South Beach Style Tuna Salad With Low Fat Cilantro Mayo image

I've been doing the South Beach Diet for a week now and created this scrumptious salad today. It was so yummy that I know I'll eat this for a long time. It is a must for cilantro lovers!

1 (3 ounce) package of fresh packed albacore tuna (water packed not oil packed) or 1 (3 ounce) package light chunk tuna (water packed not oil packed)
1 garlic clove, crushed
1/4 cup chopped fresh cilantro
1 1/2 teaspoons reduced-fat mayonnaise or 1 1/2 teaspoons light mayonnaise
1 teaspoon spicy brown mustard
1 tablespoon fresh lemon juice
1 -2 dash Frank's red hot sauce
1/4 teaspoon creole seasoning (optional)
salt & fresh ground pepper
1 cup mixed salad green
6 cherry tomatoes, halved
1 -2 teaspoon balsamic vinegar

Steps:

  • Place salad greens in bowl and top with tomatoes.
  • In a separate bowl, mix tuna, garlic, cilantro, mayo, brown mustard, lemon juice, hot sauce and creole seasoning (if desired), salt and pepper to taste.
  • Mix well.
  • Mound tuna mixture on top of salad greens.
  • Drizzle with balsamic vinegar and serve.

This is a beautiful and healthful salad based on the one found in South Beach Diet Cookbook. I don't use fat-free or margarine products -- so substitute them back in for the real deal in Phase 1!

2 bunches watercress, tough ends trimmed
1/4 cup water
1 garlic clove, thinly sliced
1 (12 ounce) can tuna, packed in water, drained and flaked
1/2 cup canned cannellini beans, rinsed and drained
1/4 sweet white onion, finely chopped
1/2 cup roasted red pepper, chopped
3 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon red wine vinegar
1 1/2 teaspoons capers, rinsed and drained
salt
ground black pepper

Steps:

  • Coarsely chop the watercress stems until you have 1/2 cup. Rinse and dry the remaining watercress sprigs and set aside.
  • In a small saucepan, combine the chopped stems, water, and garlic. Bring to a boil over medium-high heat. Reduce the heat to low. Cover and simmer until the watercress stems are bright green, about 1 to 2 minutes. Drain and place in a large bowl. Add the tuna, beans, onion, and roasted pepper to the bowl and toss to blend.
  • In a blender or food processor, combine the mayonnaise, sour cream, vinegar, capers, and salt and black pepper to taste. Puree until smooth.
  • Serve the tuna mixture on the reserved watercress springs. Drizzle with the dressing.

6 oz canned water packed tuna
1/3 c chopped cucumber
1/3 c chopped tomato
1/3 c chopped avocado
1/3 c chopped celery
1/3 c chopped radishes
1 c chopped romaine lettuce
DRESSING:
4 tsp extra-virgin olive oil
2 Tbsp fresh lime juice
2 clove garlic, finely chopped
1/2 tsp black pepper

Steps:

  • 1. To make the salad: Layer the tuna, cucumber, tomato, avacado, celery, radishes, and lettuce in a decorative glass bowl.
  • 2. To make the dressing: Mix the olive oil, lime juice, garlic, and papper. Drizzle over the salad.
