Inspired by the Mexican pastry, this easy Sopapilla Cheesecake Bar recipe is simple and quick with a crispy, cinnamony topping.

2 8-ounce cans refrigerated crescent rolls (divided)
4 8-ounce packages cream cheese (at room temperature)
3 teaspoons vanilla extract
2 large eggs
2 ½ teaspoons ground cinnamon (divided)
1 ¾ cups sugar (divided)
4 tablespoons unsalted butter (melted and cooled slightly)

Steps:

  • Preheat to 350°F.
  • Unroll one can of crescent roll dough and press it evenly into the bottom of a 9x13" baking dish pinching the seams together if necessary.
  • Using a hand mixer, beat together the cream cheese, vanilla, egg, ½ teaspoon cinnamon, and 1 ½ cups of the sugar in a medium bowl on medium speed until smooth and fluffy, approximately 2 minutes.
  • Spread the cream cheese mixture evenly over the dough with a rubber spatula.
  • Unroll the second can of dough and lay it on top of the cream cheese layer. Stretch the dough to cover the cream cheese and pinch the seams to seal.
  • Pour the butter over the top of the dough and spread to coat.
  • Whisk together the remaining sugar and cinnamon then sprinkle over the top of the dough to coat.
  • Bake until the dough is cooked through and puffed up, about 50 minutes.
  • Allow to cool for 30 minutes before cutting into 12 pieces.

1 cup white sugar
1 teaspoon vanilla extract

½ cup melted butter
½ cup white sugar

  • Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x13 inch baking dish with cooking spray.
  • Beat the cream cheese with 1 cup of sugar and the vanilla extract in a bowl until smooth; set aside.
  • Unroll the cans of crescent roll dough, and use a rolling pin to shape each sheet into 9x13 inch rectangles. Press one sheet into the bottom of a 9x13 inch baking dish. ¼ cup honey

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9x13 inch baking dish with cooking spray.
  • Beat the cream cheese with 1 cup of sugar and the vanilla extract in a bowl until smooth.
  • Unroll the cans of crescent roll dough, and use a rolling pin to shape each piece into 9x13 inch rectangles. Press one piece into the bottom of a 9x13 inch baking dish. 2 pkg 8 oz. cream cheese, softened
1 c white sugar
1 Tbsp vanilla extract
1/2 c butter, melted
1/2 c white sugar
1 1/2 Tbsp ground cinnamon

Steps:

  • 1. Preheat the oven to 350 degrees F (175 degrees C).
  • 2. Press one tube of crescent roll dough into the bottom of a 9x13 inch pan.

These sopapilla bars are dangerously good, and dangerously easy to make. Don't say we didn't warn you!

2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
2 packages (8 oz each) cream cheese, softened
1 1/2 cups sugar
1 teaspoon vanilla
1/2 cup butter, melted
1 tablespoon ground cinnamon

Steps:

  • Heat oven to 350°F.
  • Unroll 1 can dough. Place in bottom of ungreased 13x9-inch (3-quart) glass baking dish. Stretch to cover bottom of dish, firmly pressing perforations to seal.
  • In medium bowl, beat cream cheese and 1 cup of the sugar with electric mixer on medium speed until smooth. Beat in vanilla. Spread over dough in baking dish.
  • Unroll second can of dough. Firmly press perforations to seal. Carefully place on top of cream cheese layer. Pinch seams together.
  • Pour melted butter evenly over top. Mix remaining 1/2 cup sugar with the cinnamon, and sprinkle evenly over butter.
  • Bake 30-35 minutes or until bars appear set when gently shaken. Cool slightly, about 30 minutes. Refrigerate for easy cutting. Cut into 4 rows by 3 rows. Cover and refrigerate any remaining bars.
