When you are "doing" south Beach and dying for a crispy cracker this saves t he day. Plus the flax is so good for you!!

- Mix flax and water or broth.
- add spices/ salt
- Spread on parchment paper.
- Microwave 2-3 minutes.
- Top w/ hummus or dip or cheese.

These are so tasty and very easy to make. And you can eat them as early as phase II on the SBD, but they'd be a nice addition to anyone's breakfast table. Oh, and this recipe doubles very well to freeze.

Steps:
- Preheat oven to 425°F; spray 12 cup non stick muffin pan with cooking spray or line with paper baking cups.
- In a small bowl, combine oats and buttermilk. Set aside for 30 minute.
- In a medium bowl, combine flour, baking powder, soda, cinnamon and salt. Stir in walnuts.
- In a large bowl, stir together brown sugar substitute, egg substitute, oil and vanilla until well blended.
- Stir oat mixture into the egg mixture, then stir flour mixture into that. stir until all ingredients are just combined. Do not over mix.
- Divide batter evenly between 12 muffin cups.
- In a small bowl, mix topping ingredients together. Spoon over muffin batter.
- Bake for 11 to 15 minutes.
- Transfer pan to a rack to cool for 5 minutes; remove from pan and allow to cool completely.

FLAX MEAL CINNAMON MUFFINS - SOUTH BEACH
This is a good way to introduce flaxmeal into your diet. These muffins are also Phase II appropriate for the South Beach Diet, just be sure to count this toward your daily nut/seed allowance. Believe me, when you have been craving bread, these muffins taste like heaven!

Steps:
- Preheat oven to 350.
- Beat together eggs, oil, syrup, water and vanilla. Set aside.
- In small bowl, combine flaxmeal, baking soda, baking powder, cinnamon and salt.
- Slowly stir dry ingredients into egg mixture. Let stand 5 minutes.
- Spoon batter into 10 well-greased muffin tins.
- Bake at 350 for 12-15 minutes or until muffins are lightly browned and seem set to the touch.
- Remove from muffin pan immediately and allow to cook on rack.
- Store in refrigerator. (Can be frozen if desired.).
