8 fresh peaches - peeled, pitted and sliced into thin wedges
¼ cup white sugar
¼ cup brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice

1 cup all-purpose flour
¼ cup white sugar
¼ cup brown sugar
1 teaspoon baking powder

6 tablespoons unsalted butter, chilled and cut into small pieces
¼ cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
  • Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

Steps:

This is also great vegan with water or apple juice replacing the buttermilk, and margarine instead of butter. You could even serve it with tofrutti ice cream.

4 cups yellow peaches, sliced and pealed (blanch in boiling water for about 30s depending on ripeness and skins should slip off)
1/2 cup white sugar
1 cup brown sugar

2 tablespoons fruit jam, blueberry and blackberry are very nice

My little cousin calls this dish "Peach Cobblet" because when he was younger, he couldn't pronounce "Cobbler." This cobbler is a spin-off of my mother's recipe. The crust is buttery and flaky (I use a butter+shortening mix), it's not too thick and not too thin, and it's a FLAVORED crust, so it boasts a lot more than just butter and flour. The filling is perfect and can be adjusted to your taste. This is a REAL, TRADITIONAL STYLE COBBLER, the way it was meant to be. No biscuit-topping and no lattice-style crust here. Serve warm with premium vanilla bean ice cream or serve with whipped topping, drizzled caramel, and a sprinkle of nutmeg.

  • Combine flour, shortening, and salt, and mix with a pastry cutter. Add just enough cold water to make a crust, and roll out to fit the cobbler.

um...don't let yours overcook like I did the first time, ok? haha! Making a delicious dessert doesn't have to be hard or time consuming. Just come from the kitchen carrying this recipe with flour on your brow and looking as if you've been baking for hours and the family will worship you. Well, the reality is they'll be too busy enjoying this cobbler to notice you, but that's ok. I'm giving you the recipe for peaches, but try apples if you wish! Just think, cinnamon and vanilla flavoring with apple and nutmeg and almond flavoring for peaches. Got it? It's delish! OH!!! If I catch you using canned fruit I will haunt you and make spooky telepathic noises in your kitchen when you're home alone! Enjoy!!

1 1/2-2 cups peaches, peeled and sliced
1 cup flour
1 cup sugar (divided into 1/4 cup and 3/4 cup)
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon nutmeg
1 teaspoon vanilla
1/2 cup butter, melted
1 cup milk

Steps:

  • Preheat oven to 350 degrees.
  • Coat a casserole or corning ware pan with Pam. I actually prefer using Baker's Joy for this one.
  • Pare, core and cut fruit into slices.
  • Put slices in a bowl and sprinkle 1/4 cup of the sugar over the fruit.
  • Let sit for about 5 or 10 minutes,.
  • Combine dry ingredients.
  • Combine wet ingredients and add to dry.
  • Put the fruit into your casserole pan.
  • Cover with the batter.
  • The dough will rise, and cover the peaches while baking.
  • Bake for about 45 minutes. Serve warm with ice cream.

  • combine first three ingredients in saucepan over low heat for 10 minutes until tender and thickened; place in greased baking dish combine flour and salt, cut in crisco with pastry blender, sprinkle 1/4 cup plus 1 Tbsp cold water, stir with fork til moist; shape into a ball; roll out onto pastry board til 1/8 inch thick; cut into 1 inch strips; place 1/2 of strips in a lattice work pattern and bake @350 degrees for 35 minutes; press pastry into the peaches; repeat the process with the rest of the pastry, bake 40 more minutes;

Steps:

  • Mix sugar,flour, milk and melted butter together pour in a 9x13 pan
  • open peaches pour both cans of peaches over top of flour mixture, use all the juice in the first can of peaches and 1/2 of juice in the 2nd can.
  • Bake at 350 degrees for about an hour or until the crest is golden brown. Take out of oven and sprinkle about a tablespoon of sugar on top.

COBBLER:
1/2 cup butter
1 cup sugar
3/4 cup self-rising flour
3/4 cup of milk
FRUIT:
1 (28-ounce) can peaches in heavy syrup or 2 cups of fresh sliced peaches
1 cup sugar
1 cup water
1 tablespoon cinnamon for sprinkling on top

Steps:

  • Preheat oven to 350°F. Put the butter in a 13 x 9 x 2-inch baking dish and place in the oven until the butter melts. Remove from oven and set aside. In a bowl, mix together the flour and sugar and stir in the milk. Batter will have a few lumps but that's okay. Pour the batter on top of the melted butter. If using fresh Georgia peaches, put fresh sliced peaches, sugar and water in a saucepan and bring to a boil, reduce heat and simmer for about 10 minutes. Spoon fruit on top of batter and then slowly pour the liquid on top of that. Be careful not to mix the fruit INTO the batter. Sprinkle with cinnamon. Bake for 35 to 45 minutes. Batter will rise to the top while baking to make an amazing crust! Now you can make your favorite restaurant recipes at home!

1 teaspoon fresly squeezed lemon juice
2 tablespoons water

Steps:

  • Preheat oven to 375 degrees.
  • Combine in a large mixing bowl coconut sugar, cornstarch, cinnamon, and salt.
  • Add peaches, lemon juice, water, and vanilla and toss to combine.
  • Add mixture to a 2-quart casserole dish and place on a baking sheet.
  • Bake peach mixture 15 minutes while preparing biscuit topping.
  • In the meantime, whisk together flour, baking powder, salt, soda, and 2 tablespoons coconut sugar. Using a fork or pastry cutter, cut butter into flour mixture until it resembles fine crumbs.
  • Make a well in the center of the flour and slowly pour in buttermilk.
  • Stir just until dry ingredients are moistened.
  • Drop dough by 10 spoonfuls onto hot peach filling. Brush tops of biscuits lightly with melted butter and sprinkle on 1 teaspoon coconut sugar. Dough will spread some when baking.
  • Place cobbler on baking sheet and bake until biscuits are golden and filling is bubbling, about 35-40 minutes. Allow to cool slightly before serving.
  • Note: 6 cups frozen, sliced peaches can be used in place of whole peaches. Be sure to thaw peaches in the fridge prior to adding ingredients. Fresh is always best when available.
