I spent a year searching for new and different beef recipes. This is the dish my family raves about, and they agree that it's a nice change from regular Swiss steak. -Barb Benting, Grand Rapids, Michigan

1/3 cup plus 3 tablespoons all-purpose flour, divided
1-1/2 teaspoons each salt, pepper, paprika and ground mustard
3 pounds beef top round steak, cut into serving-size pieces
3 tablespoons canola oil
3 tablespoons butter
1-1/2 cups water
1-1/2 cups sour cream
1 cup finely chopped onion
2 garlic cloves, minced
1/3 cup soy sauce
1/4 to 1/3 cup packed brown sugar
Additional paprika, optional

Steps:

  • In a shallow bowl, combine 1/3 cup flour, salt, pepper, paprika and ground mustard; dredge the steak. , In a large skillet, heat oil and butter. Cook steak on both sides until browned. Carefully add water; cover and simmer for 30 minutes., In a bowl, combine the sour cream, onion, garlic, soy sauce, brown sugar and remaining flour; stir until smooth. Transfer steaks to a greased 2-1/2-qt. baking dish; add sour cream mixture. , Cover and bake at 325° for 1-1/2 hours or until tender. Sprinkle with paprika if desired.

Make certain that you have a large oven-proof skillet for this recipe, or you can use a large electric frypan. You can also make this recipe using thin boneless pork chops or chicken breasts.

2 lbs top round steaks
3 tablespoons flour
2 teaspoons seasoning salt (can use white salt)
1/2 teaspoon cayenne pepper (can use more)
black pepper (optional and to taste)
1/2 teaspoon paprika
1/2 teaspoon mustard powder
1/4 cup vegetable oil
2 tablespoons butter
2 tablespoons oil
1 onion, chopped
1 tablespoon fresh minced garlic (or to taste)
3/4 cup water
3 tablespoons soy sauce
3 tablespoons brown sugar
1 cup sour cream
1/4 cup grated parmesan cheese

Steps:

  • Set oven to 300 degrees.
  • Cut the steaks into serving-size pieces.
  • Lightly dust the beef pieces with flour, then pound with a meat mallet until thin and flattened.
  • In a small cup mix together salt, cayenne, black pepper (if using) paprika and dry mustard powder, then season the flattened beef with the spice mixture.
  • Heat oil and butter in a large oven-proof skillet over medium heat.
  • Add in the steaks and lighty brown/sear on one side, turn over and brown on the other side; transfer to a plate.
  • Add in onions and garlic; saute for about 3 minutes, scraping up any browned bits on the bottom of the skillet with a wooden spoon.
  • In a bowl mix together sour cream, water, soy sauce and brown sugar, then add to the skillet; mix to combine with the onion/garlic mixture.
  • Return the steaks back to the skillet.
  • Sprinkle lightly with Parmesan cheese.
  • Cover the skillet and bake in oven at 325 degrees for about 30-45 minutes, or until tender.

VENISON SWISS STEAK IN SOUR CREAM

Can substitute any red meat. The directions call for baking in oven but I like to simmer most of my recipes on top of the stove for 2-3 hours. It is much easy to taste the meat to see if it's tender. I also like to add broccoli to this sometimes.

2 lbs venison sirloin or 2 lbs round steaks, 1 inch thick
1/4 cup bacon fat or 1/4 cup other fat
1 garlic clove, crushed
1/4 cup onion, minced
2 cups water
1 bay leaf
1 cup tart fruit juice, cranberry or 1 cup apple
8 peppercorns
1 teaspoon salt
1 tablespoon butter
4 tablespoons flour
3/4 cup sour cream

Steps:

  • Cut venison into 2 inch pieces.
  • Melt fat in heavy skillet. Add meat and garlic and saute until brown on all sides.
  • Arrange meat in 2 quart casserole.
  • Put onions in skillet and cook 2 minutes in remaining fat.
  • Add to onions the water, juices, bay leaf, peppercorns and salt.
  • Pour this mixture over venison in casserole.
  • Bake in slow oven 325 degrees for 1-2 hours or until meat is tender.
  • Melt butter in fry pan, stir in flour. Stir constantly until smooth.
  • Add sour cream and cook at low temperature for five minutes.
  • Pour over meat in casserole.
  • Serve immediately with buttered noodles or plain noodles.

1 1/2 lbs cube steaks
1/4 cup self rising flour
3 tablespoons vegetable oil
1 medium onion, chopped
1 (14 ounce) can tomatoes, petit diced
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup sour cream

Steps:

  • Dredge steak pieces in flour. In a large skillet, brown steak pieces in vegetable oil. Remove and place in bottom of crock pot.
  • In a medium size bowl mix all remaining ingredients EXCEPT sour cream. (Do not drain tomatoes.) Pour mixture over steak in pot.
  • Turn crock pot on high for 1st hour. Turn to low for remaining 3 to 4 hours.
  • Mix in sour cream during last 30 minutes of crock pot cooking time.
  • Note: If thicker gravy is desired: In a small bowl mix together 1 tablespoon cornstarch with 2 tablespoons of cold water and mix into pot jucies 5 minutes before serving.
  • Wonderful served over mashed potatoes!

4 tablespoons flour
2 lbs swiss steak
3 tablespoons butter
2 tablespoons onions (chopped)

1/2 cup water
1 teaspoon beef bouillon
1 cup water
1 cup sour cream

Steps:

  • Mix salt and pepper with the flour and pound it into the steak.
  • Brown the steak in the butter.
  • Add onion, tomato pureé and some water and bouillon.
  • Cover and simmer 1 hour over low heat, or bake 1 hour at 250 degrees fahrenheit in a preheated oven.
  • Add sour cream and mix well.

1/4 cup all-purpose flour
1/2 tsp salt
1/4 tsp black pepper
2 lb beef bottom round or top round steak, cut into 4 equal portions
3 Tbsp unsalted butter
1/2 small onion, chopped
3 Tbsp tomato puree
1 tsp dill weed
1 tsp paprika
1/2 tsp ground mustard
1 tsp beef bouillon granules (or 1 beef bouillon cube)
1 1/2 cups water
1 cup sour cream

Steps:

  • 1. Mix flour, salt and pepper together. Dredge the beef in the seasoned flour.
  • 2. Heat the butter in a large skillet, and brown the steak in the melted butter, about 3 to 4 minutes each side.
  • 3. Add onion, tomato pureé, dill weed, paprika, ground mustard, beef bouillon, and 1 cup water. Bring to a boil.
  • 4. Once it reaches a boil, reduce heat to a simmer. Cover skillet, and simmer for 1 to 1 1/2 hours. (Check the water level occasionally, and add about 1/4 to 1/2 cup water as needed if liquids begin to boil away).
  • 5. Stir sour cream into the pan sauce, cover, and simmer 1/2 hour longer.
