Have fun with this dish. This is a great dish to experiment with, you can add or subtract ingredients to fit your personal taste. I have added black-eyed pea relish, jalapeños, and even pear relish on occasions, depending on my mood and what I had on hand. This is a fun dish and people of all ages love it.

2 (15 7/8 ounce) cans black-eyed peas, drained
2 (10 ounce) cans shoe peg corn or 2 (10 ounce) cans corn, drained
2 (10 ounce) cans Ro-Tel tomatoes, drained
1 (15 7/8 ounce) can black olives, chopped
1 green pepper, chopped really small
1 red pepper, chopped really small
1 (15 7/8 ounce) can black beans, drained
1 larger purple onion, chopped really small
3 ripe tomatoes, chopped small
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon chili powder (optional, only if you want a bit of a kick to it)
1 teaspoon parsley flakes
16 ounces house Italian dressing or 16 ounces zesty Italian dressing

Steps:

  • Mix all ingredients together.
  • Refrigerate at least 8 hours before serving, so flavors can fuse (this is the key to this dish).
  • Serve with Tostitos Scoops or whatever chips you prefer.

A co-worker brought this dish to a work potluck, and everyone was absolutely raving! I couldn't get enough of it, so I knew I had to get the recipe :) It is great with tortilla chips as a dip, or over some lettuce for a salad. As a bonus, it's so simple and quick to put together!

1 (15 1/4 ounce) can corn, rinsed and drained
1 (10 ounce) can Rotel tomatoes & chilies
3/4 green bell pepper, diced
1/2 red onion, diced
4 green onions, sliced
1/2 jalapeno, seeded and diced
1 cup zesty Italian dressing

Steps:

  • Combine all ingredients and mix well.
  • It can be made up to 24 hours in advance and kept in the fridge.

3 roma tomatoes, seeded and diced
1 green bell pepper, seeded and finely chopped
3 -4 green onions, thinly sliced
3/4 cup KRAFT Zesty Italian Dressing

  • Mix all of the ingredients except the chips.

* 2 (15-ounce) cans black-eyed peas, drained
* 1 (15-ounce) can whole kernel corn, drained
* 1 (10-ounce) can diced tomatoes and green chiles (recommended: Ro-Tel)
* 2 cups chopped red bell pepper
* 1/2 cup chopped fresh jalapeno peppers
* 1/2 cup chopped onion
* 1 (8-ounce) bottle Italian dressing
* 1 (4-ounce) jar chopped pimentos, drained

Steps:

  • In a large bowl, combine all of the ingredients and stir gently to combine. Refrigerate mixture overnight. Serve with corn chips.

This recipe originated somewhere in TN but was given to me by my sister. It has become a hit at all the summer pot-luck lunches at my church. It can be served as a bean salad or as a dip for crackers; either way it is refreshing on a hot summer's day.

2 can(s) blackeyed peas
1 can(s) black beans
1 can(s) chick peas
1 can(s) corn
1 can(s) fire roasted tomatoes
1 large purple onion, diced
1 c fresh cilantro, chopped
1 small jar pimentos, drained
1/4 c olive oil
1/8 c red wine vinegar
kosher salt/pepper - to taste
hot sauce - to taste
garlic powder - to taste
lemon juice - to taste
heirloom cherry tomatoes - for garnish
cucumber - for garnish
parsley or extra cilantro - for garnish

Steps:

  • 1. Rinse all cans of beans and peas. Drain corn and pimentos. Mix together in large bowl and allow to set - it's better the next day.
  • 2. AS GARNISH: Cut in half several heirloom cherry tomatoes. Cut ends off of cucumber; cut in half, lengthwise; scoop out middle pulp then thinly slice. Place tomatoes and cucumber halves on top of salad. Sprinkle with parsley or cilantro.

3/4 cup finely chopped green bell pepper
1/2 cup finely chopped red bell pepper
3/4 cup finely chopped hot pepper
3/4 cup finely chopped white onion
1/4 cup finely chopped pimiento
1 clove garlic, minced
1/3 cup red wine vinegar
2/3 cup olive oil
1 teaspoon Dijon mustard
salt
Tabasco sauce
tortilla chips

Steps:

  • Whisk together vinegar, oil, and mustard.
  • Mix together the beans to garlic.
  • Mix the two together and take a bite.
  • Adjust seasonings by adding salt and tabasco.
  • Mash half the mixture, stir, cover and chill well.
  • Drain and serve with tortilla chips.

1/2 C mayo
1 T sambal oelek or other asian hot chili sauce
1/4 C chopped green onion
1/2 C chopped roasted red peppers
salt and pepper
pinch cayenne

  • place 1st 4 ingredients in processor until well combined. Stir in green onions, peppers and seasonings. Spoon into crock and cover.

It is a wonderful way to incooperate fiber into your daily diet, and it taste great too.It is fresh tasty,and very filling.The eye appeal alone makes you want to try it,forgetting all about the fact that it is good for you. There is no real caviar in this dish, it gets it's name from the black eye peas, used frequently in the Southern states.

3 - shallots, or 1 med. onion chopped
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
1 bunch(es) green onions, chopped
2 - jalapenos, seeded & chopped
4 clove(s) garlic, minced
3 medium plum or other variety tomatoes, chopped
1/3 cup(s) shredded parmesan cheese
1/2 cup(s) light mayonnaise
2 package(s) splenda, or 4 tsp. sugar (optional)
1 cup(s) light zesty italian dressing
2 can(s) 15 oz. black eyed peas, drained & rinsed
- leaf lettuce, garnish ( optional)
1 medium tomato, quartered into 8's, for garnish
1 small jalapeno, cut into rings for garnish

Steps:

  • In a medium size bowl, combine all of the chopped and minced ingredients, and stir gently to combine.
  • Combine the italian dressing with the mayonnaise, parmesan cheese, and splenda packets or sugar, and pour over the salad ingredients. Stir gently to combine.Allow flavors to marry for at least 2 hours, to blend flavors.
  • GARNISH: Wash leaf lettuce, and dry, and line a platter with the leaves, then pile on the salad in a mound, or place in a smaller bowl and invert on to lettuce bed, and then garnish with tomato wedges, and jalapeno rings if desired.

1 (15-ounce) can white hominy, drained
2 tomatoes, seeded and chopped
4 green onions, thinly sliced
2 garlic cloves, minced
1 medium-size green bell pepper, diced
1 small onion, chopped
1/4 cup chopped fresh cilantro
1 (8-ounce) jar hot picante sauce
2 tablespoons lime juice (optional)

Steps:

  • • Combine first 9 ingredients, and, if desired, lime juice. • Cover and chill at least 2 hours. Serve with tortilla chips, or wrap in flour tortillas.

Another recipe given to me by my mother. This is my "go to" dish for parties and gatherings, and it's lower in fat than most Texas caviar recipes. The hardest part is trying not to devour it before serving to guests!

DRESSING
1/2 cup(s) red wine vinegar
1/2 cup(s) balsamic vinegar
1/2 cup(s) olive oil, extra virgin
1/2 cup(s) splenda, or sugar
1 teaspoon(s) kosher salt
1 teaspoon(s) black pepper
1 tablespoon(s) dijon mustard
CAVIAR
1 can(s) mexicorn, drained
1 can(s) rotele, drained
1 can(s) black eyed peas, rinsed and drained
1 can(s) black beans, rinsed and drained
1 - medium yellow bell pepper, diced
1 - medium red bell pepper, diced
1 - medium green bell pepper, diced
1 - red onion, diced
1 - cucumber, peeled and diced

Steps:

  • Mix all dressing ingredients well and set aside
  • In a separate bowl, mix all caviar ingredients
  • Pour dressing over caviar and refrigerate in an air-tight container for at least an hour or two.
  • Serve with tortilla chips, Fritos, or crackers, enjoy!

SOUTHERN BLACK EYED PEA CAVIAR

I made this for an appetizer recently and it disappeared quickly. It has a combination of flavors that blend together so well.

1 can(s) yellow corn, drained
2 can(s) blackeyed peas, drained
1 can(s) rotel tomatoes with juice
1 - medium onion, finely chopped
1 - red pepper, finely chopped
3 - jalopenas, seeded and finely chopped
1 - 8 oz bottle of italian dressing

Steps:

  • Finely chop the red pepper and onion. Seed and finely chop the jalopena.
  • Drain the cans of blackened peas and corn. Do not drain the rotel tomatoes. Mix all of the ingredients together with the italian dressing. It is best to make this a few hours or a day before so the flavors marry.
  • Serve this with tortillia corn scoops. You and your guests will enjoy this simple and delicious recipe.

1 can corn
1 can black-eyed peas
1 can black beans
4 tomatoes, cubed
1 cucumber; peeled, seeded,cubed
1/2 green pepper, cubed
1/2 cup red onion, chopped
2 stalks celery, cubed
6-8 baby carrots, cubed
1 pkg Good Seasons dressing
1/4 cup apple cider vinegar
1/4 cup water
1/2 cup canola oil
2 tablespoons brown sugar
2 tablespoons spicey brown mustard
Large bag of Fritos Scoops

Steps:

  • Rinse and drain all canned ingredients in colander. Cut all other vegetables into small cubes. Toss vegetables and canned goods together. In separate bowl, mix dressing, water, oil and vinegar. Add brown sugar and mustard. Pour derssing over veggies and refrigerate for at least 30 minutes. Can be made the day before and is good for 2-3 days. Serve with Fritos Scoops.
