This is a recipe I came up with while trying to figure out what to do with stuff I had on hand. It was so good my husband asked me to publish it and share it with the world. Southwestern food is my specialty. It is especially good with the Fabulous French Loaves recipe on this site.

¼ cup finely chopped fresh cilantro
1 clove garlic, minced
¼ jalapeno chile pepper, seeded and minced
2 tablespoons finely grated fresh lime zest
1 ½ teaspoons salt
½ teaspoon onion powder
¼ teaspoon ground black pepper
¼ teaspoon chipotle chile powder
1 tablespoon olive oil
1 pound chicken breast tenderloins or strips
1 medium tomato, chopped
1 small sweet onion, finely chopped
2 tablespoons finely chopped fresh cilantro
½ jalapeno chile pepper, seeded and minced
1 clove garlic, finely chopped
¼ teaspoon ground black pepper
¼ teaspoon sea salt
⅛ teaspoon chipotle chile powder
1 tablespoon fresh lime juice
1 sweet onion cut into 1/2-inch slices
1 red bell pepper, quartered
1 tablespoon olive oil
¼ teaspoon salt
½ teaspoon minced garlic
½ cup mayonnaise
2 tablespoons fresh lime juice
16 thick slices French bread
2 mangos - peeled, seeded, and sliced
8 slices Monterey Jack cheese

Steps:

  • For the marinade: Place 1/4 cup cilantro, 1 clove minced garlic, 1/4 jalapeno, lime zest, 1 1/2 teaspoons salt, onion powder, 1/4 teaspoon black pepper, 1/4 teaspoon chipotle chile powder, and 1 tablespoon olive oil in a small bowl and stir until well combined. Place the chicken breast tenderloins in a large resealable plastic bag. Pour the marinade into the bag with the chicken, seal, and shake the bag to coat. Refrigerate for 1 hour.
  • For the salsa: Combine the tomato, 1 small onion, 2 tablespoons cilantro, 1/2 jalapeno, 1 clove garlic, 1/4 teaspoon black pepper, sea salt, 1/8 teaspoon chipotle pepper, and 1 tablespoon lime juice in a bowl. Cover with plastic wrap and refrigerate.
  • To prepare the grilled vegetables, toss the onions and red peppers with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1 clove garlic in a bowl; set aside.
  • For the lime mayonnaise: Whisk together the mayonnaise and 2 tablespoons of lime juice; cover with plastic wrap and refrigerate.
  • Preheat an outdoor grill for medium-high heat.
  • Grill the marinated chicken on the prepared grill until no longer pink in the center and juices run clear, 8 to 10 minutes. Grill the red pepper and onions until tender and golden brown, 8 to 10 minutes. Remove the chicken and vegetables from the grill. Slice the grilled pepper into thin strips.
  • Spread each slice of bread with 1 1/2 teaspoons of prepared lime mayonnaise. Layer half of the pieces of bread with sliced mango, 1 tablespoon prepared salsa, grilled chicken tenderloins, grilled peppers, grilled onions, and a slice of Monterey Jack cheese. Top off the sandwiches with the remaining slices of bread. Return the sandwiches to the grill, turning when the bottom is golden brown
  • Return the sandwiches to the grill and grill them until the bread is toasted and the cheese melts, about 2 minutes per side.

1 garlic clove, minced

Steps:

  • In a large resealable plastic bag, combine the first six ingredients; add chicken. Seal bag and turn to coat; refrigerate for up to 1 hour., Drain chicken, discarding marinade in bag. Grill chicken, covered, over medium heat for 4-7 minutes on each side or until juices run clear.

This is a very easy recipe that produces spectacular results. The citrus juice tenderizes and the lemon flavor, combined with the mesquite is to die for. This works with any cut of chicken--breasts to wings. Prep time does not include time to marinate.

3 lbs chicken
1 cup lemon juice
1 cup olive oil
2 tablespoons black pepper (coarse ground)
1 tablespoon salt

Steps:

  • Wash and pat dry chicken pieces, and place in plastic bag.
  • Pour lemon juice and olive oil over chicken, seal, and marinate for 3 hours in the refrigerator.
  • Remove from bag, discard marinate, and sprinkle liberal amounts of coarse ground black pepper and salt.
  • Cook chicken on grill, using indirect heating method, or a smoker using charcoal briquettes and mesquite chunks. Whole chicken breasts will take about an hour (in a Webber). Smaller pieces will take less time.
  • When done, serve immediately.

This is a lovely, light & flavorful dinner! The chicken has the yummy cilantro and lime flavors from the marinade. They're subtle, definitely not overpowering. The corn salad does have some heat, but it pairs very well with the chicken. If you're able to get your hands on fresh corn, it's definitely worth using.

4 large bonless skinless chicken breast
4 medium limes (zest and juice for marinde) juice 1 lime for dressing, juice 1 lime for finishing dish
1 c chopped fresh cilantro
1 Tbsp Mrs. Dash Southwest Chipotle spices
1 pkg large yellow rice mix (I use Vrgo but any yellow rice mix will do)
1 can(s) black beans washed and drained
2 medium ears fresh corn (grilled on grill) you may use canned mexican corn if you do not have fresh
1 clove garlic minced
2 medium fresh tomatoes coarsely chopped (if you do not have fresh tomatoes use 1 drained can of Rotel)
1 c red onion finely chopped
1 tsp adobe sauce from chilpote peppers
3 medium fresh avocados sliced
1 pinch sea salt
1/4 c extra virgin olive oil
1 Tbsp fresh ground black pepper
4 Tbsp olive oil with paper towel for grill

Steps:

  • 1. Begin marinade for chicken by adding chopped cilantro to zest and juice of 2 limes mix well. In a casserole dish place 4 chicken breasts and sprinkle 1 tablespoon Mrs. Dash Southwest Chipotle spices evenly on all 4, followed by cilantro lime marinade. Cover with plastic wrap and refrigerate for at least 30 minutes.
  • 2. Yellow rice salad begins with preparing yellow rice as directed on package. When rice is done remove to a large bowl fluff. Cover with plastic wrap and refrigerate until you are ready to mix salad.
  • 3. Start fire in grill (I use charcoal but you could use gas just make sure you have nice high heat to start) you could also do this inside on a grill pan if you have no outside grill! I like to get my fire really hot all coals burning then take a paper towel with olive oil and rub grill to make sure chicken does not stick. When coals are ready medium to high heat place corn on fire grill about 6-8 minutes then remove from grill to cool. Remove chicken from marinade and place on grill. Grill 4 minutes on each side then turn and grill again to get grill marks criss crossed. Total 8 minutes on each side. Watch fire if it flames spray with water to get rid of flames. When grilling is done remove to side of grill with low heat. Then leave there to finish cooking about 10-15 minutes.
  • 4. While chicken is on low heat begin salad. Cut corn from cob and place in large bowl of yellow rice. Add black beans, garlic, fresh tomatoes, and red onion toss well set aside while making dressing.
  • 5. In food processor add adobe sauce, 1 sliced avocado, juice of 1 lime, sea salt, pulse 3-4 times until smooth and creamy then slowly add extra virgin olive oil while processor is running until incorporated. Remove from processor bowl and add to salad. Toss well and return to refrigerator for at least 15 minutes.
  • 6. Plating start with 2-3 serving spoons of yellow rice salad topped with chicken breast that have been sliced on the diagonal top with 4 slices of fresh avocado sprinkle with ground black pepper and a squeeze of fresh lime.

2/3 cup chopped red onion
1/4 cup chopped fresh cilantro
3 tablespoons lime juice
1 tablespoon olive or vegetable oil
1 medium avocado, pitted, peeled and cut into bite-size pieces
1 clove garlic, finely chopped
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 teaspoon chili powder
1/2 teaspoon paprika
1 cut-up whole chicken (3 to 3 1/2 lb)

Steps:

  • In medium nonmetal bowl, mix relish ingredients. Cover; refrigerate at least 1 hour to blend flavors.
  • Mix chili powder and paprika; sprinkle over chicken.
  • Heat gas or charcoal grill. Place chicken, skin sides up, on grill rack over medium heat. Cover grill; cook 15 minutes. Turn chicken. Cover grill; cook 20 to 40 minutes longer, turning occasionally, until juice of chicken is clear when thickest piece is cut to bone (170°F for breasts; 180°F for thighs and drumsticks). Serve with relish.

1/2 cup butter, melted
1/2 cup fresh lemon juice
1 tablespoon paprika
1 tablespoon dried oregano
1 tablespoon fresh cilantro, chopped
1 teaspoon garlic salt
1 teaspoon cumin
2 1/2 pounds chicken quarters
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Add lemon juice to a small bowl. Whisk in spices until combined, whisk in melted butter. Reserve 1/2 cup for basting. Place washed chicken in a large resealable bag and pour marinade over, gently massage to combine chicken with flavors. Seal, place in pan and chill for 8 hours. Preheat grill to 350 to 400°F (medium high heat). Remove chicken from marinade, discard marinade. Grill covered with grill lid, 45 to 60 minutes or until chicken reaches 145°, basting often with reserved butter mixture. Note: you will need to re-heat the mixture before basting.

One of my favorite salads for entertaining with family & friends at the lake. Even though it's healthy, everyone loves it! Serve it tossed in a bowl or layered on a platter! Choice of two dressings will spice it up to your liking!

1 pkg romaine lettuce head (3 from the package)
3-4 chicken breasts, boneless and skinless
1 can(s) black beans, drained and rinsed well
1/2-3/4 c frozen corn, thawed
1/2-3/4 c pitted black olives, sliced
1 large pepper, red or orange
1-2 avocados (optional)
SIMPLE 2 INGREDIENT DRESSING
1 c mayonnaise
1/2 c salsa, chunky
DRESSING INGREDIENTS
1 c ranch dressing
2-3 tsp taco seasoning mix or other tex-mex/sw seasoning
1 jalapeno peppers, seeded & finely chopped
1 Tbsp lime juice

Steps:

  • 1. For the Dressing: I love both of these dressings with this salad & couldn't decide which one to post - you decide which one to make. Combine ingredients with a whisk until blended & refrigerate until serving.
  • 2. For the Chicken: Brush chicken with canola/olive oil. Season with salt & pepper, sprinkle with SW seasoning or taco seasoning. Grill for 4-5 minutes on each side or until thermometer reads 165 degrees. Remove from grill to cutting board & slice or chop depending on serving style (bowl or platter)
  • 3. For the Salad Prep: Twist off core on the Romaine heads. Rinse leaves and spin dry with a Salad Spinner & tear or cut into pieces.(can also use packaged torn Romaine) Slice olives & dice bell pepper. Remove pit from avocado. Slice or dice for serving.
  • 4. Serving the salad: Bowl or Platter In a large serving BOWL, combine all salad ingredients & pour dressing over to coat or serve the dressing on the side. PLATTER: Layer the avocado, beans, corn, chicken, bell pepper, avocado over the chopped Romaine. Serve the dressing on the side.

1/3 cup(s) red wine vinegar
2 tablespoon(s) dijon mustard
1 tablespoon(s) salt
2 tablespoon(s) sugar
1 1/2 teaspoon(s) black pepper fresh ground
3/4 teaspoon(s) dried tarragon crumbled
1/2 teaspoon(s) hot pepper flakes (to taste)
2 pound(s) chicken parts

Steps:

  • Breasts (halved if whole) and the legs cut into drumsticks and thigh sections.
  • In a large bowl, whisk together the oil, vinegar, mustard, salt, sugar, black pepper, tarragon, and red pepper flakes.
  • Add the chicken and turn it to coat with the marinade.
  • Let the chicken marinate, covered and chilled, overnight.
  • Drain it and discard the marinade.
  • Grill the chicken on an oiled rack set 5 to 6 inches over glowing coals, turning it, for 15 to 20 minutes, or until it is cooked through.
