GRANDMA MCDOWELLS SPAM CASSEROLE

My husbands grandmother use to make this casserole it was so easy and tasted great, also inexpensive to make.

Number Of Ingredients 8

2 c macaroni, elbow or shell, uncooked
1 can(s) cream of mushroom soup
1/4 lb processed cheese, cubed ( like velveeta )
1/2 c milk
1 medium chopped onion
1 medium chopped green bell pepper
1/4 tsp pepper
1 can(s) spam , cubed.

Steps:

  • 1. Cook macaroni as directed on package.
  • 2. Combine soup, milk, green pepper, onion and pepper.
  • 3. Place over low heat.
  • 4. Add cheese and stir occasionally until cheese is melted, then mix cooked macaroni and the cubed Spam with cheese sauce.
  • 5. Pour mixture into a 1 1/2 quart casserole dish.
  • 6. Place in oven at 350* degrees for about 30 minutes or until sauce is bubbly.

This solo meal can be easily expanded, and because it uses transportable ingredients, this one dish meal can be made in a rustic setting or even in a dutch oven over campfire coals. An adventuresome cook might also consider using a crockpot.

1/4 can Spam (1/2 cup)
1 potato
1/2 cup onion
1/2 cup pineapple (sliced or chunks)
1/2 cup pineapple juice
1 tablespoon olive oil
1 teaspoon prepared mustard
1/4 teaspoon ground pepper

Steps:

  • Slice a washed, but not peeled potato, and mix thoroughly with diced onion and olive oil in bottom of a one and a half casserole dish.
  • Follow with a layer of sliced Spam.
  • Top with the pineapple.
  • Mix mustard, pineapple juice and pepper in a small bowl and pour over the other ingredients.
  • Cover, bake in a 400 degree (f) oven for 50 minutes or until the pototo is tender.

SOLO SPAM AND PINEAPPLE PILAF

This recipe uses a quarter of a can of Hormel Spam to make a nice solo dish for one, but it can be expanded to feed a family of four. It goes well with a green salad and a glass of beer.

3 ounces Spam, cut into bite size cubes (about 1/2 cup)
1/2 cup pineapple, cut in cubes
1 small jalapeno pepper, that has seeds and stem removed and diced (See note below)
1/2 cup onion, cut into small pieces
1/3 cup raw rice (Not instant)
1/3 cup chicken stock
1/3 cup pineapple juice
2 tablespoons olive oil
1 tablespoon butter

Steps:

  • Heat the olive oil and butter in a frying pan that has a tight fitting lid.
  • Stir until the butter stops foaming.
  • Add the onion and stir until nearly transparent.
  • Add the pineapple cubes, rice, and Jalapeno Pepper.
  • NOTE: If you want a milder dish, split the pepper in half and remove before serving.
  • Stir until the rice grains are covered in oil/butter.
  • Add chicken stock and pineapple juice, cover and reduce heat to lowest setting.
  • After 15 minutes, remove from heat DO NOT PEEK and let sit for an additional 15 minutes.

A great simple casserole to make and it makes a ton!!! My husband doesn't like Spam but LOVES this!!! My grandmother used to make this for us on Friday nights after she got off of work. Its been a favorite ever since. You can substitute shredded cheese for Velvetta.

1 (16 ounce) can Spam
1 (16 ounce) package wide egg noodles
1 (8 ounce) can cream of mushroom soup
1 (8 ounce) can cream of chicken soup
8 ounces Velveeta cheese

Steps:

  • Boil noodles according to directions.
  • Chop Spam into small cubes.
  • Chop Velvetta into small cubes.
  • Mix cream of mushroom and cream of chicken with Spam.
  • Mix all of the ingredients in an 11x13 dish and bake at 275° for 10 minutes.
