5 cups uncooked egg noodles
1 cup frozen peas
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
1 cup fat-free sour cream
2/3 cup grated Parmesan cheese
1/3 cup 2% milk
1/4 teaspoon salt
2 cans (5 ounces each) light tuna in water, drained and flaked
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
TOPPING:
1/2 cup soft bread crumbs
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions for al dente, adding peas during the last minute of cooking; drain., Meanwhile, in a large bowl, combine soup, sour cream, cheese, milk and salt; stir in tuna, onion and pepper. Add noodles and peas; toss to combine., Transfer to an 11x7-in. baking dish coated with cooking spray. In a small bowl, toss bread crumbs with melted butter; sprinkle over top. Bake, uncovered, 25-30 minutes or until bubbly.

2 cups dry elbow macaroni
2 (5 ounce) cans albacore tuna, in water. Undrained
8 ounces sour cream
1 cup vegetables, we use frozen corn
1 cup sharp cheddar cheese
1 (10 ounce) can cream of mushroom soup
garlic powder
cracker, if desired

Steps:

  • Pre-heat oven to 375 degrees.
  • Cook pasta until al dente.
  • Combine tuna, sour cream, soup, veggies, and garlic in a pot and warm on stove top over low heat.
  • Combine tuna mixture with cooked, drained pasta and pour into a greased 9x12 pan.
  • Top with cheese and crackers and bake for 25 minutes.
  • Mmmm, good.

This isn't your Grandma's tuna casserole, but it is sure to please everybody in the family.

3 cups uncooked egg noodles
2 (5 ounce) cans tuna, drained
½ cup chopped celery
⅓ cup chopped green onions
⅓ cup sour cream
2 teaspoons prepared mustard
½ cup mayonnaise
½ teaspoon dried thyme
¼ teaspoon salt
1 small zucchini, sliced
1 cup shredded Monterey Jack cheese
1 tomato, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • Bring a large pot of salted water to a boil, add noodles, and cook until al dente; drain.
  • In a large mixing bowl, combine noodles, tuna, celery, and green onion. Stir in sour cream, mustard, and mayonnaise. Season with salt and thyme. Spoon 1/2 of the noodle mixture into the prepared casserole dish. Arrange a layer of zucchini over the mixture. Top with the remaining noodles, followed by a layer of zucchini. Top the entire casserole with cheese.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly. Sprinkle the casserole with tomatoes before serving.

6 ounces wide egg noodles
3 stalks celery, chopped
1 large onion, finely chopped
1 tablespoon fresh minced garlic (optional)
3 -4 tablespoons butter
2 (6 ounce) cans white flaked canned tuna, very well drained
1 cup frozen peas (can use more or less peas)
1 cup half-and-half cream or 1 cup full-fat milk
1/2 cup sour cream
1 (10 ounce) can cream of mushroom soup, undiluted
1 1/2 cups white cheddar cheese, shredded
3 -4 tablespoons grated parmesan cheese (optional, can use more or less)
salt and pepper
1/2 teaspoon dried dill
1/4-1/2 teaspoon Old Bay Seasoning
25 -30 Ritz crackers, coarsley crumbled (you can use more or less crackers)
1/4 cup melted butter, for drizzling
paprika

Steps:

  • Set oven to 350 degrees F.
  • Butter a 13 x 9-inch baking dish.
  • Cook egg noodles in boiling salted water until firm-tender; drain.
  • In a small skillet saute the onions with celery and garlic in butter or margarine until soft (about 3 minutes).
  • In a large bowl combine cooked noodles, sauteed veggies, shredded cheese, Parmesan cheese, tuna, half and half cream, peas, mushroom soup, sour cream, salt, pepper, and Old bay seasoning; mix well to combine.
  • Transfer the mixture into the baking dish.
  • Sprinkle the cracker crumbs over the mixture.
  • Drizzle the melted butter over the crumbs, then sprinkle lightly with paprika.
  • Bake for about 30-35 minutes, or until the top is browned and the casserole is bubbly.
