CLASSIC SOUTHERN MACARONI AND CHEESE



Classic Southern Macaroni and Cheese image

1 tablespoon unsalted butter
Coarse salt and freshly ground black pepper
2 cups elbow macaroni
8 ounces grated extra-sharp Cheddar (about 2 cups)
2 cups milk
2 large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch ovenproof casserole dish.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until tender (a little more than al dente), about 12 minutes. Drain well in a colander.
  • In a large bowl, combine the macaroni, cheese, milk and eggs. Add some salt and pepper. Transfer to the prepared dish.
  • Bake until golden brown and bubbly, about 30 minutes. Transfer to a rack to cool slightly before serving.

1 pound elbow macaroni
5 large eggs
3 1/2 cups heavy cream
2 1/2 teaspoons Cajun seasoning
1/2 teaspoon ground mustard
1/4 teaspoon ground nutmeg
1 pound sharp Cheddar, shredded
1 pound whole-milk mozzarella, shredded
1 pound Gouda, shredded

Steps:

  • Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil.
  • Cook the macaroni according to the package directions until 3 minutes less than fully cooked. Drain and rinse under cold water until cooled; drain well. Add the cooked pasta back to the pot.
  • Put the eggs, heavy cream, Cajun seasoning, ground mustard, nutmeg and a big pinch of salt in a medium bowl and whisk to combine. Pour over the cooked pasta and stir to combine.
  • Toss together the Cheddar, mozzarella and Gouda in a large bowl. Add the cheeses to the pot and stir to evenly combine. Transfer the mixture to a 9-by-13-inch baking dish.
  • Bake until the center of the mac and cheese is set and the top is golden brown, 60 to 70 minutes. Let cool about 10 minutes before serving.

16 ounces uncooked large elbow macaroni, large shells, or cavatappi pasta
6 tablespoons salted butter
⅓ cup grated yellow onion
2 teaspoons dry mustard
1 teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon freshly grated nutmeg
⅛ teaspoon cayenne pepper
6 tablespoons all-purpose flour
3 ½ cups milk
1 ¾ cups heavy cream
2 teaspoons Worcestershire sauce
4 ounces extra-sharp yellow Cheddar cheese, shredded (about 1 cup), plus 4 oz. diced (about 1 cup), divided
4 ounces sharp white Cheddar cheese, shredded, (about 1 cup), plus 4 oz. diced (about 1 cup), divided

Steps:

  • Preheat oven to 350°F. Prepare pasta according to package directions for al dente.
  • Melt butter in a large saucepan over medium. Add next 6 ingredients; cook, stirring, 30 seconds. Add flour, and cook, stirring, until golden, 2 minutes. Gradually whisk in milk and cream. Bring to a boil, whisking occasionally. Reduce heat to medium-low; simmer, whisking, until slightly thickened, 5 minutes. Stir in Worcestershire sauce. Remove from heat; stir in 3/4 cup each of shredded Cheddar cheeses until melted. (Reserve remaining 1/4 cup each of shredded cheeses.) Stir in pasta and diced cheeses; pour into a lightly greased 13- x 9-inch (3-quart) baking dish.
  • Bake on a rimmed baking sheet in preheated oven until bubbly and golden, 30 minutes. Remove from oven; increase oven temperature to broil. Sprinkle with reserved shredded cheeses; broil 6 inches from heat until cheeses are melted and golden, about 2 minutes. Remove from oven; cool slightly on a wire rack, about 15 minutes.

SIMPLE SOUTHERN STYLE MAC N CHEESE



Simple Southern Style Mac n Cheese image

The smaller you cut the cheese the faster they will melt down in the pot. After stirring the ingredients together for three minutes or so it will become easier as the cheeses will be melting. Take a few breaks in between stirring if needed but do not let mixture burn.

1-16oz box elbow macaroni
1 can(s) evaporated milk
3 Tbsp butter
1 lb extra sharp cheddar cheese
1-8 oz pkg sharp cheddar cheese
1-8oz pkg monterey jack cheese
A few dash(es) seasoning salt
A few dash(es) black pepper
1 pinch salt

Steps:

  • 1. Bring pot of water to a boil and add a dash of salt. Cook elbow noodles until they are tender (12-15 min)or follow directions on package. Drain noodles.
  • 2. In the mean time chop the three different cheese(extra sharp, sharp, & Monterey Jack) into small cubes. You are welcome to shred the cheese. Set aside.
  • 3. Once the noodles are cooked and drained return them back into the pot. Turn burner on low, Now you will combine the rest of the ingredients. Pour one can of evaporated milk into pot with the noodles. A few dashes of seasoning salt. A few dashes of black pepper. Add the cheese into the pot. As well as the 3 Tbs of butter. Stirring until the ingredients are melted together. Careful not to let anything burn. This may take 5-10 minutes.
  • 4. Once mixture has melted down and ingredients are well mixed together; pour mixture into an oven safe pan. Preheat oven to 350. And bake for 30 minutes. Let cool for five minutes before serving.

400g sweet potatoes (1 large or 2 small)
1½ tbsp olive oil
¼ tsp ground cayenne
35g butter
50g plain flour
600ml whole milk
3 tsp American mustard (or 2 tsp English mustard)
generous grating nutmeg
135g mature cheddar , grated
225g macaroni

Steps:

  • Heat oven to 200C/180C fan/gas 6. Peel the sweet potatoes and cut into small bite-sized chunks. Toss in a 20cm gratin dish with the olive oil, cayenne and some seasoning. Roast for 25-30 mins, or until golden and soft, tossing occasionally.
  • Meanwhile, melt the butter in a saucepan and add the flour. Stir together to make a roux, and cook for a couple of mins. Remove from the heat, then slowly pour in the milk a little at a time, stirring well after each addition. Put the pan back on the heat and bring to the boil, stirring all the time. Turn the heat down, add the mustard and nutmeg, and season well. Add in most of the cheese (keep some for the top) and continue to stir. Taste for seasoning. Keep on a low heat so it stays warm until the macaroni is ready.
  • Cook the macaroni in boiling, lightly salted water for a couple of minutes less than it says on the packet. Drain (reserve some of the pasta cooking water), then stir the pasta and cooked sweet potato into the cheese sauce. The mixture should be quite thick, but add a little of the pasta cooking water to loosen if necessary. Taste for seasoning.
  • Tip the mixture into the gratin dish, then scatter over the rest of the cheese and return to the oven. Bake for about 20-30 mins, or until the top is golden brown and bubbling.

1 (16 ounce) container sour cream

2 cups shredded sharp Cheddar cheese

This is my grandmother's macaroni and cheese recipe that we all crave and only get to have twice a year, if we play our cards right. Fairly simple and straightforward. The key is cooking time more than anything.

1 pound elbow macaroni
4 pounds Cheddar cheese, sliced
1 ½ cups milk
5 eggs, or more to taste
1 tablespoon yellow mustard
ground black pepper to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 minutes. Drain.
  • Layer some of the macaroni in a 5-quart baking dish; top with a layer of Cheddar cheese. Continue layering macaroni and Cheddar cheese into the dish, ending with a Cheddar cheese layer.
  • Beat milk, eggs, and mustard together in a bowl; pour over macaroni mixture, ensuring milk mixture gets to all of the macaroni.
