I was playing in the kitchen again and this was the creation. My hubby loves it and I can't go home to my family's house without them hounding me to make it....thank goodness it's easy!

2 lbs boneless skinless chicken breasts
1 (46 ounce) can of 100% pineapple juice
2 (12 ounce) cans frozen orange juice concentrate
2 (15 ounce) cans mandarin oranges
1 (20 ounce) can crushed pineapple
2 (20 ounce) cans pineapple chunks
2 large onions
2 large green bell peppers
2 large red bell peppers
2 large orange bell peppers
4 tablespoons ground ginger
salt and pepper
1 (14 ounce) box instant rice

Steps:

  • In a large bowl combine pineapple juice, orange juice, and 3 tablespoons of the ground ginger.
  • Put 1/2 of the liquid in a large zipper seal bag (or split it in two bags if need be). Reserve rest of liquid in bowl or other covered container.
  • Rinse chicken and pierce with a fork in several places of each breast. Place chicken in zipper bag(s)and refrigerate at least 4 hours to overnight (I prefer overnight).
  • Drain the mandarin oranges and put in container with reserved liquid, cover and marinate for the same amount of time as the chicken.
  • Chop peppers and onion.
  • When ready to cook, place chicken in bottom of crock pot, discard the marinade. Layer the onions and peppers on chicken and salt and pepper to taste.
  • Drain pineapple chunks and add fruit to crock pot. Add UNDRAINED crushed pineapple to crock pot as well as the mandarin oranges WITH the liquid.
  • Set crock pot to HIGH and cook 6-8 hours, depending on when the chicken is done.
  • When ready to serve cook rice according to package directions and serve chicken with sauce over the rice. ENJOY!

2 lbs chicken breasts, frozen (4 oz. per person) or 2 lbs thawed chicken breasts (4 oz. per person)
2 (15 1/4 ounce) cans tropical fruit in juice
1 (12 ounce) bottle hawaiian marinade
2 cups rice or 1 lb pasta

Steps:

  • Place chicken in bottom of crockpot.
  • Add tropical fruit and juice of at least 1 can (more won't hurt it), and Hawaiian marinade.
  • Set Crock-pot for 3-4 hours on high, or 6-7 hours on low.
  • Cook rice or pasta while chicken finishes cooking. At least 25 minutes for the rice and 15 for the pasta.
  • Serve with chicken, some fruit, and sauce on top of the rice/pasta.
  • Enjoy!

This is not sweet like other polynesian chicken recipies. The recipe is low in fat and the original recipe came from AHA Meals in Minutes. It felt like it needed something so I made a few tweaks. I spoon the chicken and sauce over rice and cooked veggies like broccoli and zucchini). The sauce is not thick, but the rice soaks it up and it is so flavorful! Delicious and healthy!

4 boneless skinless chicken breasts, halved
6 ounces pineapple juice
3 tablespoons vinegar
3 tablespoons light soy sauce
1 tablespoon fresh ginger, grated
1 -2 garlic clove, minced
1 teaspoon sesame seeds (or more if desired)
1/4 teaspoon crushed red pepper flakes
4 cups rice, cooked
nonstick cooking spray

Steps:

  • Spray inside of slow cooker with non-stick cooking spray.
  • Place chicken on the bottom of the slow cooker. Add all other ingredients into slow cooker, cover.
  • Cook on high heat for 4 - 6 hours (or until chicken is cooked through). As slow cooker temperatutres can vary, you may need to cook for more or less time.
  • Chicken pieces will break apart durring cooking. Spoon chicken and sauce over rice (and veggies if desired).

1 boneless pork shoulder (about 4 lbs)
1 tablespoon dry mustard
1/2 cup soy sauce
1 teaspoon ginger
1/2 cup dry sherry
1 teaspoon thyme
2 garlic cloves, minced

Steps:

  • Place pork shoulder roast in a clear plastic bag; set in a deep bowl.
  • Thoroughly blend together the soy sauce, dry sherry, minced garlic, dry mustard, ginger and thyme.
  • Pour marinade over meat in bag; close.
  • Place the roast in the refrigerator and marinate for 2 or 3 hours or overnight.
  • Transfer the pork roast and marinade to a crockpot.

1 (8 ounce) can pineapple slices in syrup
2 lbs chicken parts
1 (10 1/2 ounce) can chicken broth
1/4 cup vinegar
2 tablespoons brown sugar
2 teaspoons soy sauce
1 garlic clove, minced
1 green pepper, cut in squares
3 tablespoons cornstarch
1/4 cup water

Steps:

  • Drain pineapple and reserve liquid.
  • Put chicken parts in bottom of slow-cooker.
  • Mix together pineapple syrup, chicken broth, vinegar, brown sugar, and soy sauce in a saucepan.
  • Heat until brown sugar dissolves.
  • Pour over chicken.
  • Heat on high for one hour.
  • Add pineapple chunks, garlic and green pepper.
  • Cover and cook on low for 7- 9 hours.
  • Half an hour before serving mix together cornstarch and water and add to the slow-cooker.
