1/4 cup bulk pork sausage
1 egg
1/3 cup milk
Dash each salt, pepper and ground mustard
1 slice bread, crusts removed
1 green onion, sliced
1 tablespoon shredded cheddar cheese

Steps:

  • In a small skillet, brown sausages; drain. In a small bowl, beat egg, milk, salt, pepper and mustard; set aside. Cube bread; place in a greased 8-oz. custard cup. Top with sausage and onion. Pour egg mixture over top. Sprinkle with cheese. , Bake, uncovered, at 350° for 25-30 minutes or until a knife inserted in the center comes out clean.

1 large egg
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups frozen shredded hash brown potatoes, thawed
1/4 cup shredded Asiago cheese
FILLING:
3 large eggs
1 tablespoon minced fresh chives
1/3 cup shredded Colby-Monterey Jack cheese
1/3 cup fresh baby spinach, thinly sliced
2 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 400°. Grease 8 muffin cups., In a bowl, whisk egg, salt and pepper until blended; stir in potatoes and Asiago cheese. To form crusts, press about 1/4 cup potato mixture onto bottom and up sides of each prepared muffin cup. Bake until light golden brown, 14-17 minutes., For filling, in a small bowl, whisk eggs and chives until blended; stir in cheese and spinach. Spoon into crusts; top with bacon. Bake until a knife inserted in the center comes out clean, 6-8 minutes., Freeze option:Freeze cooled baked tarts for up to 3 months. To use, reheat tarts on a baking sheet in a preheated 350° oven until heated through, 5-10 minutes.

TURKEY AND CHEDDAR QUICHE



Turkey and Cheddar Quiche image

Add fresh dill to this shredded-turkey quiche with a homemade crust.

Number Of Ingredients 13

1 3/4 cups all-purpose flour, plus more for dusting
2 tablespoons sugar
1/2 teaspoon fine salt
12 tablespoons (1 1/2 sticks) chilled unsalted butter, diced and kept very cold
4 teaspoons cider or white vinegar
1/3 cup ice water, plus more if needed
1/2 cup chopped scallions
1/2 cup shredded roasted turkey
1 cup shredded Cheddar
1 1/4 cups heavy cream
3 large eggs
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh dill

Steps:

  • Pulse together the flour, sugar and salt in a food processor fitted with a metal blade. Add about a third of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers, it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly and take care not to overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
  • Lightly flour a work surface, then roll the dough into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Press a piece of foil over the chilled crust, then fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
  • Sprinkle the scallions evenly into the crust. Combine the turkey with the Cheddar and sprinkle it in an even layer over the scallions.
  • Whisk together the heavy cream, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl. Stir in the dill.
  • Pour the custard over the filling. Lower the oven temperature to 350 degrees F and bake until set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

This is an easy recipe to assemble... and it looks so darn impressive!

12 hole muffin or cupcake pan
non-stick cooking spray
12 oz slices of thinly sliced deli ham
1 1/2 c cooked and diced turkey or chicken
1 c cooked, drained, chopped bacon
1 c roma tomatoes, seeded and diced
1/2 c shredded cheddar cheese
1 c heavy cream
1/2 c milk
1 c shredded swiss cheese
5 eggs
1/2 c parmesan cheese
1 tsp dried tarragon, crushed in palm of hand
1/2 tsp garlic powder with parsley
salt and pepper to taste
1-2 tsp of your favorite hot sauce
2 c prepared hollandaise sauce

Steps:

  • 1. Spray each hole in the cupcake pan lightly with non stick spray.
  • 2. Form a piece of deli ham into each cup to make a liner for the quiche, making sure to raise the ham a little higher than the cupcake hole so that the mixture stays inside cup.
  • 3. In large bowl, combine eggs, cream, milk, salt, pepper, garlic and Tarragon. Beat with electric mixer until smooth and well blended. Add the turkey, tomatoes, cheddar cheese, Swiss cheese and blend well with spatula.
  • 4. Take a ladle and add egg mixture to each prepared hole in the cupcake pan about 3/4 full. Top with Parmesan cheese and a little extra cheddar cheese.
  • 5. Bake 350 degrees 10-15 minutes or until puffy and done in the middle. Serve with a dollop of hollandaise sauce.
