1 1/2 cups flour
1/4 cup cornstarch
1/2 cup powdered sugar
2 teaspoons chopped fresh mint leaves
1/4 teaspoon salt
8 ounces Philadelphia Cream Cheese, softened
1/2 cup butter, softened
2 teaspoons good quality bourbon
1/4 teaspoon vanilla

Steps:

  • Using wire whisk, stir together the flour, cornstarch, powdered sugar, mint and salt in large bowl; set aside. In mixer on medium speed, add cream cheese, butter, bourbon and vanilla in a large bowl, beating until well blended. Gradually add flour mixture to cream cheese mixture and beat until it forms a dough. Dough will be somewhat soft so cover and chill in freezer about 15 minutes. Preheat oven to 325°F. Line baking sheets with parchment paper. On lightly floured surface, roll half of dough at a time to less than 1/4-inch thickness. Cut into rounds using 1 1/2 to 2-inch cookie cutter. Place on baking sheets about 2-inches apart. Bake 8-10 minutes or until just lightly browned on bottom. DO NOT OVERBAKE. Cool cookies in pan on wire rack. When cool, remove from pans and place on platter, garnishing with extra mint or store cookies until ready to serve.

This is an unusual pecan pie because it uses only brown sugar--no corn syrup. This gives it a wonderful consistentcy, and this is my most requested dessert of all time. I always have to take 2 extras to family gatherings so everyone can take some home. I got the original recipe from my aunt, but I have added the cocoa, more pecans, more eggs, the alcohol and changed other ingredient amounts over the years, so I consider it my creation now.

3 9-inch pie shells
3/4 cup butter
6 large eggs
2 (16 ounce) boxes light brown sugar
3 tablespoons unsweetened cocoa powder
1/3 cup evaporated milk
1/4 teaspoon salt
2 teaspoons vanilla extract
2 tablespoons Tia Maria or 2 tablespoons Amaretto
2 cups chopped pecans
18 pecan halves, for decoration

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter and set aside.
  • Beat the eggs in a large mixing bowl.
  • Sift the brown sugar into the eggs (yes, sift) and mix well.
  • Add the remaining ingredients except for the pecan halves and mix thoroughly.
  • NOTE: If you don't want to add the 2 Tablespoons of alcohol, then increase the vanilla extract amount to 1 Tablespoon.
  • Distribute the pie filling evenly between the 3 pie crusts, and decorate the tops of each pie with 6 pecan halves in a pinwheel pattern.
  • Bake at 400 degrees for 15 minutes then reduce the heat to 350 degrees and bake for another 35 minutes.

A mint julep is the perfect respite on a hot day. Vivek and I have gone to the Steeplechase, the Nashville version of the Derby, where we fell in love with this quintessential Southern favorite. I add a dash of chile in the form of jalapeno in honor of all the awesome Southern belles I have met who pack a punch and have a dash of spice to their personalities.

10 fresh mint leaves plus 1 fresh mint sprig
2 ounces bourbon, such as Bulleit
1 ounce maple syrup
1/2 ounce store-bought jalapeno syrup, such as Fire Syrup
Splash of lemon-lime soda
2 to 3 slices jalapeno

Steps:

  • Muddle the mint leaves with the bourbon, maple syrup and jalapeno syrup in a tall pint glass or cocktail shaker.
  • Fill a mint julep glass with crushed ice. Top the glass or shaker with a cocktail strainer, then pour the bourbon mixture over the ice and top with the lemon-lime soda. Slap the mint sprig to release the oils and add it. Add the jalapeno slices directly to the ice and serve.

This is truly heavenly and one of my most requested dishes. This was my beloved Grandmother's dressing recipe. She was one of the world's best cooks. I always triple the recipe, taking a 4 quart dish to the family gathering so there is enough leftover for everyone to take some home, and keeping a 2 quart dish at home for our family.

3 large eggs
2 cups crumbled cornbread
1 1/2 cups dry breadcrumbs
3 cups chicken broth
1/2 cup melted butter
1/2 cup minced onion
2/3 cup thinly sliced celery
1 teaspoon poultry seasoning
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat the oven to 425 degrees.
  • Beat the eggs slightly in a large mixing bowl.
  • Add the remaining ingredients and mix well.
  • Place in a greased 2 quart baking dish, and bake at 425 degrees for 40 to 45 minutes until set and nicely browned.
  • NOTE: The dressing will look very"soupy" when mixed, but this is the secret to its success.
  • It makes a wonderfully moist, rich dressing that you and your family and guests will love--guaranteed!

PEACH FROSTING

Steps:

  • Mix cakes according to the box directions adding the cinnamon and fresh peaches.
  • Bake 4 layers using 9 inch pans sprayed with butter cooking spray.Bake about 25 minutes or until tooth pick inserted comes out clean.When done set aside and make your frosting.
  • PEACH FROSTING: In a medium bowl cream the butter and cream cheese.
  • Add milk and vanilla and add 1 cup of sugar at a time.When you have it as thick as you want add the peach jello and using a mixer mix well.Add more milk if needed.
  • Frost your cake heavy between layers.Besure tho to leave enough for frosting the outside.Cake has to be put in the fridge until ready to serve and put leftovers back in the fridge. ENJOY!!!!!!

Dinah Shore was a Southern Belle from Nashville, Tennessee so you know that her Mama's chicken salad is bound to be a high cholesterol item!! But we just don't worry about that in the South, honey!! When you make yor biscuits with lard, a little extra cream ain't nuthin' to fret about!! I don't know whether my Mama got this from a magazine or one of Miss Dinah's cookbooks, but it "shore" is yummy.My Mama ammended the ingredients somewhat to make it more to her taste. I have included the cooking and chopping times in the prep time, but you can be chopping the veg's while the eggs and the chicken are boiling so it really doesn't take that long to prep. The longest "time" is for the chicken to marinate, but believe me this is worth any amount of time!!!!

8 cooked boneless skinless chicken breasts, cubed
1 cup French dressing
1 cup finely chopped celery
1/4 cup finely chopped green bell pepper

1/2 teaspoon pepper
1/2 cup mayonnaise
1/3 cup unsweetened heavy cream, whipped

2 teaspoons Worcestershire sauce
1 1/2 tablespoons capers, drained

Steps:

  • Marinate the cooked,cubed chicken breasts in the French dressing in the refrigerator for 3 to 4 hours, then drain and discard the French dressing.
  • Combine the cubed chicken, celery, bell peppers, grated onion, chopped boiled eggs, salt and pepper in a large salad serving bowl.
  • Stir gently, but mix well.
  • In another bowl combine the mayonnaise, whipped cream, pecans, Tabasco sauce, Worcestershire sauce and drained capers, mixing well.
  • Add the dressing to the salad and stir gently to mix well.
  • Serve as soon as thoroughly chilled--usually about 20 min.
  • If you want to make this ahead of time, don't add the dressing as the whipped cream will tend to go flat.
  • Mix the dressing up and add just before serving.

2 large cucumbers
2 (8 ounce) packages cream cheese, softened
1 tablespoon chopped frozen chives
1 tablespoon hidden valley ranch dressing mix
2 loaves white bread
1 bunch fresh parsley

Steps:

  • Peel and cut the cucumbers in half lengthwise.
  • Remove the seeds and sprinkle the cavities liberally with salt.
  • Place the cucumbers on a rack in a glass dish, cover, and let drain overnight.
  • The next day rinse the cucumbers to remove excess salt, and press between paper towels to remove any excess moisture.
  • Chop the cucumbers and put into a food processor.
  • Blend for 10 seconds.
  • Chop the cream cheese into cubes, and add to the cucumbers along with the chives and salad dressing powder, and blend until smooth.
  • Cut the crusts from the bread and use a cookie cutter to cut shapes out of each slice.
  • I use a heart-shaped cutter that is 2 1/2 by 2 1/2 inches.
  • You can usually get two sandwiches out of each slice of bread.
  • I freeze the scraps to use for bread crumbs, or I feed them to the birds.
  • Spread the cucumber filling on each slice and place into an airtight container separating layers or sandwiches with waxed paper.
  • Refrigerate for an hour or more.
  • Place on a serving platter and garnish each sandwich with a snippet of fresh parsley.

Not sure where I found this recipe. Probably on the back of a peanut butter jar... Very easy to make and they come out really nice. In my opinion, the peanut butter taste is more subtle (and the cookies are a bit sweeter) than a regular peanut butter cookie.

1 1/4 cups flour
8 ounces white chocolate chips
1 1/3 cups macadamia nuts, chopped

  • Preheat oven to 350°.
  • Beat peanut butter, oil and butter until creamy.
  • Add next six ingredients and beat until blended.
  • Add flour and blend.
  • Fold chocolate and nuts into dough.
  • Place heaping tablespoons of dough onto ungreased cookie sheets about 1 1/2-inches apart.
  • Press down slightly with back of spoon.
  • Bake 10-12 minutes or until done.

I should clean out my "junk" drawer more often because I've discovered some long lost favorite recipes and this is one of them. I think it came from a Land O Lakes pamphlet that I got from the grocery store years ago. These are sometimes called Pecan Pie Bars.

CRUST
1 1/4 cup(s) all purpose flour
1/2 cup(s) butter, softened
1/4 cup(s) sugar
1/4 cup(s) pecans, coarsely chopped
FILLING
3/4 cup(s) dark corn syrup
1/3 cup(s) brown sugar, firmly packed
2 large eggs
3 tablespoon(s) all purpose flour
1 teaspoon(s) vanilla extract
1/2 teaspoon(s) salt
3/4 cup(s) pecans, coarsely chopped

Steps:

  • Heat oven to 350F. Combine 1 1/4 cup flour, butter and sugar in large mixer bowl. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs (1-2 minutes). Stir in 1/4 cup pecans.
  • Press Crust mixture evenly onto bottom of ungreased 8 or 9-inch square baking pan. Bake for 18 to 22 minutes or until very lightly golden brown on edges.
  • Combine all filling ingredients EXCEPT pecans in a small bowl; mix well. Stir in pecans. Spread evenly over hot, partially baked crust. Bake for 20 to 30 minutes or until filling appears set and knife inserted 1-inch from edge comes out clean. Cool; cut into bars.
