1/2 cup mayonnaise
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups milk
1 cup shredded sharp cheddar cheese
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh chives
1 teaspoon chopped fresh thyme
4 cups thinly sliced baking potatoes (about 4 large)
2 tablespoons grated parmesan cheese

Steps:

  • Combine 1/2 cup mayonnaise and next 3 ingredients in a saucepan.
  • Gradually add milk, and cook, stirring constantly, over medium-low heat 8019 minutes or until thicken. Remove from heat.
  • Add cheddar cheese, and next 3 ingredients, stirring until cheese melts and is well-blended.
  • Place half of potato slices evenly in a lightly greased 11x7" baking dish; pour half of cheese mixture over potatoes.
  • Repeat layers with remaining half of potato slices and cheese mixture. Sprinkle with Parmesan cheese.
  • Bake, covered, at 350 degrees, for 1 hour.
  • Uncover and bake 30 minutes more or until potatoes are golden brown and fork tender.

6 medium potatoes, peeled and thinly sliced
2 teaspoons salt
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
¾ cup shredded Swiss cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a casserole dish.
  • Arrange sliced potatoes in the casserole dish; season with salt.
  • Melt butter in a saucepan over medium heat. Stir in flour until a paste forms. Pour in milk gradually, stirring constantly, until a thick white sauce forms, about 5 minutes. Stir in cheese and remove from heat. Pour sauce over the potatoes.
  • Bake in the preheated oven until potatoes are cooked through and tops are lightly browned, about 1 hour.

This delicious casserole hasn't been compromised by garlic and some other seasonings to detract from the traditional southern flavor, or gunked up with cheese to turn it into a gratin or doria. We enjoy this authentic southern dish year-round, so good in its creamy simplicity and subtle flavors. My family always expects it for Christmas dinner alongside the ham and cranberry chutney. Be your own judge regarding measurements. I learned from my grandmother and she never measured, so I've learned to guestimate on many of my recipes. NOTE: This dish can easily be frozen after baking, then thawed out and reheated. I do not recommend freezing without baking first, since potatoes will sometimes get mushy if frozen uncooked. I personally do not like a tin baking pan for this particular recipe, especially for freezing, since it can sometimes impart a "tinny" taste. Also, if this recipe is baked in a glass baking dish and then frozen, the glass will shatter if not at room temperature. So, if freezing in a glass baking dish, I recommend baking and freezing in Corning Ware since it will not break.

4 -5 large idaho potatoes, peeled
3 large onions, sliced
4 tablespoons butter
1/2 cup flour
2 cups milk (or more)
salt and pepper

Steps:

  • Boil the potatoes until they're halfway done, then cut into slices about 1/4 inch thick.
  • Set aside.
  • Slice three onions and sauté in butter until transparent.
  • Sprinkle flour into this mixture and continue to sauté until flour begins to darken a little.
  • Add milk and continue stirring until the sauce is at the consistency you like.
  • It should be medium-thick.
  • Add sliced potatoes to the pan and mix very well.
  • Add salt and pepper to taste.
  • Pour into a greased baking dish and bake casserole at 350 degrees until it turns a bit brown.

4 tablespoons butter
1/2 cup chopped onion
1 teaspoon ground mustard
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
2 garlic cloves, minced
1/4 cup all-purpose flour
2 cups whole milk
3 blocks (4 ounces each) sharp cheddar cheese, shredded and divided
1 block (4 ounces) Monterey Jack cheese, shredded
3 pounds russet potatoes, peeled and thinly sliced
3/4 cup dry bread crumbs
Minced chives, optional

Steps:

  • Preheat oven to 350°. In a Dutch oven, melt butter over medium heat. Add onion, mustard, salt and pepper; cook until onion is tender, 6-8 minutes. Add garlic; cook until fragrant. Whisk in flour; continue whisking 3-5 minutes., Whisk in milk; bring to a boil. Reduce heat; simmer, uncovered, until thickened slightly, 8-10 minutes. Gradually stir in 2 cups shredded cheddar cheese; stir in Monterey Jack cheese. Add potatoes and toss to coat. Simmer 10 minutes, stirring frequently., Transfer potato mixture to a greased 13x9-in. baking dish. Top with remaining cheddar cheese. Bake, uncovered, for 1 hour. Top with bread crumbs; return to oven until potatoes are tender, 10-15 minutes. Let stand 15 minutes before serving. If desired, sprinkle with chives.
