Zucchini Casserole With Tomato Sauce and Bacon Recipe image

This zucchini casserole is finished with buttered cracker crumb and Parmesan cheese topping. The zucchini is baked with tomato sauce and bacon.

Butter, for greasing
6 slices bacon, diced
1 large yellow onion , chopped
4 to 5 cups zucchini, sliced
1(8-ounce) can tomato sauce
3/4 teaspoon kosher salt or to taste
1/4 teaspoon freshly ground black pepper
15 butter crackers, crushed
2 tablespoon unsalted butter, melted
1/2 cup grated Parmesan cheese

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Butter a 2-quart casserole.
  • In a large skillet over medium heat, fry the diced bacon until just cooked, but not crisp. Remove all but 2 tablespoons of drippings.
  • Add onion to the skillet and cook until it is softened. Stir the zucchini and tomato sauce into the skillet and season with about 3/4 teaspoon of kosher salt, or to taste, and the freshly ground black pepper.
  • Turn the zucchini mixture into the prepared 2-quart casserole
  • In a bowl, toss the crushed crackers with the melted butter.
  • Sprinkle the buttered cracker crumbs and Parmesan cheese over the casserole.
  • Bake the casserole in the pre-heated oven for about 30 minutes until hot and bubbly.
  • Serve and enjoy!

2 tablespoons olive oil
1 small onion, chopped
1 clove garlic, minced
2 small zucchini, cubed
1 teaspoon tomato paste
1 beefsteak tomato, cubed
1 teaspoon herbes de Provence, or more to taste
salt and freshly ground black pepper to taste
1 pinch white sugar
1 tablespoon chopped fresh basil leaves, or to taste

Steps:

  • Heat olive oil in a large skillet and cook onion until soft and translucent, about 5 minutes. Add garlic and cook for 30 seconds. Add zucchini and cook until softened, about 3 minutes. Stir in tomato paste and tomato. Season with herbes de provence, salt, black pepper, and sugar. Stir in basil and serve.

1/2 onion
32 ounces chopped tomatoes
1 teaspoon salt

  • In a pan fry onion about 5 minutes till clear. Add bacon and fry another 5 minutes.
  • Add rest of ingredients and then cover and simmer about 30 minutes to 1 hour.

8 small zucchini, cut into 1/2 inch slices
½ red onion, thinly sliced
1 pinch salt
2 medium tomatoes, cut into wedges
⅛ teaspoon dried basil
ground black pepper to taste
¼ cup crumbled blue cheese

Steps:

  • Place bacon in a large skillet. Cook over medium-high heat until evenly brown. Crumble, and return to pan. Add zucchini, onion, and salt to the bacon; cook, stirring frequently, until zucchini is tender-crisp. Add tomato wedges, basil, and ground black pepper; heat, stirring gently, until tomatoes are warm.
  • Using a slotted spoon, transfer vegetable mixture to a serving bowl. Top with crumbled blue cheese.
