4 Hass avocadoes, halved
2 tablespoons lemon juice
2 tablespoons extra virgin olive oil
8 ounces gold & white corn, strained
1/2 tablespoon ground cumin
8 ounces black beans, strained
1/2 tablespoon chili powder
1 medium tomatoes, diced
1 tablespoon cilantro, chopped fine
1/2 medium white onion, diced
salt & pepper
corn chips, to serve with

Steps:

  • Heat grill to medium-high heat. Remove pits from avocados and brush first with lemon juice, then extra virgin olive oil.
  • Place avocados skin side down on grill for 2 minutes, turn and grill for 2 more minutes.
  • With a spatula, carefully remove avocados from grill and spoon salsa into seed pits.

A fresh, healthy flavorful salad. Chicken marinated in a smoky adobo flavored marinade gives it more than just a "taco" flavor. Grilling the corn and jalapenos adds extra smoky flavor to this dish.

2 large chicken breasts
1/2 medium onion, diced
2 cloves garlic, cracked
1/3 cup olive oil
1/2 teaspoon dried oregano
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1 juice of 1 lime (about 2 Tablespoons)
1 Chipotle pepper in Adobo, diced
1/2 teaspoon Adobo sauce (or more to taste)
1/2 cup fresh cilantro, loosely packed
2 heads romaine lettuce, chopped
1 cup black beans, rinsed and drained
3 ears fresh corn on the cob, grilled and kernels removed
2 fresh jalapenos, grilled ((seeded, deveined and sliced))
1 large tomato, diced
1 avocado, sliced
1/2 cup fresh cilantro for topping

Steps:

  • In a food processor or blender add the onion, garlic, oregano, cumin, chipotle pepper, adobo sauce, smoked paprika, lime juice, fresh cilantro, salt, and pepper. Pulse a few times to liquefy. Pound chicken breasts to an even thickness. Place the chicken in a large zip-top plastic bag, pour the marinade over the chicken and massage a few times to distribute the marinade evenly over the chicken. Refrigerate for at least 8 hours to overnight.
  • Remove the chicken from the refrigerator and allow to sit at room temperature for 15-30 minutes before grilling. Preheat the grill to 400ºF.Grill the chicken without turning for 5-7 minutes per side (this will depend on the thickness of your chicken breasts), or until a thermometer reads 165ºF degrees in the thickest part. Remove from the grill and let rest for at least 10 minutes before slicing.Grill the corn and jalapenos for 15-20 minutes, turning frequently, until lightly charred.
  • Place the chopped lettuce on the bottom of a large platter or salad bowl. Top with the black beans, grilled corn, grilled jalapenos, tomatoes, avocado, cilantro, and sliced grilled chicken.
  • Serve with our Fire Roasted Salsa or our Creamy Jalapeno Cilantro Dip.

1 tablespoon olive oil
1 tablespoon lime juice
2 large ripe avocados, halved, seeded and peeled
1/4 teaspoon kosher salt or 1/8 teaspoon salt
1/4 cup bottled picante sauce
1/4 cup monterey jack cheese
snipped fresh cilantro
salad greens (optional)
bottled picante sauce (optional)
sour cream (optional)

Steps:

  • Stir together olive oil and lime juice. Brush avocados all over with olive oil mixture. Sprinkle cut sides of avocados with salt.
  • For charcoal grill, grill avocado halves, cut side down, on the rack of an uncovered grill directly over medium coals for 5 minutes or until browned. Turn avocado halves, cut side up. Fill centers of avocado halves with the 1/4 cup picante sauce and shredded cheese. Cover grill and grill about 5 minutes more or until cheese begins to melt. (For a gas grill, preheat grill. Reduce heat to medium. Place avocado halves on grill rack over heat. Cover and grill as above).
  • Remove avocados from grill. Sprinkle tops of avocado halves with snipped cilantro. If desired, serve on a bed of salad greens with additional picate sauce and sour cream.

Great American Southwest Sliders with Prickly Pear and Grilled Avocado Salsa image

1 small red onion
2 ripe avocados
2 tablespoons tender cactus, diced (see note)
1 tablespoon chopped cilantro leaves
1/2 teaspoon ground cumin
1/2 teaspoon chipotle pepper sauce (recommended: Tabasco)
1 clove garlic, minced
1 fresh Roma tomato, seeded and diced
1 lime, juiced
Kosher salt and freshly ground black pepper
2 pounds 80 percent fresh ground chuck
5 ounces finely ground fresh Mexican chorizo
1/2 cup crushed tortilla chips
2 teaspoons salt
2/3 teaspoon freshly ground black pepper
Oil, for grill rack
12 ounces aged Monterey jack cheese, sliced
18 fresh bakery yeast rolls, about 2 1/2-inches square, cut in 1/2 horizontally
1 cup crema Mexicana, for garnish
Chipotle pepper sauce
6 ripe prickly pears, hollowed, for garnish
Fried tortilla strips, for garnish

Steps:

  • Heat an oiled grill to 400 degrees F or heat an oiled grill pan.
  • For the salsa: Slice the red onion into thick slices, about 1/2-inch thick. Cut avocado in half and remove the pits. Grill the onion and avocado halves on an oiled grill until slightly charred. Remove the onion to a cutting board and dice. Scoop avocado flesh into a bowl and add 1/2 cup of diced grilled red onion. Stir in the diced cactus, cilantro, cumin and chipotle pepper sauce. Mash the mixture and mix well. Add the garlic, tomato and lime juice and combine well. Season with kosher salt and pepper, to taste. Press plastic wrap onto the surface of the salsa and cover and refrigerate until ready to use.
  • For the sliders: In a large bowl, combine the beef, chorizo, tortilla chips, 2 teaspoons salt and 3/4 teaspoon pepper and mix gently. Form into 18 golf ball-size rounds, then flatten and shape into a size to fit the buns.
  • Oil the grill and put the burgers on the grill. Tent the burgers with foil or a hotel pan and squirt with water to create steam. Grill the burgers until desired doneness, about 3 minutes per side for medium. After turning, divide the slices of Monterey jack among the burgers. Put the rolls on the grill and close the lid until the cheese is melted and the rolls are toasted.
  • For the crema: In a small bowl, whisk together the crema and chipotle hot sauce, to taste.
  • Put the burgers on the roll bottoms and top with salsa and crema. Cover with the roll tops. Stuff the prickly pears with tortilla strips and serve alongside the sliders.
