Yield 5

Number Of Ingredients 11

1 (3 pound) whole chicken
1 onion, quartered
2 slices lemon
salt and pepper to taste
3 cups water
1 bay leaf
½ teaspoon dried thyme
2 cups all-purpose flour
3 tablespoons shortening
1 teaspoon salt
¼ cup water

Steps:

  • In a heavy pot with a lid place the chicken, onion, lemon, salt, pepper, water, bay leaf and thyme. Simmer all over low heat until tender, about 1 hour.
  • Let chicken cool slightly in pot, then remove and take the meat off of the bones. Discard the bones and skin and skim excess fat off the broth if desired. Discard the onion, lemon and bay leaf. If desired, wash out pot well. Return broth and chicken pieces to the pot. Simmer over low heat while making the dumplings.
  • To Make Dumplings: In a medium mixing bowl, cut shortening into the flour and salt. Stir in 1/4 cup water (more if needed) to form a soft dough. Roll out dough on a floured surface, with a rolling pin, until very thin. Cut into 1 inch wide strips using a pizza cutter or knife. Tear off 1 inch long pieces from these strips and drop into simmering broth and chicken meat. Simmer for 10 minutes with the lid off, then 10 minutes more with the lid on. Serve immediately.

SOUTHERN CHICKEN AND DUMPLINGS

Southern Chicken and Dumplings image

Old fashioned stick to your ribs chicken and dumplings recipe. The secret is using bone in chicken to make your stock. The bones help flavor the stock and give it richness.

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Chicken Soup Recipes     Chicken and Dumpling Recipes

Time 1h45m

Yield 6

Number Of Ingredients 14

2 tablespoons butter
1 onion, diced
3 large bone-in chicken breast halves with skin
1 (32 ounce) can chicken broth
3 cups all-purpose flour
1 tablespoon baking powder
1 ½ teaspoons salt
⅓ cup vegetable shortening, plus
2 tablespoons vegetable shortening
¾ cup milk
1 (10.75 ounce) can condensed cream of chicken soup
2 cups water
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Melt the butter in a large pot over medium heat. Stir in the onion, and cook until the onion has softened and turned translucent, about 5 minutes. Place the chicken breasts into the pot, skin-side-down. Pour in the chicken broth, and enough water to just cover the breasts. Bring to a simmer over high heat, then reduce heat to medium-low, cover, and simmer until the chicken begins to fall off the bone, about 1 hour. Once cooked, remove the chicken breasts from the pot. Remove and discard the skin and bone; allow the meat to cool, then tear apart into bite sized chunks.
  • While the chicken breast are simmering, prepare the dumpling dough by whisking the flour, baking powder, and 1 1/2 teaspoons of salt together in a mixing bowl. Work the vegetable shortening in with your fingers until the mixture resembles coarse cornmeal. Make a well in the middle and pour in the milk. Stir together until a stiff dough forms. Turn out onto a floured surface, and knead until smooth. Form the dough into 12 pieces, and set aside.
  • After you've shredded the chicken, stir the cream of chicken soup, 2 cups water, salt, pepper, and shredded chicken back into the pot. Return to a simmer over medium-high heat. Drop the dumplings into the simmering broth one at a time to keep them from sticking together. Cover, reduce heat to medium-low, and simmer until the dumplings have puffed and are no longer doughy in the center, 10 to 20 minutes.

HEARTY CHICKEN AND DUMPLINGS SOUTHERN STYLE EASY!!

Hearty Chicken and Dumplings southern style EASY!! image

I use thighs in place of breasts simply because I love the texture and flavor of the thighs over the breast. You can use whatever chicken you'd like though. This recipe is a family fave and hopefully it will be yours too! Very simple, quick and hearty!

Provided by Kristi Martin

Categories     Chicken

Time 1h45m

Number Of Ingredients 6

8 boneless skinless chicken thighs
1 pkg mary b's frozen dumplings
2-3 c chicken broth or water
1-2 each tsp salt and pepper
1 can(s) cream of chicken soup
2 pkg chicken gravy mix

Steps:

  • 1. {Be sure to clean the chicken well and remove any extra fat before cooking.} This step is how to cook your chicken with a pressure cooker. If you don't have a pressure cooker or don't want to use one, a regular soup pot will work fine. See below for cooking the chicken in a soup pot. OH! And be sure to read all of these steps before getting started please! If you are using a pressure cooker {which I prefer}, add the chicken and season it the way you like. Add in enough water to just cover the chicken and place your lid and make sure it's secure. Turn your stove on high and bring your cooker to a good steam and reduce heat to medium-medium low and cook for 15 minutes max. The pressure regulator should be rocking steadily. After 15 minutes, remove from heat and allow the cooker to cool--this can take about 30 minutes. If you are pressed for time, you can run cold water along the top and one side of pot to cool. If you have a new-er cooker, you should have a safety release that will drop when the steam is out. DO NOT open the lid until all of the steam has been released. Remove the chicken and place into a casserole dish with a lid to maintain heat until next step.
  • 2. If you are using a soup pot, doing the same as step 1, add enough water to cover your chicken and add 1 cup more. Bring to a boil and reduce heat to simmer. Simmer for approximately 20-30 minutes or until no longer pink and juices run clear and internal temp is 170º Remove cooked chicken to a covered dish and see step 3!
  • 3. Okay, now that you have your chicken cooked and is now inside a covered dish...and this is the really hard part--trying NOT to eat it all before you are finished cooking! **A slight interruption for a very important announcement--I don't use the pressure cooker after the chicken is cooked. I use a non-stick soup pot to fix the rest of the meal so that the dumplings won't stick. (I found out the hard way on this step--a HUGE mess to clean up!) Now, back to your regularly scheduled program, er recipe; in your soup pot either pour in your liquid from the cooker or if you used the soup pot, just leave it there and bring the liquid back to a boil. You should have at least 2 cups in the pot, if you don't have at least that much, add in enough chicken broth to make it 2 cups. Dump in your can of soup and both packages of chicken gravy. (You may be wondering why 2 packages...? Because one would be very lonely and also because two gives it the awesome flavor that will make you very happy. So trust me, you won't be unhappy!!!) Stir with a whisk until completely combined. If it looks too thick, you can add some water or more broth until it appears to be more soupy rather than gravy-like.
  • 4. [NOTE: DO NOT TAKE the dumplings out of the freezer until you are ready to use them! Otherwise they thaw out and become a doughy mess and are IMPOSSIBLE to pull apart! {insert eye roll} PS: I use a butter knife to separate the dumplings] Once you have a nice soupy consistency in your pot, begin dropping in your Mary B's frozen dumpling strips one at a time and breaking each one into threes. Now, I use a whole package in my recipe but that's only because I am feeding a troop who love dumplings. If you'd rather not have so much dumpling, you can scale back on them and only use half of the package. It's all up to you! Once you have used all of the dumplings you plan to use, check the sauce. If it looks too thick or not enough, you can add more broth or water to the pot. Just don't add too much, you want it to be a good balance of sauce, dumplings and chicken. At this point, I like to add more salt to the pot since the dumplings are very bland. If I had to measure--which I don't, but if I did, then it would be approximately around 1 tablespoon give or take. Allow to boil for about 5 more minutes and then reduce the heat to low and allow to simmer for about 45 minutes. This is the part where you'll be happy that your chicken is in a covered dish! Why didn't I fix the chicken while the dumplings are cooking you ask? Because the broth from the chicken wouldn't be cooking the dumplings silly!
  • 5. Once you have finished cooking the dumplings, you can now add in the chicken. Stir well and let the chicken just fall apart. It should be stringy looking. I like to do a taste test at this point to check for seasoning to see if I should add anymore salt and/or pepper. Allow to simmer another 10 minutes or so and serve! I don't serve my dumplings over anything but I know some people like to serve it over rice. Whatever floats your boat!! Enjoy and share this with your friends, family and even your foes...you may gain a newfound friendship!

MOM'S SOUTHERN STYLE CHICKEN AND DUMPLINGS

Mom's Southern Style Chicken and Dumplings image

This is a truly delicious recipe, but it was very difficult to get the exact amounts of ingredients. It's one of those handed down recipes where mom and grandma just said, "add a little of this and that." Please note that it may not take both cartons of broth. I usually add about 1 1/2 cartons and add the rest if I need to. The...

Categories     Casseroles

Time 45m

Number Of Ingredients 11

4 to 6 boneless, skinless chicken breasts, cooked and cut into small pieces
2-32 oz cartons chicken broth (you may not need as much. start with 1 1/2 cartons and if it seems too thick, add the remaining broth).
3 can(s) cream of chicken soup
1/2 to 1 tsp hot sauce (optional)
1 dash(es) black pepper
DUMPLINGS
2 c all purpose flour
2 c self-rising flour
1 c shortening
1 1/2 - 2 c milk
NOTE: THIS RECIPE CAN BE CUT IN HALF FOR SMALLER FAMILIES

Steps:

  • 1. Cook chicken breasts. Cool and cut into bite-sized pieces, set aside while making the dumplings.
  • 2. DUMPLINGS: In a large bowl, mix together flours and shortening until mixture resembles a coarse meal. Add milk a little at a time and mix until it forms a soft dough. On a floured surface, roll or pat out dough to about 1/4" thickness. Cut into small squares using a pizza wheel. Squares do not have to be uniform. NOTE: You may also drop dumplings by heaping teaspoons into broth, but we prefer them rolled out and cut.
  • 3. BROTH: In a large Dutch oven, combine broth, soups, and hot sauce and bring to a boil. Add chicken and then add dumplings one at a time and stir very lightly, sprinkle with black pepper. Return to boil and reduce heat. Cover and simmer for about 15 to 20 minutes or until dumplings are cooked and sauce has thickened. If sauce is too thin, mix a couple of tablespoons flour and water and mix into a pourable paste. Add to broth to thicken.
  • 4. SPECIAL NOTE: It is very important to add the dumplings one at a time. Do not add them all at once or you will have one big clump.

CONNIE'S SOUTHERN STYLE CHICKEN AND DUMPLINGS

Connie's Southern Style Chicken and Dumplings image

This is my mom's recipe for classic chicken and dumplings. It is simple, hearty, and delicious! I often do the chicken in the slow cooker, and do the rest on the stove when I get home from work. I can have this on the table in 30 minutes using this method. Also, if you really love dumplings, you might want to double the recipe.

Time 3h

Yield 6

Number Of Ingredients 9

1 whole chicken, rinsed and giblets removed
8 cups water
1 teaspoon salt
2 tablespoons butter
½ teaspoon salt
4 teaspoons butter
1 ¾ cups all-purpose flour, or as needed
1 tablespoon butter
¼ cup evaporated milk

Steps:

  • Place the chicken into a large soup pot, and pour in the water. Add salt and 2 tablespoons butter, bring to a boil, and reduce heat to medium-low. Simmer the chicken until the meat is very tender, 2 1/2 to 3 hours. Remove the chicken from the stock, and allow the chicken and stock to cool. Separate the chicken meat from the skin and bones, and chop the meat into bite-size pieces. Strain chicken stock through a wire mesh strainer into a large pot; set aside.
  • Bring all but 2/3 cup of the reserved chicken stock to a boil over medium heat. In a separate saucepan, bring 2/3 cup of chicken stock to a boil. Stir in 1/2 teaspoon salt and 4 teaspoons of butter, and bring the mixture to a boil over medium heat. Beat in the flour to form a slightly sticky dough.
  • Remove dough to a well-floured surface, and roll to desired thickness. Knead in more flour if dough is too sticky. Cut the dough into strips about 4 inches long; drop dumplings into the boiling chicken stock. Reduce heat to low, and simmer the dumplings until tender, about 10 minutes. Stir 1 more tablespoon of butter into the stock to add richness, if desired; return chopped chicken meat to the pan. Stir in evaporated milk; simmer until chicken meat is hot.

GRANDMA'S SOUTHERN-STYLE CHICKEN N' DUMPLINGS RECIPE - (4.3/5)

Grandma's Southern-Style Chicken n' Dumplings Recipe - (4.3/5) image

Provided by peridot728

Number Of Ingredients 16

To Cook Chicken And Make Broth:
Serves: 8 servings
1 whole chicken, thawed and cleaned (remove and discard giblets from cavity)
1/2 cup carrots, celery, and onion (OPTIONAL-to flavor the chicken broth)
Water to completely cover chicken in a large stockpot.
To Make The Dumplings:
1 cup all purpose flour
1 teaspoon salt
2 heaping Tablespoons vegetable shortening
1/2 cup HOT water
1/2 cup plus 2 Tablespoons all purpose flour
To finish soup:
Two large chicken bouillon cubes
1 Tablespoon butter
1/4 cup water mixed with 2 Tablespoons flour
Salt and Pepper, to taste (approx. 1 teaspoon salt, 1/2 teaspoon pepper)

Steps:

  • Put the chicken and the veggies (if using) in a large stockpot. Cover completely with water. Bring to a quick boil, then continue cooking chicken for one hour. When done, remove chicken to large bowl to cool. Strain broth to remove leftover veggies or other particles. Return broth to stockpot. Once chicken is cool, remove skin, then cut chicken into bite sized pieces. (At this point I divide the chicken pieces in half, and freeze half for use in another meal). Add chicken pieces (approx. 2½ cups) back into chicken broth. Heat the chicken and broth back up to boiling. Add bouillon cubes, salt and pepper (to taste). While chicken is coming to a boil, make the dumplings. In a large bowl, using a pastry blender or two knives, cut the shortening and salt into the cup of flour, until shortening is the size of small peas. Add ½ cup HOT water and ½ cup, plus 2 Tablespoons of flour to the mixture. Stir and work the mixture until a soft dough ball forms (firm enough to roll out). Divide dough into 3 equal sized balls, then let the dough rest for 10 minutes. Generously flour a work surface. Roll each dough ball out (one at a time), sprinkling with flour (if necessary) to keep dough from sticking to work surface. Roll out to about the size of a large pie crust (roll out thin). Cut dough into strips about an inch wide using a pizza cutter or knife. Repeat process for remaining dough balls. Drop dumplings a couple at a time into hot boiling chicken/broth mixture until all have been added to pot; add butter, and continue cooking. Make a slurry by mixing ¼ cup water with 2 large Tablespoons flour. Stir well to combine, then add to soup pot, and stir well. (this helps to thicken broth a bit). Cook an additional 10 minutes on high to fully cook dumplings. Taste test broth, and add additional salt and pepper, if desired. Ladle hot soup into bowls, serve, and enjoy (especially with crusty french bread on the side!) Notes If you are pressed for time, you can always start with store bought chicken broth (cook the chicken in water/drain, THEN use broth in pot), and can also use a pre-cooked rotisserie chicken to get the chicken from, BUT I prefer to make it the way I have posted it, as it is far less expensive... but, hey... whatever works, right?

SOUTHERN-STYLE OLD FASHIONED CHICKEN AND DUMPLINGS RECIPE - (4.3/5)

Southern-Style Old Fashioned Chicken and Dumplings Recipe - (4.3/5) image

Provided by WeBHeelin_50

Number Of Ingredients 7

4 to 6 bone-in chicken breasts with rib meat
1 stick butter
4 cup plain flour, sifted, plus extra for dusting
1 teaspoon salt
1 egg
4 to 5 (32 ounce) containers chicken broth, plus extra
Salt and Pepper, to taste

Steps:

  • Place chicken breasts and butter in large stock pot. Salt and pepper to taste. Fill stock pot with chicken broth until chicken is covered by an inch or so. Slowly simmer chicken until falling off bone. Remove chicken and place in refrigerator or freezer to cool rapidly for handling later. Add more chicken broth and cover stock pot and keep at simmering temp. On large flat surface for rolling out dumplings, make circle with 4 cups of plain flour, leaving center open. In the center add egg, salt, 1 cup of hot chicken broth from pot. Slowly incorporate with flour with hands. Be careful though. The dough will be very hot at first and stick to you like napalm! But tough it out! Once well kneaded, pinch off thirds and roll out with rolling pin using extra flour on pin and on dough so it won't stick. Roll out approximately 1/16 inch thick. Roll it thin. Score into 1"x2" strips. Lift and place on separate plate, flouring both sides of dumplings so they won't stick to one another. Repeat until all dough is used. Next steps must be followed exactly: uncover broth. Bring it to a high rolling boil. Add all dumplings at one time, give it a quick stir to separate dumplings. Cover with lid, turn heat down to medium-low or lower if it starts to boil over. Cook for 20 minutes, but do not remove lid during cooking. Do not peek, do not stir! While dumplings are cooking: skin and de-bone chicken then shred into bite sized pieces. After dumplings are done, fold in chicken; being careful not to tear the dumplings apart. Also you can use the spoon to separate any dumplings that may have stuck together during cooking. They readily come apart. Enjoy! Like any kind of stew or soup, they are much better the next day! Keep some broth on hand to help stretch the dish out.

Homemade chicken and dumplings from scratch! Southern cooking all the way! This recipe takes some time, but it is absolutely delicious!

Time 2h5m

Yield 12

Number Of Ingredients 12

1 tablespoon extra-virgin olive oil, or as needed
2 medium carrots, chopped
2 stalks celery, chopped
1 large onion, chopped
1 tablespoon dried parsley
salt and ground black pepper to taste
1 (3 pound) whole fryer chicken, giblets removed
water as needed
2 cups self-rising flour
½ cup vegetable shortening
1 teaspoon salt
2 quarts buttermilk

Steps:

  • Heat oil in a large stockpot over medium-high heat. Add carrots, celery, onion, and parsley. Add salt and pepper and cook vegetables until they sweat, about 5 minutes. Drop the chicken right into the stockpot and add water to cover by 3 to 4 inches. Bring to a boil and cook until no longer pink in the center and juices run clear, about 1 hour.
  • Meanwhile, place flour in a large bowl; cut in shortening. Add buttermilk slowly until flour comes together in a a large ball. Knead dough slightly; do not overdo it or dumplings will not be fluffy. Roll dough out and cut into dumpling strips.
  • Pull cooked chicken out of pot and let cool until safe to handle, about 15 minutes. Reserve stock.
  • Shred chicken meat. Pull all veggie chunks out of stock. Add shredded chicken back to the pot with stock and bring to a boil.
  • Add dumplings slowly, 1 at a time, stirring constantly to keep from sticking. Cook until stock is thickened and dumplings are no longer cream-colored, but almost brownish-grey, 5 to 10 minutes.

Time 35m

Yield 5-10 serving(s)

Number Of Ingredients 6

2 cups self-rising flour
1 -1 1/2 cup ice water
3 (10 1/2 ounce) cans low sodium chicken broth
2 -3 chicken breast halves
2 cups long-grain white rice
1 -2 tablespoon ground pepper

Steps:

  • Boil 2-3 split chicken breasts in low-sodium chicken broth & water.
  • While the chicken is boiling, lay out a large area of wax paper.
  • Sift 3 cups of self-rising flour into a mixing bowl.
  • Slowly pour 1 - 1/2 cups ice water into flour - roll into a dough ball. (If you have excess flour, use to coat wax paper.).
  • Using a rolling pin, roll out dough to desired consistency. (I prefer thin dumplings, but you may create your dumplings in any consistency you like.).
  • Cut rolled out dough with a knife or pizza cutter into small or medium squares.
  • Check on your boiling chicken. Once the chicken breast separates, take the meat off the bone.
  • Make sure broth is boiling and slowly place dumplings in with the chicken and broth. (Do not drop all dumplings in at once or they will stick together.).
  • Season dumplings with salt and pepper to your liking. (I do not use salt since chicken broth is high in sodium, but lots of pepper really makes the dumplings taste good!).
  • While the dumplings are finishing, prepare long-grain white rice using low-sodium chicken broth instead of water.
