The popular "Magnolia Table" cookbooks by Joanna Gaines are full of Texas classics like king ranch, chicken spaghetti and this creamy version of chicken enchiladas. The combination of tart salsa verde (which has tomatillos and green chiles) with cream and melted cheese makes it special; don't use red enchilada sauce here. The cream of chicken soup mixed with the chicken meat makes a super-rich filling, but you can absolutely use an additional 8 ounces of sour cream instead if you prefer.

2 (10-ounce) cans mild green enchilada sauce
1 (10-ounce) can condensed cream of chicken soup
1 (8-ounce) container sour cream (1 cup)
4 cups shredded meat from 1 store-bought rotisserie chicken
1 (4-ounce) can diced green chiles
1 (14-ounce) bag grated mozzarella cheese (about 3 1/2 cups)
10 (8-inch) soft flour tortillas
1 tomato, chopped
1/2 cup chopped fresh cilantro
1 lime, cut into wedges
Cooked rice (preferably Mexican rice) and seasoned beans (preferably charro beans), warmed, for serving (optional)

Steps:

  • Position an oven rack in the top third of the oven and heat the oven to 350 degrees. Coat a deep 9-by-13-inch baking dish with cooking spray.
  • In a large bowl, whisk together the enchilada sauce, condensed soup and sour cream. Spread 1/2 cup in the baking dish; set aside the remaining 3 1/2 cups creamy enchilada sauce.
  • In a medium bowl, combine the chicken and chiles (including any liquid from the can); set aside.
  • Sprinkle about 2 heaping tablespoons mozzarella on a tortilla, then add a heaping 1/3 cup of the shredded chicken and chiles. Tightly roll up the tortilla and place it seam side down in the prepared baking dish. Continue filling and rolling the remaining tortillas with 2 tablespoons mozzarella and a heaping 1/3 cup chicken mixture, placing the tortillas in the baking dish as they are filled, pushing the rolled tortillas as needed to fit in a single layer.
  • Pour the reserved creamy enchilada sauce over the filled tortillas. Bake for 20 minutes. Remove from the oven and sprinkle the remaining mozzarella on top. Bake until the cheese is melted, about 15 minutes. If you'd like it to be a bit browner in spots, you can pop it under the broiler for another minute or two.
  • Sprinkle enchiladas with tomato and cilantro and pass with lime wedges for squeezing on top. Serve enchiladas with rice and beans, if desired. Store leftovers in a covered container in the refrigerator for up to 4 days; reheat in a 300-degree oven.

1 ½ cups shredded Cheddar cheese
1 onion, chopped
12 (10 inch) flour tortillas
1 (10.75 ounce) can condensed cream of chicken soup
1 (3 ounce) can chopped green chiles, undrained
1 (8 ounce) container sour cream
½ cup shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Place chicken breast into skillet and cook and stir until no longer pink in the center, about 10 minutes. Divide chicken, 1 1/2 cups Cheddar cheese, and onions evenly among the tortillas then roll up each tortilla and place seam side down in a 9x13 inch baking pan.
  • Heat the cream of chicken soup and green chiles in a saucepan over medium heat. Stir in sour cream. Continue stirring until heated though, about 10 min. Pour sauce over tortillas and sprinkle remaining Cheddar cheese on top. Bake in the preheated oven until sauce is bubbling and the Cheddar cheese is melted, about 25 minutes.

1 cup sour cream
2 (7 ounce) cans jalapeno salsa
2 (7 ounce) cans prepared green chile salsa

Steps:

  • To Make Sour Cream Mixture: In a blender or food processor, puree cilantro, sour cream, jalapeno salsa and 1/2 can of the green chile salsa. Set aside.

Steps:

  • In a frying pan, cook chicken and onion together in oil over medium-high heat until chicken is just done.
  • Divide cooked chicken evenly between 8 tortillas; add 1 1/2 tablespoons cheese to each tortilla.

3 boneless skinless chicken breasts (cooked and shredded)
1/2 teaspoon chili powder
2 1/2 cups shredded Monterey Jack cheese (divided)
8 soft flour tortillas
3 Tablespoons butter
3 Tablespoons flour
2 cups chicken broth
1 cup sour cream
1 (4 ounce) can diced green chilies
1 teaspoon dried cilantro
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees. Grease a 9 x 13 inch pan using non-stick cooking spray.
  • Mix cooked chicken, chili powder (optional) and 1 cup of cheese together. Roll up in tortillas and place in pan.
  • In a medium sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.

Love this recipe!!! This is a combination of recipes that Dh and I came up with. It's my filling recipe and his sauce recipe. This looks like a lot of work, but really it's not. I usually make the filling up ahead of time and then all I have to do is roll them and make the sauce. Serve with black beans and spanish rice! Enjoy!!

2 cups rotisserie-cooked chicken
2 poblano peppers, roasted and chopped
1 red onion, chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
2 teaspoons chili powder
1 cup monterey jack cheese, shredded
10 soft taco-size flour tortillas
1/4 cup green onion, finely sliced
1 large shallot, finely minced
2 garlic cloves, minced
1 -2 serrano peppers (optional) or 1 -2 jalapeno pepper, minced (optional)
2 tablespoons butter
1/2 teaspoon cumin
1/4 teaspoon coriander
1/2 teaspoon garlic powder
1/4 teaspoon white pepper
2 tablespoons flour
8 ounces sour cream
2 cups chicken broth

Steps:

  • To roast the peppers: Cut poblano peppers in half, remove all seeds and stem. Roast poblano peppers at 450 degrees until skin begins to blister and turn black in spots, this should take about 10-15 minutes. ***I save the plastic produce sack the peppers came in and when they come out of the oven, I place them in the sack and seal the sack. Let sit 5-10 minutes. The steam from inside will loosen the black skin. Pick what you can of the black parts off, then chop the peppers.
  • Combine the first 8 ingredients in a bowl. Set aside.
  • To make the sour cream enchilada sauce: Saute shallot, garlic and peppers in butter over medium heat in a large skillet until veggies soften. Add spices. Cook for another minute.
  • Combine sour cream and flour well. Add to skillet along with chicken broth. Wisk to combine. (It'll look a little funny for a minute, but don't worry!) Bring mixture to boil. Reduce heat, wisk and simmer until sauce is thick and creamy.
  • Add 3/4 cup of enchy sauce to the filling mixture. Combine well.
  • In a greased 13x9 casserole, coat the bottom of dish with 1/2 cup of enchy sauce.
  • Place 1/4 cup of filling down the center of each tortilla. Roll up and place seam side down in casserole. Repeat with remaining tortillas and filling. Top casserole with remaining enchy sauce.
  • Bake at 375 degrees for 20 minutes or until warm and bubbly!
  • Garnish with green onions.

2 portabella mushrooms
1/2 yellow onion
1/2 red bell pepper
4 C spinach

S + P to taste

Steps:

  • Mix sour cream and enchilada sauce together in bowl. set aside. Brush Mushrooms and Onion and Pepper with oil and grill on high until grill marks appear and veggies are cooked through, turning once. Set aside. Saute Spinach with garlic in oil. Set aside. Pour 1/2 of sauce mix in bottom of a glass dish. Divide all fillings equally, place in center of tortilla and add a dash of ground cumin. Add 1/2 the cheese. Roll up and place seam side down in dish. Top with remaining sauce. Bake at 350 for 20 min. Top with remaining cheese and broil for 3-5 min. Top with fresh cilantro and serve w/ lime wedge. 1 (1 1/4 ounce) packet taco seasoning
1 (4 ounce) can diced green chilies
16 ounces sour cream
2 (10 1/2 ounce) cans cream of chicken soup
10 flour tortillas
1 cup cheddar cheese, shredded
salsa (optional)

Steps:

  • Brown meat, then drain grease.
  • Add taco seasoning and ½ green chilies.
  • Combine sour cream, soup, and other ½ chilies in a saucepan and heat through.
  • Pour enough soup mixture into a 9 x 13" pan to coat bottom.
  • Heat tortillas 30 seconds in the microwave.
  • Fill tortillas with meat mix, wrap, and place in pan.

This is a weekly request at my house. These enchiladas have a white creamy sauce instead of the traditional tomato based sauce. I've been asked for this recipe over and over again, so I thought I would post it. I love Mexican foods, and I think this is a wonderful dish. I hope you do too!

1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
1 (10 3/4 ounce) can chicken broth, undiluted
3/4 cup water
1 (8 ounce) carton sour cream
4 canned jalapeno peppers, seeded and chopped
12 corn tortillas
vegetable oil
1 cup chopped cooked chicken
2 1/2 cups shredded monterey jack cheese, divided
1 1/4 cups chopped onions
1 large tomatoes, finely chopped
1/4 cup tomato juice
1/2 teaspoon salt

Steps:

  • Melt the butter/margarine in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add chicken broth and water; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in sour cream and 2 chopped jalapeno peppers. Pour half of the sour cream sauce into a lightly greased 13 x 9 x 2 inch baking dish. Set aside dish and remaining sour cream sauce.
  • Fry tortillas, one at a time, in 2 tablespoons oil in a medium skillet 5 seconds on each side or just until tortillas are softened; add additional oil, if necessary. Drain on paper towels. If you'd like to cut calories, you can soften the corn tortillas in water. Just bring water to a simmer in a skillet. Then dip each tortilla in the water, one at a time, for 1 to 2 seconds on each side or just until softened.
  • Place 1 tablespoon each of chicken, cheese, and onion on each tortilla; roll up tortillas, and place, seam side down, in reserved baking dish. Pour remaining sour cream sauce over top. Bake, uncovered, at 425 degrees for 20 minutes. Sprinkle remaining cheese on top; bake an additional 5 minutes or until cheese melts. Serve with enchilada relish, below:.
  • Combine 1 large tomato (finely chopped), 1/2 cup finely chopped onion, 2 seeded and chopped jalapeno peppers, 1/4 cup tomato juice, and 1/2 tsp salt. Stir well and chill. Serve over the Chicken Enchiladas with Sour Cream.

1 tablespoon vegetable oil
1 clove garlic, minced
1 onion, chopped
1 jalapeno pepper, seeded and minced
1 tablespoon all-purpose flour
1 cup chicken stock
1 (28 ounce) can diced tomatoes, drained
1 cup sour cream
½ cup shredded Cheddar cheese
2 cups cubed cooked turkey
4 (8 inch) flour tortillas, or more if needed
1 tablespoon chopped black olives, or as desired
1 tablespoon shredded Cheddar cheese, or as desired

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking dish.
  • Heat vegetable oil in a skillet over medium heat, and cook the garlic and onion until the onion is translucent, about 5 minutes; stir in the jalapeno pepper and flour. Stir a few times to mix in the flour. Stir in the chicken stock, about 1/4 cup at a time; cook until thickened, stirring constantly, about 5 minutes. Mix in the tomatoes and bring the mixture to a simmer.
  • While the sauce is simmering, combine sour cream, 1/2 cup of Cheddar cheese, and turkey in a bowl. Place a tortilla down onto a work surface, and spoon 1/4 of the turkey mixture onto the tortilla in a line down the center. Roll the tortilla around the filling; place into the prepared baking dish with seam side down. Repeat with the other tortillas. Pour the tomato sauce over the filled tortillas. Sprinkle the casserole with black olives and 1 tablespoon of Cheddar cheese as garnish.
  • Bake uncovered in the preheated oven until the cheese topping is browned and the casserole is bubbling, about 30 minutes.

1 tablespoon chili powder
1 teaspoon garlic salt
1 teaspoon ground cumin
12 flour tortillas (8 inches), warmed
SAUCE:
2 tablespoons all-purpose flour
1-1/2 cups reduced-sodium chicken broth
1-1/2 cups reduced-fat sour cream
1 cup shredded Monterey Jack cheese
1 cup shredded Mexican cheese blend
Chopped tomatoes, optional

Steps:

  • In a large bowl, combine the chicken, chili powder, garlic salt and cumin. Place 1/3 cup chicken mixture down the center of each tortilla. Roll up and place seam side down in two 13x9-in. baking dishes coated with cooking spray., In a large saucepan, whisk flour and broth until smooth. Bring to a boil; cook and stir for 2 minutes. Reduce heat; stir in sour cream and Monterey Jack cheese until melted., Pour sauce over enchiladas; sprinkle with Mexican cheese blend., Bake, uncovered, at 350° until bubbly, 15-20 minutes. CHICKEN AND BLACK BEAN ENCHILADAS IN SOUR CREAM SAUCE

It was a cold and snowy day, and I was hungry for enchiladas. I didn't have the ingredients for my usual recipe, I didn't want to run to the store, so I just made this one up with what I had on hand.

1 chicken breast, cooked
1 (15 ounce) can black beans, drained and rinsed
1 1/2 cups shredded cheese
1 (36 count) package corn tortillas
1 1/2 cups sour cream
3 tablespoons butter
3 tablespoons flour
2 cups chicken broth
1 onion, diced
1 green pepper, diced
2 garlic cloves, minced
cumin, to taste
dried chipotle powder, to taste
salt and pepper, to taste

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter in a stock pot.
  • Add diced vegetables and saute until tender.
  • Sprinkle flour over the butter/veggie mix and whisk together, and cook for 2-3 minutes, stirring occasionally.
  • Add spices to taste, and cook for another minute or so.
  • Whisk in the chicken broth and bring to a boil.
  • When the sauce is thickened, remove from the heat and let cool for a few minutes, then whisk in the sour cream.
  • Taste the sauce and readjust your seasonings, if you need to. (I find that I often need to add more salt after I add the sour cream.).
  • Soften tortillas in your usual way. (I fry them in a bit of oil in my cast iron skillet.)
  • While the sauce is cooking, use a food processor and chop the chicken finely.
  • Mix chicken, beans, and 1 cup of cheese in a bowl.
  • Roll the filling in the softened tortillas and place them in a lightly greased pan. (You will probably have tortillas left over. My kids like them spread with a little butter and folded in quarters for snacks.).
  • Pour the sauce over top, sprinkle with the remaining cheese.
  • Bake for 45 minutes, or until bubbly and a little browned on the top.

12 corn tortillas
16 -20 ounces enchilada sauce
1 pint sour cream
2 -3 bunches green onions, chopped (including 2 or 3 inches of the stem)
1/2-1 lb cheddar cheese
1 pint yogurt
vegetable oil
8 ounces green chili salsa

Steps:

  • --------Sauce------.
  • In a bowl mix the yogurt, sour cream, green onions and green chili salsa.
  • Pour the enchilada sauce into another bowl.
  • ----CookingTortillas------.
  • In hot oil, fry tortillas just until soft, drain and dip in sauce to coat.
  • Place in a 9 x 13 baking pan or larger, making a single layer.
  • Add part of the sour cream mixture and sprinkle with cheese.
  • Repeat until pan is full, pour the remainder of the sauce over the top and add a final layer of cheese.
  • Bake enchilada dish for 20-25 minutes at 325 degrees.

2 c chicken, cooked and shredded
2 c chicken broth, low salt
2 c mexican blend shredded cheese, divided
1 c sour cream, lite
1 can(s) diced green chilis (4 ounce can)
3 Tbsp flour
3 Tbsp butter
10 small flour tortillas

Steps:

  • 1. Preheat oven to 350 degrees and grease a 13 * 9 pan. Mix chicken and 1 cup of the cheese. Spread on tortillas, then roll them up and place in pan.
  • 2. In a saucepan, melt butter; stir in flour and cook for about a minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
  • 3. Remove from heat and stir in sour cream and chilies. Pour over enchiladas and top with remaining cheese.
  • 4. Bake for 20 minutes, then set oven to high broil for about 2-3 minutes to brown the cheese.
  • 5. PLEASE NOTE: We generally use canned chicken because we always have it on hand. But this also is great for left over rotisserie chicken. Also, if you do not have mexican cheese, monterey jack works well too.

This is an enchilada dish I made for my grandparents when they came to visit us several years ago. They still rave about it. I have made it quite a few times since. The sour cream sauce is always a big hit.

32 ounces light sour cream or 32 ounces single cream
1 (10 1/2 ounce) can cream of chicken soup
2 (4 ounce) cans chopped green chilies (sometimes I substitute chopped jalapenos for 1 can of chiles)
vegetable shortening
20 corn tortillas
4 -6 cups shredded cheese (I use cheddar, colby longhorn, "or" cheddar or jack)
1 onion, chopped

Steps:

  • Preheat oven to 350.
  • Combine sour cream, soup, and chilis (and/or jalapenos) in a large sauce pan over medium heat.
  • When sauce is well heated, set aside.
  • Tortillas (step 1): Completely, but lightly cover both sides of one tortilla with shortening (Don't be afraid to use your hands), then place the tortilla on a microwave-safe plate.
  • Tortillas (step 2): Completely but lightly cover one side of the next tortilla and place it atop the first tortilla, shortening side up.
  • Repeat Step 2 until all tortillas are stacked, then microwave the entire stack on high for 4-5 minutes.
  • Allow to cool.
  • Combine shredded cheese and chopped onion in a bowl and gently mix together using your hands.
  • Lightly cover the bottom of a baking dish with some of the sauce (This will prevent the tortillas from becoming stiff and chewy as they cook).
  • Place a generous portion of the cheese/onion mixture onto a tortilla, then roll the tortilla like a cigar (not too tight though).
  • Place into the baking dish, seam side down to prevent the enchilada from unrolling.
  • Repeat until all tortillas have been stuffed, rolled, and placed into the baking dish (it may take more than one baking dish for 20 enchiladas).
  • Cover the enchiladas with the sour cream sauce and any leftover cheese/onion stuffing.
  • Bake uncovered for 25-30 minutes, depending on your oven.
  • Allow to cool for 5 minutes before serving.

6 (6 ounce) boneless skinless chicken breasts, cut into 1-inch pieces
1 medium onion, chopped
1 teaspoon ground cumin
1 teaspoon garlic salt
½ teaspoon dried oregano leaves
1 ½ cups sour cream
¾ cup chopped roasted red bell peppers (from a jar)
1 (4.5 ounce) can Old El Paso® chopped green chiles, drained
3 cups shredded Mexican cheese blend
2 (10 ounce) cans Old El Paso® red enchilada sauce
12 Old El Paso® flour tortillas for burritos, 8 inch

Steps:

  • Heat oven to 350 degrees F. Spray 13x9-inch (3-quart) and 8-inch square (2-quart) baking dishes with cooking spray.
  • In 12-inch skillet, heat oil over medium-high heat. Add chicken and onion; cook and stir 4 to 5 minutes or until chicken is no longer pink in center. Stir in cumin, garlic salt and oregano. Cook 1 minute longer; drain if necessary. Pour chicken mixture into large bowl.
  • Reserve 2 tablespoons sour cream in small bowl; refrigerate. Into bowl of chicken mixture, stir remaining sour cream, roasted peppers, chiles and 1 1/2 cups of the cheese.
