These spicy Cajun peanuts are the perfect snack for a game day crowd. It only takes a few minutes and a few simple seasonings to prepare the peanuts.

2 teaspoons vegetable oil
1 1/2 teaspoons chili powder , or Cajun or Creole seasoning blend
1/4 teaspoon ground cayenne pepper
2 cups dry roasted peanuts, lightly salted or unsalted

Steps:

  • Heat the vegetable oil in a skillet over medium heat.
  • Add the Cajun seasoning and cayenne pepper to the oil and cook, stirring, for a few seconds.
  • Add peanuts to skillet and cook for 2 to 3 minutes. stirring constantly. Serve warm or at room temperature.
  • Enjoy.

1 jar (16 ounces) unsalted dry roasted peanuts
2 tablespoons canola oil
2 tablespoons sugar
1-1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder

Steps:

  • Place peanuts in a small bowl; drizzle with oil and toss to coat. Combine sugar and seasonings; sprinkle over nuts and toss to coat., Transfer to an ungreased 15x10x1-in. baking pan. Bake at 300° for 20-25 minutes or until lightly browned, stirring occasionally. , Spread on waxed paper to cool. Store in an airtight container.

ROASTED PEANUTS

Yield approximately 2 pounds roasted peanuts in shell

Number Of Ingredients 3

2 pounds in-shell raw peanuts*
2 tablespoons peanut oil
1 to 2 tablespoons kosher salt

Steps:

  • *Cooks note: If eating peanuts roasted right out of the shell, use Virginia or Valencia peanuts. If utilizing roasted peanuts to make peanut butter, use Spanish peanuts as they have a higher oil content.
  • Preheat the oven to 350 degrees F.
  • Rinse the peanuts under cool water to remove excess dirt. Pat dry and place in a large bowl and toss with the peanut oil and salt until well coated.
  • Place on 2 half sheet pans, making sure to spread them out into a single layer. Roast in the oven for 30 to 35 minutes, rotating the pans halfway through cooking. Once you remove the peanuts from the oven, let them cool slightly before eating. They will continue to "cook" and become crunchy as they cool.
  • If using peanuts to make peanut butter, remove shells and discard. Remove the skin by rubbing the peanuts together in your hands held over a salad spinner, allowing the peanuts and skins to fall into the bowl. Once the skin has been loosened from all of the peanuts close the salad spinner and spin until all of the skin has been separated from the peanuts.

3 tbsp. olive oil, plus more for baking sheet
1 (24-ounce) bag jumbo, raw, natural dry peanuts (not green)
2 tsp. smoked paprika
1 tbsp. kosher salt
1 tsp. freshly ground black pepper
1/2 tsp. ground coriander
1/2 tsp. ground cumin
1/2 tsp. garlic powder

Steps:

  • Preheat oven to 350°F. Lightly grease a large rimmed baking sheet with oil. Rinse and drain peanuts. Whisk together paprika, salt, pepper, coriander, cumin, and garlic powder in a bowl. Add peanuts and oil and toss to coat. Transfer to prepared baking sheet.
  • Bake, stirring once, until fragrant and roasted, 34 to 36 minutes.

SPICY CHIPOTLE PEANUTS



Spicy Chipotle Peanuts image

Vegetable oil, for pan
1 tablespoon egg white
Finely grated zest of 1 lime
2 teaspoons sugar
1 teaspoon chipotle powder
1/4 rounded teaspoon ground coriander
1/4 rounded teaspoon garlic powder
Kosher salt
1 1/2 cups lightly salted dry-roasted peanuts
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil; rub lightly with oil.
  • Put the egg white, lime zest, sugar, chipotle powder, coriander, garlic powder, 1/2 teaspoon salt and 1 tablespoon oil in a medium bowl. Beat with a fork to combine. Add the peanuts and toss to coat.
  • Spread the spiced peanuts on the prepared baking pan in a single layer. Bake until dry and a shade darker, about 15 minutes. Cool completely before adding the cilantro.

3 teaspoons seafood seasoning (such as Old Bay®)
½ teaspoon cayenne pepper
8 ounces raw Spanish peanuts
salt to taste

Steps:

  • Preheat an air fryer to 320 degrees F (160 degrees C).
  • Whisk together olive oil, seafood seasoning, and cayenne pepper together in a large bowl. Add peanuts and stir until peanuts are evenly coated. Transfer peanuts to the air fryer basket.
  • Cook peanuts in the air fryer for 10 minutes. Toss and cook for an additional 10 minutes.
  • Remove the basket from the air fryer and salt peanuts to taste. Toss peanuts one last time and cook 5 additional minutes. Transfer peanuts to a paper towel lined plate and let cool.
