Yield Makes about 2 cups

Number Of Ingredients 3

2 quarts fresh sour cherries, pitted
2 cups sugar
Juice of 1/2 lemon

Steps:

  • In a medium saucepan set over medium heat, combine the cherries, sugar, and lemon juice and bring to a boil. Simmer for 30 minutes.
  • Strain the syrup through a fine-mesh strainer and discard the fruit solids. Store the syrup in an airtight container in the refrigerator for up to 7 days.

1/2 cup dried sweetened sour cherries
1 cinnamon stick
1/2 cup maple syrup
1 1/2 cups all-purpose flour
1/4 cup whole-wheat pastry flour
1/4 cup quick-cooking oats
2 teaspoons baking soda
1 teaspoon kosher salt
2 eggs, beaten
2 cups lowfat buttermilk
1/4 teaspoon almond extract (optional)
Oil or butter, for greasing pan
1/2 cup sliced almonds, divided
1/2 cup nonfat plain Greek yogurt

Steps:

  • In a small saucepan, bring cherries, 1/2 cup waterand cinnamon stick to a boil over high heat. Reduce heat; simmer 5 minutes. Stir in syrup; set aside to cool. In a bowl, whisk flours, oats, baking soda and salt. In another bowl, whisk eggs and buttermilk (and almond extract, if desired). Add wet ingredients to dry; stir batter until just combined. Heat a large nonstick pan over medium heat; brush with oil. Pour a scant 1/4 cup batter into pan; sprinkle with 1 1/2 teaspoons almonds. Cook pancake, flipping once, until golden brown, 2 minutes per side. Repeat with remaining batter. Serve pancakes with cherry syrup; top with a dollop of yogurt, if desired.

Honey Tangerine Granita with Sour Cherry Syrup and Fresh Raspberries image

Granita:
3 cups water
5 honey tangerines, juiced
1 lemon, juiced
2 tablespoons honey
1/2 cup sugar
2 cups pitted sour cherries
1/4 cup water
3 tablespoons sugar
1 container fresh raspberries

Steps:

  • Granita:
  • Pour the water, tangerine juice, and lemon juice into a saucepan and place over medium-high heat. Bring to a boil, add the honey and sugar, and stir until dissolved. Pour the mixture into a shallow metal pan and let cool to room temperature. Place in the freezer and stir every 30 minutes for 2 to 3 hours. You'll want the granita to be firm but not rock hard.
  • Syrup:
  • Place the cherries in the bowl of a food processor and process until smooth. Put all the ingredients into a saucepan and place over high heat. Let it come to a boil, reduce the heat, and simmer for 10 minutes. Pour into a heatproof pitcher and let cool to room temperature.
  • Assembly:
  • Divide the granita among 4 martini glasses, top with fresh raspberries, and drizzle the whole thing with the syrup.

6 1/2 lbs fresh sour cherries, stemmed and pitted or 4 1/2 lbs pitted unsweetened frozen sour cherries
11 cups sugar
5 1/2 cups water
3/4 cup fresh lime juice (from about 6 limes)

Steps:

  • Puree the cherries in a blender or food processor in small batches. Run juice through a fine sieve, pressing hard to extract all the juice.
  • In a large saucepan, mix cherry juice with sugar, water and lime juice and bring to a boil, stirring consistently, until sugar dissolves.
  • Cook over moderate heat for 10 minutes, skimming off the foam that rises to the top with a slotted spoon.
  • Reduce the heat and simmer, stirring and skimming, until syrupy, about 1 hour.
  • Strain the syrup into jars and let cool completely before storing.

2/3 cup lemon juice, fresh
2/3 cup rosewater
1 1/2 cups sugar
1 skein (1 ounce) rice noodles
8 cups crushed ice
1/2 cup sour cherry syrup or grenadine

Steps:

  • 1. Combine the lemon juice, rosewater, and sugar in a heavy saucepan and bring to a boil over medium-high heat. Boil, stirring constantly, until the sugar is dissolved and the mixture is syrupy, about 5 minutes. Remove the pan from the heat and let the syrup cool to room temperature, then cover and refrigerate until cold, about 2 hours.2. Meanwhile, soak the rice noodles in cold water to cover for 20 minutes. 3. Bring 4 cups of water to a boil in a large saucepan. Drain the noodles in a colander and cook in the boiling water until soft, 3 to 5 minutes. Drain in the colander and rinse under cold running water until cool. Drain again. 1 1/4 pound fresh sour cherries (4 cups), pitted
3/4 cup sugar
1/4 cup water

Steps:

  • Boil cherries, sugar, water, and a pinch of salt in a heavy medium saucepan, uncovered, stirring occasionally, 10 minutes. Strain thourough a fine-mesh sieve into a bowl, pressing gently on and then discarding solids. You should have about 1 cup syrup. If more, boil until reduced. Cool, then chill, covered.
