12 hard-boiled eggs, peeled and halved
¼ cup mayonnaise
3 tablespoons rice wine vinegar
3 tablespoons sweet pickle relish
3 tablespoons yellow mustard, or more to taste
1 tablespoon white sugar
¼ teaspoon cayenne pepper, divided
¼ teaspoon ground black pepper, divided

Steps:

  • Remove egg yolks and place into a mixing bowl. Set whites aside. Add mayonnaise, vinegar, relish, mustard, sugar, cayenne, and black pepper to the yolks; mix well with a fork.
  • Place mixture into a small resealable zip-top bag and snip the end off one of the corners. Pipe mixture into the egg whites. Sprinkle tops with more black pepper and cayenne. Chill until ready to serve.

2 tablespoons mayonnaise
1 teaspoon prepared yellow mustard
1 teaspoon spicy brown mustard
1 pinch ground black pepper
⅛ teaspoon distilled white vinegar
⅛ teaspoon white sugar
¼ teaspoon sweetened condensed milk, or more to taste
¼ teaspoon paprika for garnish
16 slices black olives

Steps:

  • Scoop yolks from egg halves into a bowl. Mash the yolks with mayonnaise, yellow mustard, spicy brown mustard, black pepper, white vinegar, sugar, and sweetened condensed milk until the mixture is smooth.   • Carefully remove the egg yolks.
  • Mash with the back of a fork.

1 dozen egg, hard boiled and peeled
1 cup apple cider vinegar
15 ounces sliced beets, from a can
1/2 cup brown sugar
1 tablespoon peppercorn
1 teaspoon kosher salt
sliced raw onion, to taste
1/2 cup mayonnaise
2 teaspoons Dijon mustard
1 tablespoon butter
1/8 teaspoon white pepper
1/8 teaspoon Old Bay Seasoning
basil, fresh, chopped (for garnish)

Steps:

  • Drain beets and reserve juice. Set beets aside.
  • Combine vinegar, beet juice, brown sugar, peppercorns, and salt in a sauce pan and boil until sugar is dissolved. Remove from heat and cool.
  • Layer eggs, beets, and onion in a jar large enough to fit (with room for the brine), and fill the jar with the cooled brine.
  • Soak eggs for at least 16 hours, up to 20 (suggested: 17 hours,).
  • After brining, remove the eggs and cut in half. Scoop out the yolks into a medium-large bowl.
  • Remove a few slices of onion from the jar, and finely chop/mince (if desired).
  • With a stand or hand mixer, whip together the egg yolks, mayo, butter, onion, and seasonings; make sure to taste and adjust seasoning to preference. Mix in minced onion, if using.
  • Pipe the yolk mixture into the pinked whites.
  • Top with chopped fresh basil,.

These Southern deviled eggs remind us of childhood. It's a classic recipe where the hard-boiled egg is the star. The filling is creamy, slightly tangy, and sweet. This deviled egg recipe is a simple appetizer that everyone will love.

18 jumbo eggs
2/3 c mayonnaise
1 Tbsp (well rounded) prepared yellow mustard
1 cap full (from the bottle) apple cider vinegar
2 Tbsp sweet pickle relish
2 Tbsp plus 1 tsp sweet pickle vinegar
3 dash(es) salt

Steps:

  • 1. Place eggs in a Dutch oven and cover with cold water. Add about a tablespoon of baking soda in with the eggs. (It helps the eggs peel better.)
  • 2. Turn on heat under pan and watch until water comes to a boil. Turn off the heat. Set timer for 10 minutes. After 10 minutes, take eggs off of stove, pour water into sink and run cold water over the eggs. Peel eggs as soon as they are cool enough to the touch.
  • 3. Slice peeled eggs lengthwise and scoop yolks into a medium bowl. Mash yolks with a fork until no lumps remain.
  • 4. Add all of the next ingredients.
  • 5. Mix well. Take a large Ziploc bag, fold the sides down and remove the mixture to a corner of the bag.
  • 6. Cut a small opening in that corner of the bag and use as a piping tool to fill eggs.
  • 7. NOTE: Make these the day before you need them as they taste even better after being in the fridge overnight.

9 large eggs
1/3 cup mayonnaise (preferably Hellmann's)
1 1/2 tablespoons Dijon mustard
2 teaspoons apple-cider vinegar
Kosher salt and freshly ground pepper, to taste
2 teaspoons scallion (white part only), minced
2 teaspoons fresh tarragon, minced
Paprika, to taste
Tarragon leaves, for garnish

Steps:

  • 1. In a large saucepan, combine the eggs and enough cold water to cover. Bring to a full boil. When the water reaches a boil, remove the pan from the heat and let the eggs stand, covered, for 18 minutes. Drain the eggs, leaving them in the pan. Add enough cold water to the pan to cover the eggs. Let stand until the eggs are cool enough to handle.
  • 2. Peel the eggs. Cut each egg in half lengthwise. Transfer the yolks to a small bowl and mash well with a fork. Stir in the mayonnaise, mustard, vinegar, salt, and pepper until smooth. Spoon in the filling into a zip-top plastic bag and snip one corner of the bag.
  • 3. Arrange the egg whites cut-side-up on a large serving plate. Distribute the minced scallion and tarragon over the cavities. Squeeze out the filling from the bag, piping it into the cavities. Sprinkle the stuffed eggs with paprika and garnish with whole tarragon leaves. Cover with plastic wrap and refrigerate until ready to serve.

1 (4.5 ounce) can deviled ham spread
1 tablespoon sweet pickle relish
1 tablespoon mayonnaise, or as needed
salt and pepper to taste
1 pinch paprika
3 pimento-stuffed green olives, sliced

Steps:

  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and run under cold water to cool. Peel eggs, and cut into halves lengthwise.
  • Carefully remove the yolks from the eggs, and place them into a medium bowl, scooping out a little bit of the white along with the yolk to make a more generous cup for filling. Mash the egg yolks with deviled ham, relish and enough mayonnaise to make a smooth mixture. Season with salt and pepper to taste.
  • Spoon the mixture into the egg whites, or pipe with a piping bag for a more elegant look. Garnish filling with a sprinkle of paprika, and top some of them with a slice of green olive stuffed with pimento. Chill until serving.

6 eggs
1/4 cup mayonnaise (do not use Miracle Whip)
3 tablespoons yellow mustard
1 tablespoon pickle relish, sweet (your choice) or 1 tablespoon dill (your choice)
1 teaspoon apple cider vinegar
2 teaspoons vidalia onions, finely diced
cayenne pepper
salt
pepper
1 teaspoon paprika

Steps:

  • Hard boil eggs. I place the eggs in cold water in a pot, bring it to a boil and continue to boil for 2 minutes. Then I remove from heat and cover for 7 minutes. Rinse under cool running water to keep the yolk from turning dark. Tap the eggs to make peeling easier, and peel them while they are still warm. Cut them in half lengthwise, placing the yolk in a separate bowl.
  • Place the egg yolks, mayonnaise, mustard, pickle relish, apple cider vinegar, onion, and cayenne, salt and pepper to taste in a bowl. Mix well.
  • Spoon the yolk mixture into the egg-white halves neatly, filling the inside. Sprinkle the top with the paprika for color.

My Mom was from the south and loved Pimento Cheese in celery and deviled eggs for holidays.

6 large eggs
6 Tbsp mayonnaise
5 Tbsp sharp cheddar cheese, finely grated
2 Tbsp roasted red bell pepper, chopped finely
1 1/2 tsp dijon mustard
green onions, green part only, sliced thinly on the diagonal
paprika, to sprinkle on eggs
bacon bits to sprinkle on eggs

Steps:

  • 1. Cook eggs covered in water in a medium sized stainless steel pan. Bring to a boil and let cook for 1 minute. Put on a lid and place on hot pad off of stove for 10 minutes.
  • 2. Drain off the water and let cool enough to handle eggs. Peel egg shells off of eggs. Slice eggs in half saving all of the egg yokes.
  • 3. Mix together the mashed up egg yolks, mayonnaise (use more if you want for personal preference), Cheddar cheese, minced red bell pepper, and mustard. Add salt and pepper to taste.
  • 4. Fill egg halves with yolk mixture and place on serving tray. Sprinkle eggs with paprika, green onions, and bacon bits. Keep refrigerated until ready to serve.

I found a recipe by Paula Deen online and changed it a bit to fit my tastes. I made these for my son's bday and they were really good. I used hard boiled eggs in the package to save time and these were quick and easy to make.

14 hard boiled eggs (i used pre hard boiled in pkg)
1/2 c mayo
1 to 2 Tbsp sweet relish
2 tsp yellow mustard
salt and pepper, to taste
paprika, for garnish

Steps:

  • 1. Cut hard boiled eggs down the center lengthwise. Gently squeeze whites over a small mixing bowl to remove yolks. Place whites on a dish large enough to hold 28 halves.
  • 2. Combine remaining ingredients, except paprika, in the bowl with yolks. Mix well until smooth.
  • 3. Put yolk mixture in ziplock bag. Snip the tip of the bag with scissors and pipe mixture into egg white to fill hole. Garnish with paprika. Serve with gherkins:). Enjoy!
