1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon shortening
1/3 cup warm water
Oil for deep-fat frying
Honey, optional
Confectioners' sugar, optional

Steps:

  • In a large bowl, combine flour, baking powder and salt. Cut in shortening until mixture resembles fine crumbs. Gradually add water, tossing with a fork until a loose ball forms (dough will be crumbly)., On a lightly floured surface, knead the dough for 3 minutes or until smooth. Cover and let rest for 10 minutes. Roll out into a 12x10-in. rectangle. Cut into 12 squares with a knife or cut into 12 circles using a round biscuit cutter. , In a deep-fat fryer, heat 2 in. oil to 375°. Fry sopaipillas for 1-2 minutes on each side. Drain on paper towels; keep warm. If desired, serve with honey and/or dust with confectioners' sugar.

This is a traditional Chilean snack, or maybe an appetizer. The truth is that it's a snack eaten during winter time, especially when it rains. It is typical to arrive home after walking through the rainy streets of Santiago and sit down to have a cup of tea and eat a couple of sopaipillas. You can also eat ones sold by street vendors, but they usually don't taste as good as home-made ones. If you can't find zapallo, pumpkin is a good substitute.

9 ounces zapallo squash
4 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
10 tablespoons butter, melted
2 cups canola oil for pan-frying

Steps:

  • Peel, seed, and cut the zapallo into chunks. Place in a saucepan, cover with water, and bring to a boil over medium-high heat. Cook until zapallo is soft and easily pierced with a fork, 15 to 20 minutes. Drain and allow to cool slightly.
  • Mix the flour, baking soda, and salt together in a mixing bowl, and set aside. Stir together the squash and melted butter. Stir the flour mixture into the butter mixture until blended. Turn the dough out onto a lightly floured surface and knead until soft and satiny, adding a little more flour if necessary. Cover dough with a towel and allow to rest 15 minutes.
  • Roll out the dough to 1/8 inch thick, and cut into 3 inch diameter circles. Poke each circle a few times with a fork to make holes and prevent rising.
  • Pour vegetable oil into a large, deep skillet and heat over medium-high heat until hot, 385 degrees F (195 degrees C). Place several of the dough circles into hot oil; cook until lightly browned, 3 to 4 minutes. Drain on paper towels. Cook remainder of dough circles in batches.

2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/2 cup water
1/4 cup evaporated milk
1-1/2 teaspoons canola oil
Additional oil for frying
FILLING:
1 pound ground beef
3/4 cup chopped onion
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
SAUCE:
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup chicken broth
1 can (4 ounces) chopped green chilies
1/2 teaspoon onion powder
2 cups shredded cheddar cheese

Steps:

  • In a large bowl, combine the flour, salt and baking powder. Stir in water milk and oil with a fork until a ball forms. On a lightly floured surface, knead dough gently for 2-3 minutes. Cover and let stand for 15 minutes. Divide into four portions; roll each into a 6-1/2-in. circle. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry circles, one at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels., In a large skillet, cook beef and onion until meat is no longer pink; drain. Stir in the salt, garlic powder and pepper. In a large saucepan, combine the soup, broth, chilies and onion powder; cook for 10 minutes or until heated through. , Cut a slit on one side of each sopaipilla; fill with 1/2 cup of meat mixture. Top with cheese. Serve with sauce.

2 tsp baking powder
1 tsp salt
2 Tbsp shortening
2/3 c water
oil for frying
cinnamon and sugar mix (1/2 c sugar to 1 tsp of cinnamon)
honey

Steps:

  • 1. Combine the dry ingredients and then add the shortening.
  • 2. Cut in shortening until crumbly.
  • 3. Gradually add water.
  • 4. Stir with a fork until the mixture holds together.
  • 5. On a floured surface, knead the dough for about 2 mins until smooth. Cover and let stand for 5 mins.
  • 6. Roll out to about 1/4 inch thickness.
  • 7. Cut into 2 1/2 in triangles.
  • 8. Heat oil to 375 degrees in a deep fat fryer or electric skillet. Fry on both sides for 1-2 mins until golden brown and puffy.
  • 9. Remove from oil and sprinkle with the cinnamon sugar mix. Then drizzle honey over them and eat while still warm.

2 cups all purpose flour, plus more for dusting
2 teaspoons granulated sugar
1 ½ teaspoons vegetable oil, plus more for frying
1 teaspoon baking powder
1 teaspoon kosher salt
¼ cup whole milk
½ cup warm water
¼ cup dark chocolate chips
¼ cup semi-sweet chocolate chips
1 teaspoon coconut oil
½ teaspoon ancho chile powder
½ teaspoon cinnamon
3 tablespoons heavy cream, warmed
½ teaspoon vanilla extract
¼ cup honey
¼ cup powdered sugar

Steps:

  • Make the dough: In a large bowl, whisk together the flour, sugar, vegetable oil, baking powder, and salt. Add the milk and warm water and stir with a rubber spatula until a sticky dough forms.
  • Turn the dough out onto a lightly floured surface and knead for 2-3 minutes, until no longer sticky.
  • Place the dough on a plate or baking sheet and cover with a damp cloth. Let rest for 15 minutes.
  • Divide the dough into 3 equal balls, cover again with damp cloth, and let rest for 30-60 minutes.
  • Make the chocolate dipping sauce: Add the dark and milk chocolate and coconut oil to a medium microwave-safe bowl.   • Fill a Dutch oven or large pot fitted with a deep fry thermometer with about 3 inches (7 cm) of vegetable oil. Heat the oil until it reaches 400°F (200°C).
  • While the oil is heating, shape the sopaipillas: On a lightly floured surface, roll out 1 of the 3 dough balls to a 8-inch (20 cm) square. Cut into 4 4-inch (10 cm) squares, discarding any extra trimmed dough. Place the squares on a baking sheet and cover with a damp towel. Repeat with the remaining dough.
  • Line a baking sheet with paper towels and set near the pot of oil.
  • Gently transfer one square of dough into the hot oil as a tester--it should float to the surface within a few seconds. As soon as the dough floats, flip it over immediately. Keep turning the dough every 5 seconds or so, until it puffs up like a pillow and turns light golden brown, about 1 minute. Remove from the oil and drain on the prepared baking sheet. Repeat with the remaining dough squares, frying 2-4 at a time, or however many will fit without crowding the pot.
  • Drizzle half of the sopaipillas with the honey and dust with the powdered sugar. Serve the other half with chocolate dipping sauce. Serve immediately.

1 teaspoon baking powder
1 teaspoon salt
1 teaspoon sugar

Steps:

  • In a lrg mixing bowl, combine flour, baking powder, salt & sugar. Stir till blended.
  • Stir in oil, cream & water. Knead to make a soft dough.
  • Turn out onto a lightly floured surface. Knead lightly. Dough will be sticky. Cover w/dish cloth & let rest for 30 minutes.
  • Heat about 3 in of oil in a heavy saucepan or deep fryer to 375°.

Our teenage son requests these sweet doughnut puffs for dessert whenever we have enchiladas. They're similar to sopaipillas we used to enjoy at a favorite Mexican restaurant.

In new Mexico where they are popular, they are usually eaten with honey, as suggested here. Sopaipillas are also good served with soups, and at brunches, parties, and buffets. My DH and I love this recipe. Great to serve with Mexican food. We fill them with honey and sometimes make a salad in them with lettuce, tomato, avocado, salsa, and sour cream. Yummy! Cook time doesn't include 1 hour rest time.

1/2 c confectioners' sugar
1 tsp cinnamon or to whatever your taste is

  • 1. Pre-heat oven 375 degrees. Add confectioners' sugar and cinnamon to softened cream cheese.
  • 2. Open a can of crescents rolls and separate each triangle. Place them on a cookie sheet. Spread a small amount of cream cheese on each triangle trying to stay away from edges. Bring opposite corners of rectangles together.
  • 3. Bake for 11 minutes or until golden brown.
  • 4. Use the leftover cream cheese spread on a flour tortilla. Spread it on the tortilla roll it like a burrito and fry it!! Sprinkle confectioners sugar on top.

1 vanilla bean
3 egg yolks
1/4 cup sugar
1/4 cup honey
2 tablespoons cornstarch
4 cups plus 4 tablespoons flour
1 1/2 teaspoons salt
1 teaspoon baking powder
1 package dry yeast
1/4 cup warm water
1 1/4 cups milk
1 quart vegetable oil, for frying
Cinnamon and powdered sugar, for dusting
1 cup hulled and quartered strawberries
1 cup 1/2-inch diced pineapple
1 cup sliced bananas
1 cup sherry
1/2 cup brown sugar
1/4 cup chopped mint
1 cup sherry vinegar
1/2 cup honey

Steps:

  • To prepare pastry cream, place the milk in a saucepan. Split the vanilla bean and scrape the seeds into the milk and add the bean as well. Heat the milk over medium heat and bring to a boil.
  • While the milk is heating, combine the egg yolks, sugar, and honey in a mixing bowl. Add the cornstarch and mix until smooth. Once the milk is boiling, remove the vanilla bean and add 1/4 of the milk to the egg mixture, whisking continuously making sure the eggs do not scramble. Once the yolks are tempered, return the egg mixture to the milk in the saucepan and continue whisking over medium heat until the mixture bubbles and thickens. This should take 1 to 2 minutes. Once the cream has thickened, place it in a bowl over an ice bath and cover with plastic wrap. Allow the cream to cool thoroughly.
  • Sopaipillas: Using a large mixing bowl, blend the flour, salt and baking powder. In another bowl, dissolve the yeast in the warm water to activate and add to the flour mixture. Incorporate the milk slowly to form a single ball of dough. Knead the dough until smooth, cover and allow to rise until doubled in size.
  • In a large pot or fryer, heat the oil to 360 to 375 degrees F.
  • On a floured work surface, roll the dough out to 1/4-inch thickness. Using a cutter or knife cut the dough into desired serving size portions. Drop the sopaipillas, 2 or 3 at a time, into the oil and fry, turning them often until browned. Remove with a skimmer and place on paper towels to drain. Sprinkle the warm sopaipillas with cinnamon and powdered sugar.
  • To make the fruit compote, place the ingredients in a mixing bowl and toss until the fruits are evenly coated. Allow the fruit to marinate in the refrigerator for at least 2 hours. Strain fruit from liquid before serving.
  • To make the glaze, place the vinegar in a saucepan and over medium heat reduce by half. Dissolve the honey in the warm vinegar and allow to cool. Set aside.
  • To serve, split the sopaipillas open and pipe in a portion of the pastry cream. Fill the remainder of the sopaipillas with fruit compote. Place the sopaipillas on each plate, drizzle the glaze around the sopaipillas and dust with powdered sugar and cinnamon. Finish with a dash of vinegar on the fruit compote.

1/2 teaspoon salt
1/2 teaspoon baking powder
1 tablespoon sugar
1 tablespoon lard or vegetable shortening
1/3 cup buttermilk

Steps:

  • In a food processor, pulse together the flours, salt, baking powder, and sugar. Add the lard or shortening and pulse to combine. Add the buttermilk and pulse until a moist dough forms. Transfer to a lightly floured work surface, and knead several times until it binds into a cohesive mass. Cover with plastic wrap and let rest for at least 30 minutes.
  • Pour oil to a depth of 4 inches into a heavy saucepan and heat to 375 degrees F. Meanwhile, divide the dough in half. On a lightly floured work surface, roll out half of the dough 1/8 to 1/4-inch thick. Cut into 6 squares or triangles. Drop 2 cutouts, 1 at a time, into the hot oil and fry, rolling them over, until golden, 40 to 50 seconds. Drain on paper towels. Repeat with the remaining dough.

3 tablespoons chopped cilantro leaves

Steps:

  • In a large bowl sift together the flour, baking powder and 1 teaspoon of salt. Cut in the shortening with a fork or pastry blender. Add the water, gradually, until the dough comes together and forms a ball. Turn onto a floured surface and knead until smooth. Cover and let rest for 5 minutes. Cook's Note: The dough can also be made in a standing mixer.
  • Heat the canola oil in a large high-sided skillet to 350 degrees F.
  • In a small bowl, mix together the remaining 1 teaspoon of salt, the ancho chili powder and pepper and set aside.
  • Divide the dough into 4 equal portions. Roll each portion into a square about 1/4-inch thick. Cut each piece into 2 by 2-inch squares. Working in batches, carefully add about 6 pieces of the dough into the hot oil. Using tongs, turn the dough frequently to ensure even puffing and cooking. Fry until golden brown. They should puff up like little pillows. Remove them from the oil and drain on a sheet pan lined with paper towels. Sprinkle with the ancho chili mixture. Repeat with remaining pieces of dough. Transfer the fried dough to a serving tray, top with about a tablespoon of the salsa and serve.
  • Combine all of the salsa ingredients into a bowl and toss to combine.

How to make Sopaipillas with Chocolate Sauce

For the sauce:
1/4 c. water
1/2 c.packed light brown sugar
Pinch of kosher salt
1/2 c. unsweetened cocoa powder
3 Tbsp unsalted butter
1/2 tsp vanilla extract
For the sopaipillas:
Vegetable oil, for frying
4 (8-10 inch) flour tortillas cut into wedges
Granulated sugar, for coating

Steps:

  • - First, make the sauce. Bring the water, the brown sugar and salt to a boil in a small saucepan, stirring until the sugar is dissolved.
  • - Whisk in the cocoa powder until smooth. Remove from heat and stir in the butter and vanilla.
  • - Next, make the sopaipillas. Heat a 1/2 inch of vegetable oil in a large deep skillet until it reaches 350 degrees on a deep-fry thermometer.
  • - Working in small batches, fry the tortilla wedges, turning once until golden and bubbly on both sides, about 1 minute per batch. Make sure to return the oil to 350 degrees between batches.
  • - Transfer to a plate lined with paper towels and sprinkle both sides generously with granulated sugar. Serve drizzled with chocolate sauce.

Lard or vegetable oil for frying
2 cups flour
2 1/4 teaspoons baking powder
1 teaspoon salt
1 teaspoon sugar
2 tablespoons vegetable shortening solid or lard
1/2 cup water
Honey or cinnamon sugar

Steps:

  • Heat lard or vegetable oil at least 4 inches deep to 400° F. Sift together flour, baking powder, salt and sugar. Cut in 2 tablespoons shortening or lard until resembles fine crumbs stir in enough water to form soft dough. Knead until smooth on a lightly-floured surface. Cover with a bowl and let rest 8 minutes. Divide dough in half and cover one portion with the bowl. Roll first portion to 1/8 -inch thickness and cut into 3-inch squares or desired shapes do not re-roll. Fry in preheated fat. As sopaipillas rise to surface, immediately spoon hot fat over to aid puffing continue until golden brown, turning once. Drain on paper towels and repeat procedure with second portion of dough. Keep warm in a low oven. Serve immediately with honey or sprinkle with cinnamon sugar.

Make balls about palm size and roll out in circle then cut in half. 3. Heat oil in pan and fry dough,turning once. The dough should puff out in a pocket.
