My husband's favorite Chicken Fried Steak. Will have a very crunchy coating, and is very delicious.

2 cups all-purpose flour
salt-free herb seasoning to taste
salt and ground black pepper to taste
2 eggs, beaten
2 pounds veal cutlets
¼ cup oil for frying

Steps:

  • In a shallow bowl, combine flour, herb seasoning, salt and pepper. In another bowl, place the beaten eggs. Coat each veal cutlet with the flour mixture, then dip into egg, then back into the flour mixture.
  • Heat oil in a large heavy skillet over medium-high heat. Place veal cutlets into hot oil, and cook until browned, about 10 minutes on each side.

It took me many tries before I felt I had a really good Chicken Fried Steak. This fries up extra crispy, so I pour a little gravy on the plate and place steak on top. This way you get to enjoy the crispy with the gravy and your steak coating won't get soggy. Enough gravy for mashed potatoes, too! I hope you like it as much as we do.

Number Of Ingredients 20

4 -5 pieces cube steaks, cutlet
2/3 cup flour
1/3 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground pepper
2 eggs
1/4 cup milk
2 tablespoons evaporated milk (Pet or "like")
5 dashes hot sauce
vegetable oil or coconut oil
1/4 cup flour
1/4 cup pan drippings or 1/4 cup bacon drippings
2 1/2 cups milk
1/4 cup evaporated milk (Pet of "like")
1/4 cup chicken stock or 1/4 cup broth
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In medium bowl, place first 7 "dry" ingredients and mix well. Set aside.
  • In another medium bowl, place the next 4 "liquid" ingredients and use whisk to mix well. Set aside.
  • Carefully transfer dry mixture onto a dinner plate.
  • Start heating oil of your choice to a medium high heat in large skillet (Cast Iron is true Southern style).
  • The oil should be about 1/4" to 1/2" deep and should not cover the entire cutlet.
  • Take a cutlet and dredge in flour mixture.
  • Take same cutlet and dip in egg mixture until entirely coated.
  • REPEAT dredging same cutlet in flour mixture.
  • Repeat process for each cutlet.
  • Discard unused egg and flour mixtures.
  • In well heated oil, carefully place cutlets and fry until golden brown on bottom.
  • Turn each cutlet over to brown the other side.
  • Each side should take about 4 - 5 minutes.
  • Place fried cutlets on paper towels to drain excess oil.
  • Pour off all but 1/4 C grease from skillet.
  • Heat to a Medium High temperature.
  • Slowly add Flour whisking until well blended. (Don't use leftover flour/cornmeal mixture).
  • When the color slightly begins to darken, slowly add milk.
  • Continue whisking to prevent lumps.
  • Gravy will begin to bubble and thicken.
  • Add evaporated milk and whisk well.
  • Add chicken stock and whisk well.
  • Add Salt and Pepper, blending well.
  • Allow gravy to simmer 2 minutes on low heat.
  • Turn off heat and allow to sit 2-5 minutes before serving.
  • Gravy will thicken nicely.

VEGAN MOCK SOUTHERN CHICKEN FRIED STEAK

I found this interesting recipe on Epicurious. I do like mock chicken so I'm anticipating good things with this recipe. Note I didn't include the separate time to bake the biscuits in the frying time for the chicken steaks.

2 cups spelt flour
3 teaspoons baking powder (non-aluminum)
1/4 teaspoon celtic sea salt
1 teaspoon nutritional yeast flakes
1/3 cup vegan margarine (softened)
3/4 cup soymilk
14 ounces vegetarian chicken pieces
1 cup flour
2 tablespoons flour
1/3 cup cornmeal (organic)
1 teaspoon paprika
1 teaspoon salt
1 teaspoon ground black pepper
1/2 cup soymilk (soy is good)
4 tablespoons vegetable oil (or other light oil)
1/4 cup vegetarian chicken stock (Imagine is good)
1/4 cup coffee creamer (Silk plain is really good)

Steps:

  • Biscuits:.
  • In a medium bowl mix the flour, baking powder, nutritional yeast flakes and salt together.
  • With a fork, blend in the margarine until the mixture is crumbly, then stir in the soy milk and blend well.
  • Drop biscuit size spoonfuls of dough onto a lightly greased baking sheet.
  • Bake at 450'F for 10-15 minutes until nicely golden brown.
  • Chicken:.
  • While the biscuits are baking, preheat a large heavy skillet over medium high heat.
  • slice the mock chicken into small round steaks.
  • Pour 1/2 cup of flour into a shallow dis and pour the other 1/2 cup flour into another shallow dish and add the cornmeal, paprika, salt and pepper. Pour the 1/2 cup non-dairy milk into a separate shallow bowl.
  • Dip the mock chicken into the soy milk then the plain flour. Next dip the mock chicken into the soy milk and then into the season flour cornmeal mixture.
  • Add 2 tablespoons of oil to a hot pan and cook 3 steaks at a time. Brown the steaks about 2 minutes per side or until cooked and remove from the pan.
  • Add 2 tablespoons more of oil and reheat with remaining steaks. Remove the steaks to a serving platter.
  • Add 2 tablespoons flour to the pan and cook for 2 minutes. Whisk in the broth and parsley, season with salt and pepper.
  • Whisk the soy creamer into the gravy. When the gravy bubbles remove from the heat.
  • Serve steak and warm biscuits with gravy on top.
  • Bon Appetit!

3-4 lbs beef cubed steak
2 C all purpose flour
1 C buttermilk
1 large egg
salt and pepper
oil for frying

Steps:

  • Pour 1 inch of oil in large cast iron skillet. Heat oil in skillet over medium heat on stove top while preparing meat.
  • Place flour in a shallow dish. Season with salt and pepper and stir to mix well.
  • Beat egg and milk together. Pour into another shallow dish.
  • Place milk mixture and flour next to one another to create a "dredging station."
  • Cut cube steak into 1 inch strips. Salt and pepper both sides of each strip. Place the strip into the flour, coating both sides. Then place the strip into the egg mixture, coating both sides. Coat strip with flour once more. Gently shake off extra.
  • When oil is hot (sprinkle a few drops of flour in, it should sizzle), carefully place strips side by side in skillet. Using tongs or a fork, turn strips once when bottoms begin to brown, (about 1-2 minute on each side).
  • When browned on both sides, remove strips from skillet and place on a paper towel lined rack to drain any excess oil.
  • Serve with white gravy and enjoy!

2 cups flour
3 tsp. baking powder
1/4 tsp. salt
1 tsp. nutritional yeast flakes
1/3 cup Earth Balance margarine, softened (or any vegan margarine)
3/4 cup soy milk
'Chicken'
14 oz. mock chicken (try Worthington's Chickette)
1 cup + 2 Tbsp. flour
1/3 cup cornmeal
1 tsp. paprika
1 tsp. salt
1 tsp. ground black pepper
1/2 cup plain soy milk
4 Tbsp. vegetable oil
1 1/4 cup mock chicken stock or vegetable stock(try Maggies Consume)
1/4 cup non-dairy creamery

Steps:

  • In a medium bowl, mix flour, baking powder, nutritional yeast flakes and salt together. With a fork, blend in margarine until mixture is crumbly. Stir in the soy milk until well blended. Drop biscuit-size spoonfuls of dough onto a lightly greased baking sheet. Bake at 450-degrees for 10 to 12 minutes or until golden brown. While the biscuits are baking, preheat a large, heavy skillet over medium high heat. Slice the chickette into small round steaks. Pour 1/2 cup of flour into a shallow dish. I love to make this with homemade mashed potatoes &mac&cheese or broccoli cheese &rice like in picture

4 cube steak
3 c flour, seasoned
2 large eggs
2 c heavy cream, whipped
salt pepper garlic
1 bag(s) potatoes
1 bag(s) broccoli
1 box velveeta cheese
1 can(s) cream of mushroom soup
1 tube(s) butter
1 bag(s) success white rice

Steps:

  • 1. Season your steak to your likings, as well as the flour mix too!
  • 2. Preheat grease in iron skillet
  • 3. Whisk the eggs in a medium sized bowl, next add the cream.
  • 4. I dip my steak in seasoned flour first, then the cream, flour again, cream one more, flour then begin frying!
  • 5. It really depends on the temperature of steak and size to determine length of time..I like to leave my meat out while I prepare sides that way it is somewhat room temperature and cooks evenly thru. Cook till golden brown, lay out on plate and I use newspaper to catch the grease it doesn't stick to food like napkins. Enjoy & don't forget your gravy
  • 6. For the broccoli rice and cheese I steam the broccoli, boil the rice, I cut half a block of velveeta into little cubes, melt the cheese with cream of mushroom, then add broccoli and rice you can bake in the oven or either cook it on the stove. It's so simple, fast and delicious!
