I got this recipe from an issue of Vegetarian Times. It's a yummy lunch treat or snack that's made faster when broiled in a toaster oven. I think it gets enough kick with mild salsa but use whatever you prefer. Kid-friendly yet healthy.

4 whole grain bagels, split
1 (4 ounce) can chopped mild green chilies
1/2 cup fat free cream cheese
1/2 cup pizza sauce
1/4 cup mild salsa
1 cup shredded mozzarella cheese (low-fat is okay) or 1 cup monterey jack cheese (low-fat is okay)

Steps:

  • Preheat broiler.
  • Place bagels, cut side up on a broiler pan covered with foil.
  • In small bowl, combine chiles and cream cheese; spread over bagels.
  • In another small bowl, combine pizza sauce and salsa; spoon over bagels.
  • Top each with shredded cheese.
  • Broil 2-3 minutes until cheese melts.
  • Serve immediately.

1 tube (13.8 ounces) refrigerated pizza crust
1/2 pound boneless skinless chicken breasts, cut into strips
2 tablespoons olive oil
1/2 cup sliced onion
1/2 cup julienned green pepper
3 garlic cloves, minced
1 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup salsa
2 cups shredded Mexican cheese blend

Steps:

  • Unroll crust into a greased 15x10x1-in. baking pan; flatten dough and build up edges slightly. Bake at 400° until lightly browned, 8-10 minutes., Meanwhile, in a large skillet, saute chicken in oil until lightly browned. Add the onion, green pepper, garlic, chili powder, salt and pepper. Cook and stir until vegetables are tender and chicken is no longer pink. , Spread salsa over crust. Top with 1 cup cheese, chicken mixture and remaining cheese. Bake at 400° until cheese is bubbly and golden brown, 10-15 minutes.

1 refrigerator pizza crust dough
8 oz cream cheese, softened
1 clove garlic, minced
1/4 c minced fresh cilantro or parsley, divided
3 plum tomatoes, seeded & chopped
1/4 c coarsely chopped green bell pepper
2 Tbsp chopped red onion
salt & ground black pepper to taste
1 ripe avocado, peeled, pitted & sliced

Steps:

  • 1. Preheat oven to 350. Unroll pizza crust dough onto a greased 14-inch pizza pan. Pat out dough to edges. Bake 12-15 minutes or until golden brown. Remove from oven; cool completely.
  • 2. In a medium bowl combine cream cheese, garlic, and 2 Tbsp. of the cilantro (or parsley); mix well. Spread mixture evenly onto crust.
  • 3. In a medium bowl, combine the remaining 2 Tbsp. cilantro (or parsley), tomatoes, bell pepper and onion. Season with salt and pepper. Spoon tomato salsa over cream cheese mixture; top with avocado slices. Cut into wedges and serve.

There are two kinds of meat in this satisfying meat-lovers pizza topped with lots of cheese. The sauce is made up of salsa and the barbecue sauce from the pork, which results in a great smoky-salsa flavor.

1 tube (13.8 ounces) refrigerated pizza crust
1/2 pound ground beef
1 cup salsa
1/2 cup refrigerated fully cooked barbecued shredded pork
1/2 cup chopped red onion
1 can (2-1/4 ounces) sliced ripe olives, drained
1-3/4 cups shredded Monterey Jack cheese

Steps:

  • Unroll crust onto a lightly greased 12-in. pizza pan; flatten dough and build up edges slightly. Bake at 400° for 6-7 minutes or until golden brown. , Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in salsa and pork. Spread over crust. Sprinkle with onion, olives and cheese. Bake 6-8 minutes longer or until cheese is melted.

The sausage gravy sauce is the perfect canvas for this yummy breakfast pizza. I love all the traditional breakfast favorites piled high with a hint of heat from the jalapenos. The creamy avocado sauce on top really made this dish shine. I could eat this day or night!

3 thin & cripsy personal pizza crust
1 c sausage gravy
1/2 c bell pepper & onion diced
2 jalapeño (seeded &diced)
2 eggs (scrambled)
1 c cheddar cheese, shredded
1 c crumbled sausage (cooked)
AVOCADO CREAM SAUCE
1 avocado
1/4 c salsa verde
1/4 c sour cream

Steps:

  • 1. Preheat the oven to 425 degrees. Place pizza crust on an ungreased baking sheet. AVOCADO CREAM SAUCE: In a blender blend the avocado, 1/2 of the diced jalapeno, salsa verde, and sour cream. Set to the side.
  • 2. On each pizza, layer with the sausage gravy, crumbled sausage and scrambled egg.
  • 3. Take the bell pepper, onion and the rest of the diced jalapeno and sprinkle over each pizza. Top each pizza with cheese.
  • 4. Place the pizzas in the oven and baked for 10 to 15 minutes (until the cheese is melted and bubbly).
  • 5. Top pizzas with the avocado cream sauce (as much or as little as you like) and serve.
