Steps:
- Peel cukes.
- Drag fork tines down length of peeled cucumbers to create long groves that will look very nice when you slice cucumbers very, very thin.
- Put in mixing bowl.
- Peel and chop clove of garlic.
- Add salt and sugar slices.
- Mix in sour cream.
- Add vinegar and toss well, I use my hands, till cucumbers slices and sour cream are all frothy and foamy.
- Place in serving dish and sprinkle a little paprika on top for decoration, and serve well chilled.

GERMAN CUCUMBER SALAD WITH SOUR CREAM
This is a very light, tasty salad, and not sweet like many cucumber salads. It's very refreshing with a tangy bite from the green onions. I used dried herbs, of course using less, and it was still very tasty. I got the recipe many years ago from a recipe board online, but do not remember the source. However, it was attributed to a man who made this for his guests at an inn he ran in Germany. I included slicing the vegetables in the approximate time.

- Slice the first four ingredients as thinly as you can. Use a sharp knife.
- Combine the sliced vegetables and the salt. I usually put them all in a clean ice cream container (with a lid) and shake the dickens out of 'em. Then I put the container in the fridge for a couple of hours.
- Remove the container from the fridge and drain off any liquid that has accumulated.
- In another bowl, combine the last three ingredients. Then stir this mixture through the vegetables.
- Put the lid back on the container and give everything some more good shakes to combine.
- You can serve immediately, but this recipe keeps well for several days, and usually tastes better the second day onwards.

- 1. Have a medium to large bowl set out. wash the cucumbers and then pat dry.
- 2. slice the cucumbers into thin slices. slice white or red onion into rings or dice up and add to the cucumbers. add your salt,pepper and vinegar. Stir up well and chill 2 hours or overnight.
- 3. Take out the chilled cucumbers and onion mixture and drain off,extra fluid can make your salad runny. once drained, add back to your bowl.

FIBER ENRICHED SOUR CREAM & CHIVE CUCUMBER SALAD
This recipe has been in my husbands family since he was a kid. It is a Family Favorite. In trying to eat healthier, I added Chia seeds to this recipe to increase the fiber content & lower the net carbs per serving. By doing that this recipe now has 3 net carbs per serving instead of the original 7. Using a Zero calorie sweetener keeps the sugar down to only 2 per serving, & there are 130 calories per serving. We loved this new version, I was skeptical because of the chia seeds, but my husband said it tasted the same. The chia seeds absorbs some of the liquid in the cukes as the salad sits.

- Wash Cucumbers and slice thinly as desired. Add to a large bowl.
- Using a food processor or by hand wash trim & chop the green onions. Add to a medium size bowl.
- Then add in the sour cream, splenda and spices. Stir to mix together completely.
- Add in about half of the sliced cucumbers and stir to blend into the sour cream mixture.
- Then add in the remaining sliced cucumber, & the chia seeds and stir to mix together completely.

- In another bowl mix together, the sour cream, Italian salad dressing, onion, and salt.
