pepper, chopped
2 teaspoons olive oil
2 garlic cloves, minced
2 cups fresh baby spinach, coarsely chopped
1 tablespoon minced chipotle pepper in adobo sauce
1 teaspoon ground cumin
2 pork tenderloins (1 pound each)
1 teaspoon salt
1/2 teaspoon pepper
2 cups shredded Mexican cheese blend
Hot cooked rice and salsa

Steps:

  • Saute red pepper in oil in a large skillet until tender. Add garlic and cook 1 minute longer. Add the spinach, chipotle pepper and cumin; cook until spinach is wilted., Make a lengthwise slit down center of each tenderloin to within 1/2 in. of bottom. Open tenderloins so they lie flat; cover with plastic wrap. Flatten to 1/4-in. thickness; remove plastic., Sprinkle salt and pepper over pork; top with spinach mixture and cheese., Close tenderloins; tie with kitchen string and secure ends with toothpicks. Place tenderloins in a shallow baking pan., Bake, uncovered, at 425° for 20-25 minutes or until a thermometer inserted in pork reads 145°. Let stand for 5 minutes before slicing. Discard string and toothpicks. Serve with rice and salsa.

This rub has a little "heat" to it. Use the full amount of chili powder if you like it hot. I serve it with black beans and rice (#90165) and warm cornbread to round out the meal.

1 (1 lb) pork tenderloin
1 1/2 teaspoons salt
1 1/2 teaspoons sugar
1 1/2 teaspoons ground cumin
1 tablespoon paprika
1 1/2 teaspoons brown sugar
1/2-1 1/2 teaspoon chili powder
1 1/2 teaspoons black pepper

Steps:

  • Trim fat and remove silver skin from tenderloin.
  • In a small bowl, mix the dry ingredients together.
  • Heat oven to 425 degrees F. Rub about 2 T. of seasoning into meat. Place in shallow pan and roast for 30-35 minutes, until internal temperature reaches 160 degrees F.
  • Remove pork from oven and let rest 5 minutes before slicing.
