CHEESY FRITTATA - SOUTH BEACH

This recipe is based on the recipe provided in the first South Beach Diet book. I modified it to suit our tastes. It's appropriate for any phase of the diet.

2 slices turkey bacon
2 teaspoons margarine spread (like Smart Balance)
1/2 cup sliced onion
1/2 cup sliced red bell pepper
1/2 cup sliced zucchini
2 plum tomatoes, diced
1 tablespoon fresh basil, chopped
1 pinch ground black pepper
1/2 cup liquid egg substitute
1/2 cup 1% low fat cottage cheese
1/4 cup 1% low-fat milk
1 ounce lowfat mozzarella cheese

Steps:

  • Cook turkey bacon per directions on package until crisp. Set aside. Crumble when cool.
  • Coat an ovenproof 10" skillet with cooking spray. Melt the spread in the skillet. Add the onion, bell pepper, and zucchini, and saute over medium-low heat until the vegetables are tender, 2 - 3 minutes.
  • Add the tomatoes, basil, and black pepper to the skillet and stir to combine. Cook until the flavors are blended, 2 - 3 minutes, and remove from the heat.
  • Preheat the broiler.
  • In a blender, combine the egg substitute, cottage cheese, and milk and process until smooth.
  • Pour the egg mixture over the vegetables and return to the heat source. Sprinkle the crumbled turkey bacon over the top. Cover and cook on medium-low heat until the bottom is set and the top is still slightly wet.
  • Transfer the skillet to the broiler and broil until the top is set - 2-3 minutes.
  • Sprinkle with the cheese and broil until the cheese melts.
  • Serve while hot.

Smoked Salmon Frittata image

I don't eat seafood anymore, but this was one of my favourite breakfast recipes when I did. I adapted this from one of my parents' South Beach Diet books.

8 stalks fresh asparagus
1 tablespoon olive oil
1/2 onion, chopped
1/4 cup dry-packed sun-dried tomato
2 ounces smoked salmon, cut into bite-sized pieces
2 eggs
1/4 cup water
3 tablespoons nonfat dry milk powder
1/4 teaspoon chopped fresh marjoram
1 pinch fresh ground black pepper
sour cream (optional)
salmon roe (optional)
chives (optional)

Steps:

  • Boil 1 inch of water in a large skillet. Add the asparagus and cook, uncovered, until tender-crisp.
  • Grease an oven-proof 8-inch skillet and place over medium-low heat until hot. Add the olive oil and saute the onion until soft. Add the asparagus and sun-dried tomatoes. Add the smoked salmon and remove from the heat.
  • Preheat the broiler.
  • Combine the eggs, water, dry milk, marjoram, and pepper, mixing well with a whisk or fork. Pour over the salmon mixture. Cover and cook over medium-low heat for 7 minutes or until the bottom is set and the top is slightly wet.
  • Place the skillet under the broiler 4-6 inches from the heat source until the top of the frittata is puffed and set, 2-3 minutes. Top with sour cream, salmon roe, marjoram, and chives, if desired.
  • Slice into wedges and serve immediately.

LIGHT SPINACH FRITTATA WITH SALSA



Light Spinach Frittata With Salsa image

Made this for breakfast today and it was SO filling and wonderful. The eggs are very creamy and flavorful when cooked in this way. This is a phase one South Beach Diet recipe, but you would never guess it! You can also make your own salsa.

Number Of Ingredients 9

1 tablespoon extra virgin olive oil
1 small onion, sliced (I diced mine)
2 -4 garlic cloves
1 (10 ounce) package frozen spinach, thawed and well-drained
2 large eggs
3 egg whites
1/3 cup fat-free evaporated milk (sold in a can)
1/2 cup shredded light cheese (I used light Jarlsberg, can use any reduced-fat cheese)
salsa (for serving)

Steps:

  • Preheat oven to 350 degrees F.
  • Heat oil in a 10" nonstick skillet over med heat.
  • Add onion and garlic and cook until tender, about 3 minutes.
  • Stir in spinach.
  • Reduce heat to low.
  • Beat eggs and milk until frothy, and pour egg mixture over spinach in skillet.
  • Cook for 5-7 minutes, till egg mixture is cooked on bottom and eggs on top are almost set.
  • Sprinkle with cheese.
  • Bake in oven till eggs are set and cheese has melted, 5-10 minutes.
  • Serve with salsa of your choice.
