- Pat okra dry with paper towels. Place buttermilk in a shallow bowl. In another shallow bowl, combine the flour, cornmeal, salt, seasoning blend and pepper. Dip okra in buttermilk, then roll in cornmeal mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry okra, a few pieces at a time, for 1-1/2 to 2-1/2 minutes on each side or until golden brown. Drain on paper towels. Season with additional salt and pepper if desired.

- Put the vinegar, sugar, salt, turmeric and 3 cups water in a medium saucepan. Bring to a boil and stir until the sugar and salt dissolves, then reduce the heat and keep warm.
- Divide the cucumbers, okra and onion among three 1-quart sterilized jars. Evenly distribute the pickling spices among the jars. Slowly add the sweet vinegar water to the jars and seal with lids, then refrigerate. These pickles can be enjoyed right away but improve in flavor after several days.

- Wash okra and cut into 1/2 inch rounds.
- Put in a mixing bowl and sprinkle with flour. Shake it around vigorously to coat evenly, then bounce in a wire strainer to remove all excess. Final coat should be very light!
- Return to mixing bowl and add beaten egg. Stir to cover each piece of okra.
- Place cornmeal in zipper bag with salt and pepper.
- Add okra in 1 cup batches and shake until each piece is coated. Remove with something that will allow extra cornmeal to fall away. Put on a plate until all okra is coated.
- Fry in 1/2 inch lard or oil at 400 degrees or med-high until pieces are golden brown.
- Drain on brown paper or a wire rack.
- Salt additionally if desired.

SUPER EASY SOUTHERN OKRA SUCCOTASH
This is one time that frozen vegetables work better than fresh. You can play with different spices if you like, it's very forgiving. A finely diced Jalapeno is good for a little bite. Butter works well to replace the bacon drippings, or you can live longer (if not better) and skip the fat all together! Add Sausage and serve over rice for a great main dish! Update! I've made this often substituting fresh okra, but I just made it for the first time with fresh corn right off the cob. I added the corn raw a little before the okra and just heated it through. It was fantastic! Crisp and sweet!

- Preheat the oven to 350 degrees.
- In a small bowl, stir together the cornstarch and 2 tablespoons of the juice from the tomatoes; set aside.
- In a large saucepan, cook and stir the onion and garlic in the 1 tablespoon of butter until tender. Carefully stir in the undrained tomatoes, the okra, sugar, basil, hot pepper sauce, and salt and pepper.

This is another recipe I grew up with. This is passed down from word of mouth, no one has ever written it down before! Fresh, fried okra is soo simple to fix and soo good!

- In a big bowl beat egg with a fork, pour milk in and combine. Pour the cornmeal in another big bowl.
- Pour enough oil in a big skillet, halfway up, or you can use a deep fryer. Set heat to Medium-high.
- Put some okra pieces in milk mixture and then coat in cornmeal batter. Fry in skillet 10-15 min, occasionally turning/stirring them around. They are done when crispy and golden brown but not black!
- Drain on paper towel lined plate. Sprinkle with salt and pepper (i don't use pepper but some people prefer it).
- Repeat with rest of okra till all gone. Enjoy!

- Place vegetables in a colander, rinse with cold water, and transfer to a large mixing bowl. In this next step, use your best judgement. Add enough corn meal to coat all of the vegetables in the bowl. Toss lightly till vegetables are coated with corn meal, adding more corn meal if necessary.
- In a large frying pan, pour in oil to cover bottom of the pan; place pan over medium to medium-high heat. Heat oil until hot but not smoking. To test if oil is ready, wet your fingers with some water and flick water into oil. If the oil sizzles immediately, it is ready to cook.
- Spoon out vegetables into frying pan in a single layer. When vegetables turn golden brown on bottom, flip them over, and continue cooking until browned on the other side. Transfer to a bowl lined with paper towels to drain oil. Repeat process till all vegetables are cooked.

SMOTHERED OKRA SOUTHERN STYLE

- Ok now you will need a nice size skillet so that you can fry your okra in the EVOO over medium high heat until the slime is gone(usually once the okra browns and breaks apart it is done and ready to come out of the pan) allow it to drain as you repeat this step until all of the okra is done. Once the okra has been deslimed, place all the okra in a medium sized deep pot, add all of the fresh season to the pot and allow to cook over medium heat for 20 minutes, then add sausage and crabs cook an add't 20 minutes, then add the remaining ingredients except the rice, water, and sea salt. Allow Okra to cook about 30 minutes on a medium low fire so that all the flavors can fuse together. Meanwhile cook your rice according to the package directions and add sea salt. Remove okra from the heat and wham bam thank you ma'am you have yourself a delicious and hearty meal the whole family will love!

- Fry bacon and reserve 3 tablespoons of drippings. Crumble bacon and set aside.
- In a large saucepan, mix okra, tomatoes with juice, onion, sugar, salt and pepper. Add the 3 tablespoons of bacon drippings. Gently bring to a boil and turn heat down to slow simmer. Cover with lid and simmer for approximately 30 to 40 minutes until tender. Do not stir okra because it easily falls apart.

I love okra and enjoy cooking it in different ways. This is one of my favorites, although due to health concerns in my family we don't have it often. But when the craving comes, this is defineately my favorite alternative to plain fried okra! Family loved and approved!!

- 1. In a medium to large bowl, combine flour, baking powder, salt and pepper; stir until well blended.
- 2. In a small bowl, whisk together egg, milk and canola oil until well blended. Add to the dry ingredients and beat until batter is well blended.
- 3. In a large sauce pan, add oil and heat until a thermometer reaches 375 degrees. Add okra to the batter, stir to combine. Using a spoon, drop by the spoonful into the hot oil- do not over crowd (they will stick together if you do) until lightly browned - (it only takes a few seconds so watch carefully). - 1. Mix yogurt, jalapeno, lime juice and cilantro in non reactive bowl. Cover and refrigerate.
- 2. Trim okra by cutting away and discarding tips and stems. Cut in 1/2 inch thick slices. Soak in buttermilk for 30 minutes. Keep chilled.
- 3. Combine cornmeal, flour and Cajun seasoning in large ziploc bag.
- 4. Working in small batches remove okra from buttermilk with slotted spoon. Add okra to ziploc bag and shake to coat.
- 5. Pour oil in dutch oven or heavy pan to a depth of 1 inch. Heat oil to 375 degrees. Using the tongs remove the okra from the bag and add to the hot oil. Fry until golden brown on the bottom then flip and fry until the other side is golden brown; approximately 2 minutes. Drain on paper towels.
- 6. Serve warm with jalapeno yogurt sauce.
