WINTER SORE THROAT TEA
This is an old remedy that has stayed around forever because it works.

- 1. Winter Sore Throat "Tea". Make sure you have some of this ready...great recipe for sore throats and chest colds makes about 2 cups ◾2 lemons thoroughly cleaned and sliced ◾2 piece of ginger about the size of your pointer and middle finger together sliced into coin size pieces ◾Honey (about 1 cup-maybe more) In a 12-16 oz. jar combine lemon slices and sliced ginger. Pour honey (organic is best) over it slowly. This may take a little time to let the honey sink down and around the lemon and ginger slices. Make sure when the honey has filled in all the voids, there is enough to cover the top of the lemon slices. Close jar and put it in the fridge, it will form into a "jelly". To serve: Spoon jelly into mug and pour boiling water over it. Store in fridge 2-3 months.

Steps:
- Combine ginger, zest, mint and 6 cups water in a saucepan and bring to a boil (covered).
- Reduce heat, simmer (uncovered) until the mixture has reduced to 5 cups (about 30 mins).
- Strain, return liquid to the saucepan (discard the solids).
- Add lemon juice and honey to taste and simmer 2 more minutes.

SORE THROAT TEA
I make this tea before bed and first thing in the morning hen I have a sore throat. It's soothing and healing. It's made with onion and garlic, but the mint leaves hide any strong flavors.

- Place all the ingredients except the honey in a small pot.
- Add about 1 1/2 to 2 cups water and bring to a boil over high heat.
- When it comes to a rolling boil, turn off heat and cover.
- Let it infuse for 5-10 minutes.
- Serve and sweeten with honey to taste.
LEMON SORE THROAT TEA
My son woke up with a cough and sore throat this morning so I whipped out my friend's recipe. As I was making this tea, I tho't it would be a nice one to share. While it doesn't really have medicinal properties, it is very soothing not to mention tasty and comforting.

- 1. For concentrate: Mix together sugar, lemon juice, cream of tartar and 1 c. hot water.
- 2. To make a cup of tea: Stir 1/3 cup of concentrate into a teacup. Add enough boiling water to fill the cup. Stir and enjoy.
- 3. Store extra concentrate in the fridge. Concentrate will keep for several days.

- In a clean 12 oz mason jar (2 cup size) distribute lemon slices and ginger.
- Pour honey over it slowly. This may take a few tries to let the honey sink down and around the lemon and ginger slices. Make sure when the honey has filled in all the voids, there is enough to cover the top of the lemon slices by a smidge.
- Close jar and keep refrigerated. The mixture will form sort of a loose honey. Add a spoonful with some hot water and drink as a tea. (I updated recipe to clear up confusion. If you have juicy lemons the mixture may turn runny but this is OK!).
