2 pounds 90 percent lean ground beef
1 tablespoon chili powder or taco seasoning
2 teaspoons ground cumin
1 teaspoon kosher salt
1 large egg
3 tablespoons tomato paste
1 cup ground tortilla chips (about 3 cups whole chips)
1 cup grated Cheddar

Steps:

  • Preheat the oven to 375 degrees F. Line 2 rimmed baking sheet with parchment.
  • In a stand mixer fitted with the paddle attachment, combine the beef, chili powder, cumin, salt, egg, tomato paste and tortilla chips and mix on low speed until thoroughly combined. Stir in the cheese with a rubber spatula. Using a 1-ounce portion scoop, form the meatballs. Scoop onto the prepared baking sheets and bake until golden brown and cooked through, 18 to 20 minutes.

1 1/2 lb lean ground beef
1 pkg taco seasoning mix (taco bell, ortega, etc.)
1 green onion, finely diced
1 clove garlic, minced
2 eggs
1 block of cheddar cheese cut into small cubes

Steps:

  • 1. Preheat the oven to 425°F. Beat eggs and mix all ingredients except the cheese together. Mold a Tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat. Place on edged cookie sheet (sprayed with PAM) and bake at 425°F for 7 - 10 minutes or until meat is done and cheese has melted. Serves 10-15 people. Less than 1 carb per meatball.

1 pound ground beef
1 cup chopped onion
¼ cup shredded Cheddar cheese
¼ cup crushed plain tortilla chips
¼ cup salsa
1 egg
1 (1.25 ounce) package taco seasoning mix

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.
  • Mix ground beef, onion, Cheddar cheese, tortilla chips, salsa, egg, and taco seasoning together in a bowl.
  • Form 1-inch balls from the mixture and place into the prepared dish so they aren't touching.
  • Bake in the preheated oven until browned and no longer pink in the centers, about 30 minutes. Let stand for 5 minutes and serve.

1/4 cup better'n eggs egg substitute (can use all white)
1/2 cup all-bran cereal, ground up

  • Spray pan with PAM and pan fry over low heat, browning all sides.
  • Cover and let cook for 10-15 minutes until cooked all the way through.

Back when I was "Beachin'" this was probably one of my favorite recipes. Very easy to make and such a nice change from a piece of meat and veggies. This is Phase 1 appropriate, and tastes very good topped with shredded 2% cheddar, a dollop of plain yogurt, and avocado slices. Even non-dieters will enjoy this thick and hearty soup. NOTE: To stay true to South Beach be sure and buy canned kidney beans with no added sugar and taco seasoning that is South Beach approved. I used Old El Paso.

1/2 lb extra lean ground beef
1/4 cup chopped onion
1 1/2 cups water
1 (16 ounce) can diced tomatoes with juice
1 (15 ounce) can kidney beans, with liquid
1 (8 ounce) can tomato sauce
2 tablespoons taco seasoning
2% cheddar cheese, shredded (optional)
plain yogurt (optional)
avocado, slices (optional)

Steps:

  • Cook ground beef and onion in medium saucepan over medium heat until meat is browned and onion is tender. Drain.
  • Mix in water, tomatoes, kidney beans, tomato sauce and taco seasoning. Bring to a boil.
  • Cover, reduce heat, and simmer for 30 minutes.

1 lb ground turkey (93/7 recomended)
1 bunch lettuce
1 -2 garlic clove, chopped (optional)
1 tablespoon canola oil or 1 tablespoon olive oil
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons cumin
1 teaspoon salt
1 teaspoon pepper
chopped onion, and
chopped cilantro
shredded low-fat cheddar cheese or mozzarella cheese
light sour cream

Steps:

  • Mix to combine spices for the taco seasoning. Heat skillet on medium heat and add oil. Add turkey and cook over medium to medium high heat while breaking up the meat with a spatula. After 3-4 minutes add chopped garlic and taco seasoning.
  • Continue to cook until turkey is done.
  • Usually you will want to use half the taco seasoning from the above recipe and save the remaining for another taco night. For stronger taco flavor use more seasoning.
  • To prepare tacos, use leaf lettuce as a taco shell and add condiments as you choose.
