Time 1h20m

Number Of Ingredients 14

1/4 cup mayonnaise
1/4 cup sour cream
3/4 cup ranch salad dressing (we like Hidden Valley Ranch)
1 tbsp or more as needed of milk
salt and fresh ground pepper to taste
6 cups cooked noodles (about 3 1/2 cups dried pasta)
6 slices cooked bacon (crumbled)
1/2 cup frozen peas
1/2 cup chopped broccoli florets
1 stalk of celery (chopped into small pieces)
1/2 cup halved cherry tomatoes
1/4 cup finely minced bell pepper (I used red and yellow)
2 tbsp minced green onion
1 cup cubed cheddar cheese

Steps:

  • Cook the pasta according to package directions. Rinse with cold water and set aside.
  • While the pasta is cooking, prepare your salad dressing and ingredients.
  • To make the dressing, cream together the mayonnaise, sour cream, ranch dressing, milk and salt and pepper. I like to use a hand blender to do this.
  • Chop the cooked bacon, cheese, broccoli, tomatoes, onions, celery and bell pepper.
  • In a large bowl mix together the noodles, bacon, cheese, vegetables, and frozen peas with the dressing.
  • Let the salad rest for 1 to 2 hours. Make sure to stir it before serving.
  • Then serve and enjoy!

Time 15m

Number Of Ingredients 8

1 pound elbow macaroni pasta
2 medium diced carrots (peeled and finely chopped, about 3/4 cup)
2 celery stalks (finely chopped, about 3/4 cup)
1/4 red onion (finely chopped, about 1/4 cup)
1 cup frozen peas
2 packets Hidden Valley Ranch Seasoning Mix
1-1/2 cups plain greek yogurt
1 cup milk

Steps:

  • In a large mixing bowl, make the ranch dressing by combining the ranch seasoning mix, greek yogurt and milk. Whisk to combine. Place the mixing bowl in the fridge while you make the rest of the pasta salad.
  • Cook the elbow macaroni in salted boiling water according to package instructions. Drain and add to the large mixing bowl with the ranch dressing while the pasta is still warm. Add in the carrots, celery, onion and frozen peas. Toss to combine. It will look a little too saucy at first, but the warm noodles will absorb some of the dressing. Refrigerate for at least 2 hours until it is cooled. After it has cooled, toss it a few more times to evenly distribute the dressing. If needed, add in a little more greek yogurt and milk if the noodles absorbed too much of the dressing.
  • Serve cold or at room temperature. Will keep refrigerated in an airtight container for 1 week.

RANCH PASTA SALAD

Ranch Pasta Salad image

Ranch Pasta Salad is the best pasta salad side dish! Rotini noodles, cucumber, tomato, broccoli, parmesan cheese with an easy dressing of ranch. Everyone will love this pasta salad!

Provided by Jessica

Categories     Salad

Time 23m

Number Of Ingredients 17

1 box (12 oz) tricolor rotini pasta
1 cup chopped broccoli
1 cup chopped cucumbers ((peeled & seeded))
1 cup chopped tomatoes
1/2 cup shredded parmesan cheese
1¼ cups ranch dressing ((more or less to taste))
1/2 cup mayonnaise
1/2 cup buttermilk
1/4 cup sour cream
½ teaspoon dried parsley
½ teaspoon dried dill weed
½ teaspoon dried chives
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon worcestershire sauce
¼ teaspoon salt
⅛ teaspoon pepper

Steps:

  • Cook pasta according to package instructions. Remember to salt the pasta water so the noodles have some flavor. I use about 1 teaspoon salt. Drain the pasta and rinse under cold water so pasta can cool.
  • In a mixing bowl combine the cooled pasta, broccoli, cucumber, tomatoes, and parmesan cheese. Stir. Add ranch and stir again to coat the noodles and veggies in the ranch.
  • Serve right away or let it refrigerate for 1-2 hours before serving. Pasta salad tends to dry out in the fridge so don't leave it in there too long before serving. If needed, add some additional dressing and give it a good stir to moisten it back up.
  • ** If you are making the homemade ranch dressing, I would suggest making it before you make the salad so it has plenty of time to refrigerate and get cold. Combine all the ranch dressing ingredients into a small bowl and stir with a wire whisk. It makes just enough for the salad. For leftovers, I just use store-bought ranch dressing to moisten it back up.

CREAMY RANCH PASTA SALAD

Creamy Ranch Pasta Salad image

Maybe you bought some celery for snacking, or maybe you're cooking with it. Either way, don't toss those tender celery leaves. Instead, reserve them and make this creamy pasta salad. Ranch dressing, carrots and celery are natural dance partners-and that's why we combined them in a singularly tasty salad. It starts with a simple homemade dressing, which beats store-bought every day.
